1 lb green beans, trimmed and broken into 1 inch lengths
2 tablespoons olive oil
1/2 cup slivered red onion
1/3 cup unsalted cashews
1/4 teaspoon salt
1/4 teaspoon black pepper
3 -5 sprigs fresh parsley, chopped

Steps:

  • Place green beans in a pot of boilling water and cook for 5 minutes.
  • Drain beans and immediately place in a bowl of ice-cold water, drain and set aside.
  • In a large skillet, heat olive oil over medium-high heat for 30 seconds.
  • Add onions, cashews, salt and pepper.
  • Stir-fry for 2 to 3 minutes or until onions are softened.
  • Add the cooked green beans, raise heat to high, stir-fry for 2 to 3 minutes or until beans feel hot to the touch.
  • Take care not to burn the cashews during process.
  • Transfer the beans to a serving plate and garnish with chopped parsley.
  • Serve.

10 garlic cloves, unpeeled
2 teaspoons plus 1/4 cup olive oil, divided
2 pounds fresh green beans, trimmed
1 cup water
1 cup lightly salted cashews, coarsely chopped
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preheat oven to 375°. Cut stem ends off unpeeled garlic cloves. Place cloves on a piece of foil. Drizzle with 2 teaspoons oil; wrap in foil. Bake 25-30 minutes or until cloves are soft. Unwrap and cool slightly. Squeeze garlic from skins; mash with a fork to form a paste., In a Dutch oven, heat remaining oil over medium-high heat. Add green beans and garlic; cook and stir 2-3 minutes. Add water; bring to a boil. Reduce heat; simmer, uncovered, 7-10 minutes or until beans are crisp-tender and water is almost evaporated, stirring occasionally. Add cashews, salt and pepper; toss to combine.

Number Of Ingredients 13

1 large onion, cut lengthwise into 1/4-inch-thick wedges
6 tablespoons olive oil
2 teaspoons curry powder
1 teaspoon ground coriander
1 teaspoon ground cumin
1/2 teaspoon ground cinnamon
1 teaspoon mustard seeds
1/4 teaspoon cayenne
1/2 cup coarsely chopped salted roasted cashews (4 oz)
1 lb spinach, tough stems discarded (6 cups)
3/4 lb mustard greens, stems and center ribs discarded (5 cups)
3/4 lb dandelion greens, tough stems discarded (4 cups)
1/2 cup water

Steps:

  • Cook onion with salt to taste in 3 tablespoons oil in a 10-inch heavy skillet over moderate heat, stirring occasionally, until deep golden and some wedges are crisp, 15 to 20 minutes. Meanwhile, stir together spices.
  • Add cashews to onion and cook, stirring occasionally, until nuts are 1 shade darker, about 3 minutes. Stir in 1 1/2 teaspoons spice mix and cook, stirring, until fragrant, about 30 seconds. Remove skillet from heat.
  • Heat remaining 3 tablespoons oil in a 5-quart heavy pot over moderately high heat until hot but not smoking, then cook remaining spice mix, stirring, until fragrant, about 30 seconds. Immediately stir in the 3 greens and water and cook, stirring occasionally, until most of liquid is evaporated and greens are tender, 3 to 5 minutes. Season with salt.
  • Serve greens sprinkled with onion mixture.

1 1/2 lbs green beans, trimmed and cut into 1-inch pieces (about 5 cups)
4 tablespoons unsalted butter
3 tablespoons fresh ginger, peeled and finely chopped (about a 2 1/2-inch piece)
1/2 cup chicken stock or 1/2 cup turkey stock
1 cup salted roasted cashews, coarsely chopped
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper

Steps:

  • In large pot boiling salted water, cook beans until crisp-tender, about 4 minutes. Drain and rinse in colander under cold water then pat dry (can be prepared up to 1 day ahead and refrigerated, wrapped in paper towels, in plastic bags).
  • In 12-inch heavy skillet over moderate heat, heat butter until hot but not smoking. Add ginger and sauté until softened and fragrant, about 30 seconds. Stir in green beans and stock and cook, stirring often, until liquid is almost completely evaporated, about 3 to 6 minutes. Before serving stir in Cashews to distribute then transfer to serving dish and serve immediately .

2 tablespoons teriyaki baste and glaze (from 12-ounce bottle)
1 tablespoon margarine or butter, softened
1 tablespoon honey
1/4 teaspoon ground mustard
1/2 cup drained roasted red bell peppers (from 7-ounce jar), cut into strips
1/2 cup cashew pieces

Steps:

  • In 4-quart Dutch oven, heat water to boiling. Add beans. Heat to boiling. Boil uncovered 5 minutes. Cover and boil 3 to 5 minutes longer or until crisp-tender. Drain beans; return to Dutch oven.
  • Mix teriyaki glaze, margarine, honey and mustard until well blended. Pour over beans; toss until evenly coated. Stir in bell peppers. Sprinkle with cashews.

3/4 c lightly salted cashews
1/2 c water
1 small clove garlic halved
1/4 tsp dalt
1/8 tsp onion powder
5 c assorted baby greens
1 c chopped tomato
3/4 c fresh shelled peas cooked and chilled
3 green onions thinle sliced
2 Tbsp lemon juice

Steps:

  • 1. In a blender or food processor bowl, combine1/2 cup. of the cashews, water, garlic, salt, and onion powder.
  • 2. Cover and blend or process about 2 minutes or until mixture is smooth and creamy. Mixture will thicken as it purees. Stir in lemon juice.
  • 3. Cover and chill at least 1 hour or up to three days.
  • 4. In a salad bowl combine greens, tomatoes, peas, and green onion. Divide greens among 4 serving plates.
  • 5. Sprinkle with remaining cashews. Drizzle dressing over each serving.
  • 6. Sprinkle with fresh pepper.
