1 cup unbleached flour
3/4 teaspoon baking powder
1/2 teaspoon baking soda
14 tablespoons unsalted butter (1 3/4 sticks at room temp)
1 cup granulated sugar
1/4 cup light brown sugar (packed)
1 large egg
1 teaspoon vanilla
2 1/2 cups old fashioned oats (old fashioned type no instant stuff)

Steps:

  • Heat oven to 350°F - you will need 3 baking sheets lined with parchment paper (again the parchment keeps the cookie from burning and makes clean up faster).
  • Whisk together flour, baking powder, soda and salt.
  • Beat together with mixer at low speed - butter and sugar until the sugar granules are not visible. Increase speed and beat 1 minute longer, scrape sides as needed and add egg, beat another 30 seconds. Add flour mixture 1/3 at a time and incorporate well over med speed until mixture is smooth. Add oatmeal and stir into the dough using your rubber spatula.
  • Divide into 24 equal portions and bake for 13 to 16 minutes placing only one cookie sheet in the oven at a time and rotating the cookie sheet half way through your cooking time -- these are the best and the thinnest cookies and very crispy.

1 cup raisins
1 cup white sugar
1 cup butter, softened
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
2 cups quick cooking oats

Steps:

  • In a small saucepan, combine raisins and enough water to cover. Bring to a boil, and remove from heat. Preheat oven to 350 degrees F (175 degrees C). Grease a cookie sheet. Drain plumped raisins, reserve 6 tablespoons of the liquid.
  • In a large bowl, cream butter and sugar. Gradually add eggs, vanilla, and the 6 tablespoons water from the raisin pan; mix until light and fluffy. Sift together the flour, baking soda, salt, cinnamon, and nutmeg; stir into the creamed mixture. Finally, stir in the oats and raisins; mixing until just combined. Drop by rounded teaspoonfuls onto the prepared cookie sheet. Bake for 12 to 15 minutes in the preheated oven, edges should be golden brown.

1 cup raisins
1 teaspoon vanilla extract
1 cup butter flavored shortening
1 cup packed brown sugar
1 cup white sugar
2 ½ cups all-purpose flour
2 teaspoons baking soda

1 teaspoon ground cinnamon
2 cups quick cooking oats
½ cup chopped walnuts

Steps:

  • Beat eggs, and stir in raisins and vanilla. Refrigerate for at least an hour.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Cream together shortening, brown sugar, and white sugar until light and fluffy. Combine flour, baking soda, salt, and cinnamon; stir into the sugar mixture. Mix in raisins and eggs, then stir in oats and walnuts. Roll dough into walnut sized balls, and place 2 inches apart on ungreased cookie sheets.
  • Bake for 10 to 12 minutes in preheated oven, or until edges are golden. Cool on wire racks.

3/4 c raisins (or craisins, not in grandma's recipe but good)
1/2 c hot water
1 c butter, no substitute
1 c sugar
1 c brown sugar, firmly packed
2 large eggs
1 tsp vanilla extract
3 c old-fashioned oats
1 1/2 c all purpose flour
1 tsp baking soda
1 tsp salt
1/2 c chopped walnuts

Steps:

  • 1. If you are using raisins place them in a small bowl and pour very hot water on them. Let them sit for at least 1 hour but not more than 3 hours. Drain them VERY WELL and then set aside. I usually put them in a paper towel lined strainer and pat them to dry well. Then follow recipe as directed. If you are using craisins simply measure them and set aside. Do not soak craisins.
  • 2. In a large mixing bowl, cream shortening and sugars. Beat in eggs and vanilla. Combine the oats, flour, baking soda and salt. Gradually add to creamed mixture. Stir in walnuts and raisins or craisins.
  • 3. Drop by tablespoonfuls 2 inches apart on ungreased baking sheets. Bake at 375 degrees for 10 to 12 minutes or until golden brown. Remove to wire racks to cool. Store cookies in a cookie jar with a slice of bread placed inside with them. This keeps cookies from drying out.

1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 c butter, unsalted
1 1/2 c brown sugar, firmly packed
1 large egg
1 tsp vanilla
1 1/2 c oatmeal (not the quick cooking kind)
1 c flaked coconut
1/2 c chopped nuts (optional)

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. In a medium bowl, whisk flour, baking powder, baking soda, and salt; set aside.
  • 3. Cream butter and sugar together; add egg and vanilla until well combined. Mix in flour mixture. Gently fold in oatmeal, coconut and nuts (if using).
  • 4. Drop by teaspoonful onto greased cookie sheet. Bake for approximately 12 minutes or until cookies are lightly golden brown. For chewier cookies, bake for less time and for crunchier cookies, bake for more time. Cool on wire rack.

This incredibly delicious Oatmeal Cake recipe has been in our family for generations. One bite and you'll fall in love with this soft, hearty, and oh so flavorful cake!

1 1/4 cup boiling water
1 cup quick oats
1 stick butter
1 cup sugar
1 cup brown sugar
2 eggs (slightly beaten)
1 1/2 cup flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
Icing Ingredients
2 Tbsp melted butter
1/2 cup evaporated milk
1/2 cup sugar
1/2 tsp almond extract
1/2 cup coconut (optional)

Steps:

  • Combine quick oats, boiling water, and butter in a large mixing bowl. Cover and let stand for 20 minutes.
  • While you are waiting, butter and flour two cake pans* and preheat your oven to 350 degrees Fahrenheit.
  • After 20 minutes, mix together oat mixture. Add 1 cup of granulated sugar, brown sugar, and eggs, mix until well combined.
  • In a medium bowl whisk together flour, soda, cinnamon, and salt. Add to oat and sugar mixture and mix until well combined.
  • Pour cake batter evenly into prepared cake pans. Bake for 30-35 minutes until tooth pick inserted into the middle comes out clean.
  • While cake is baking, mix icing together in a microwave safe bowl (preferably something with a spout). Combine melted butter, evaporated milk, sugar, almond extract, and coconut - stir until well combined. Microwave for 30 seconds and stir.**
  • When cakes come out of the oven, slowly and evenly pour icing over the hot cakes while still in the pan. Place cake pans back in the oven under the broiler to toast the coconut and broil the icing. Watch carefully so they don't burn.
  • When coconut is a perfect golden brown, removed cakes from oven again. Let cakes cool 5-10 minutes. Run a butter knife around the edge of the cake pans and turn cakes out onto a cooling rack. Use the cooling rack to flip cake layers onto your cake serving plate - stacked.***
