BEST GRAPE SALAD
I got this recipe from a coworker at the salon I work at. I didn't think it would be so wonderful and addictive! It's very creamy and sweet, and a great mix of flavors. It will be the best thing you ever use grapes for (except maybe wine!).

Steps:
- Seed grapes as discussed above by squeezing the grape flesh out of the skin and then cooking the pulp down. Put the pulp through a fine mesh strainer and then re-combine the filtered pulp with the grape skins.
- Add the skins and pulp into a saucepan along with the sugar and cook the mixture until it reaches gel stage, about 10-15 minutes. Experienced jam makers can watch for when the type of bubbles change and take on a glossy look. To be sure, test the consistency on a plate that's kept in the freezer or with a candy thermometer.
- Pour the jam into prepared canning jars, leaving 1/4 inch headspace. Store in the refrigerator for immediate use, or process in a water bath canner for 10 minutes. Turn off the heat and allow the jars to sit in the canner for an additional 5 minutes before removing them to cool on a towel on the counter.
- Allow the jars to rest for 24 to 48 hours to completely gel.

Steps:
- Preheat oven to 375F/191C.
- Cream together the butter and sugar.
- In a separate bowl sift together dry ingredients. In another bowl slight beat the eggs into the milk.
- Alternating the dry ingredients and the milk mixture, combine all ingredients with the creamed butter. Mix well after each addition.
- Gently fold in the grapes. If your grapes are smaller, use three cups. If your grapes are some of the larger kind, use two cups. It's your coffee cake, though, you add as many grapes as you want!
- Generously utter a 9 x 13 glass baking pan. Pour batter into pan.
- For the first topping, mix all ingredients together in a bowl until completely incorporated. You will end up with something that looks like a granular frosting. It's important that the butter be room temperature for this.
- Spread this "frosting" over the top of the coffee cake batter as evenly as you can. This adds a delectable sugary layer to this tart grape coffee cake.
- For the second topping, mix all the ingredients and cut together with a pastry cutter or two knives. Sprinkle over the top of your coffee cake. This topping can be doubled.
- If you'd rather eat your own head than go to the trouble of making TWO toppings this morning, no worries. Just double or even triple the second topping recipe and sprinkle it on top.
- Place into a hot oven and cook for about forty minutes.
- Cover with foil for the last 15-20 minutes to prevent scorching of the sugary topping. Know your oven and test the cake for done-ness periodically. This is a dense cake so it will take some time to bake, but don't let it burn.
- Let rest for five minutes. Serve hot with butter or send along cold in a school lunch as a treat.

GREAT GRAPE RECIPE
I ate this at a friend's house a couple of years ago at Thanksgiving and have wanted it ever since. I finally got her to send me the recipe which was a link to another site so I'm not sure if I should include that or not. I am going to alter this just a bit because it was a bit much for my husband and I. It it very good for a...

Steps:
- 1. 1-2 lbs red seedless grapes depending on how many you are going to serve. I did the full 2 lbs and it was way to much for just my husband and I. 1 lb would have been plenty.
- 2. 1-2 lbs green seedless grapes, depending on many you will be serving. You don't have to use both red and green, I can tell any difference except the red are larger. Using both 2 lbs of each gives 4 lbs of grapes and that's way to much for two people unless you have very large appetites. Even eating a second day we had a lot left over so unless there are a lot of people being served my suggestion is no more than a pound or even less if just serving 2 people.
- 3. 8 Oz. cream cheese softened.
- 4. 8 Oz. sour cream
- 5. 1/2 cup sugar 1/2 teaspoon vanilla
- 6. 1 cup packed brown sugar
- 7. 1/3 crushed pecans
- 8. Take all of the grapes off the stem and wash thoroghly. Pat dry with a paper towel. Mix cream cheese, sour cream, 1/2 sugar and 1/2 teaspoon vanilla by hand until blended well. Add grapes and mix the grapes and cream cheese mixture until grapes are covered well. Mix brown sugar and pecans together and spread over top of grape cream cheese mixture. Chill over night and serve. I love the cream cheese/sour cream mixture just served over bananas by themselves so I guess bananas could be added to this dessert also. We decided it would be better with less grapes and more of the cream cheese mixture but not everyone will have the same taste as ours. I have posted this recipe on my Facebook page without any kind of alterations and with the link so please fill free to look me up. I have my stuff listed as friends only so you have trouble looking it up please let me know. Hope you enjoy. :-)
