This Greek pasta salad is everything a pasta salad should be: light, flavorful, and full of ingredients you'll love! Perfect for a potluck, picnic, or party!

Provided by Caroline Lindsey

Categories     Main Course     Salad     Side Dish

Time 20m

Number Of Ingredients 18

1 lb bowtie pasta
12 oz roasted red peppers (cut into 1-inch strips (about 2 whole peppers))
1 cup pitted kalamata olives (6 oz jar)
1 pint grape tomatoes (halved lengthwise)
12 oz pepperoncinis (sliced into rings, seeds removed (about 2/3 cup))
1 cup feta cheese crumbles (2 tbsp reserved)
1/4 cup red wine vinegar
2 tbsp lemon juice
1 tsp dijon mustard
1/2 tsp onion powder
1/2 tsp pepper
1/2 tsp kosher salt
1 tsp oregano
1 tsp basil
2 cloves garlic (minced)
1 tsp sugar
2 tbsp feta cheese crumbles
1/2 cup olive oil

Steps:

  • Cook pasta according to package directions. Drain and rinse under cold water.
  • Meanwhile, prepare the dressing. Combine ingredients from vinegar through feta cheese crumbles and mix thoroughly. I use my handheld milk frother for this but you can whisk it too. Then, while whisking, slowly drizzle in olive oil. Alternately, combine all dressing ingredients in a jar or bottle and shake to combine.
  • Combine all pasta salad ingredients in a large bowl. Top with dressing and toss to thoroughly combine.

GREEK-ALICIOUS PASTA SALAD

Greek-alicious Pasta Salad image

I was craving carbs and a Greek salad one day and that led to this wonderful creation. Greek dressing is so underrated, but in this recipe it is the star! This is a nice, light salad that showcases chick peas, radishes, cucumbers and feta cheese.

Categories     Salad     100+ Pasta Salad Recipes     Greek Pasta Salad Recipes

Time 30m

Yield 10

Number Of Ingredients 7

2 ½ cups bow tie (farfalle) pasta
1 cup Greek salad dressing
2 ½ tablespoons mayonnaise
4 radishes, finely chopped
½ cucumber, peeled and chopped
1 (15 ounce) can garbanzo beans, drained
¾ cup crumbled feta cheese

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the bow tie pasta and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 12 minutes. Drain well in a colander set in the sink.
  • Place the Greek dressing and mayonnaise into a large salad bowl, and whisk together until smooth and well blended. Add the cooked pasta, and stir lightly to coat the pasta. Sprinkle on the radishes, cucumber, garbanzo beans, and crumbled feta cheese, and fold in gently.
  • Cover the salad and refrigerate until ready to serve.
