This old-fashioned pie is wonderful to freeze and to have on hand for unexpected guests!

Number Of Ingredients 9

3 eggs
½ cup butter, softened
1 ½ cups white sugar
3 tablespoons all-purpose flour
1 cup buttermilk
1 teaspoon vanilla extract
1 tablespoon lemon juice
⅛ teaspoon freshly grated nutmeg
1 (9 inch) unbaked pie crust

Steps:

  • Preheat oven to 350 degrees (175 degrees C).
  • Beat eggs until frothy; add butter, sugar and flour. Beat until smooth.
  • Stir in buttermilk, vanilla, lemon juice and nutmeg; pour into pie shell.
  • Bake for 40 to 60 minutes, or until center is firm.

Number Of Ingredients 10

2 cups granulated sugar
1 1/2 tablespoons all-purpose flour (or 1 tablespoon flour, 1/2 tablespoon cornmeal)
8 tablespoons butter (1 stick), softened
3 large eggs, beaten
Pinch of salt
3/4 cup buttermilk
1/4 teaspoon baking soda
1 teaspoon vanilla extract
1 teaspoon white vinegar
1 piecrust

Steps:

  • Method: Preheat the oven to 350 degrees. Place the piecrust into the oven and bake for 10 minutes. Combine the sugar with the flour and cornmeal, if you're using. Cream the butter. Add the sugar mixture to the butter and then stir in the eggs, salt, buttermilk, baking soda, vanilla extract and vinegar. Pour filling into the partially baked piecrust and bake in the oven uncovered until brown on top and the custard has set, about 45-50 minutes.

CRUST:
1-1/2 cups all-purpose flour
1 teaspoon salt
1/2 cup shortening
1/4 cup cold whole milk
1 large egg, lightly beaten
FILLING:
1/2 cup butter, softened
2 cups sugar
3 tablespoons all-purpose flour
3 large eggs
1 cup buttermilk
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/4 cup lemon juice

Steps:

  • In a large bowl, mix flour and salt. Cut in shortening until smooth. Gradually add milk and egg and mix well. On a floured surface, roll dough out very thin. Place in a 10-in. pie pan; set aside. , For filling, cream butter and sugar in a bowl. Add flour. Add eggs, one at a time, beating well after each addition. Stir in remaining ingredients and mix well. Pour into crust. , Bake at 350° for 45 minutes. Cool completely before serving.
