Easy, satisfying, and full of whole grain goodness! Top as desired- I like mine with peanut butter and sugar-free syrup. Also, any chopped fruit, nuts, or chocolate chips could be added to the batter.

¼ cup whole wheat flour
¼ cup all-purpose flour
¼ cup rolled oats
¼ cup cornmeal
2 teaspoons granular no-calorie sucralose sweetener (e.g., Splenda ®)
½ teaspoon salt
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon ground cinnamon
2 egg whites
2 tablespoons plain nonfat yogurt
2 tablespoons skim milk
2 tablespoons water

Steps:

  • In a medium bowl, stir together the whole wheat flour, all-purpose flour, oats, cornmeal, sweetener, salt, baking powder, baking soda and cinnamon. In a separate bowl, whisk together the eggs, yogurt, milk and water. Pour the wet ingredients into the dry, and mix just until moistened.
  • Heat a skillet over medium heat, and coat with cooking spray. Pour about 1/3 cup of batter per pancake onto the skillet. Cook until bubbles begin to form in the center, then flip and cook until browned on the other side.

1 egg
1/4 cup applesauce
cooking spray
1/2 cup golden raisin

Steps:

  • Combine flours, farina, sugar, soda, baking powder, salt in a large bowl, stirring with a whisk.
  • Combine milk, applesauce,and egg in a medium bowl, stirring until well blended.
  • Add milk mixture to flour mixture, stirring until well combined; let stand 5 minutes.
  • Heat a nonstick grill or skillet over medium heat;coat pan with cooking spray; Pour about 1/4 cup batter per pancake onto griddle; SPRINKLE with 2 teaspoons raisins and 2 teaspoons nuts.

1/3 cup old fashioned oats
1/3 cup yellow cornmeal, preferably stone-ground
2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon salt
2 cups buttermilk
3 large eggs
4 tablespoons unsalted butter, melted
1/4 cup pure maple syrup

Steps:

  • In a bowl, whisk together the flours, oats, cornmeal, baking powder, baking soda, cinnamon, and salt.
  • In another bowl, whisk together the buttermilk, eggs, melted butter, and syrup to blend thoroughly.
  • Pour the liquid ingredients over the dry ingredients and mix with a whisk, stopping when everything is just combined (the batter will be lumpy).
  • Lightly butter, oil, or spray a griddle or skillet.
  • Preheat over medium heat, or if using an electric griddle, set to 350°.
  • If you want to hold the pancakes until serving, preheat your oven to 200°.
  • Spoon 1/3 cup batter onto the griddle for each pancake, allowing space for spreading.
  • When the undersides of the pancakes are golden and the tops are speckled with bubbles that pop and stay open, flip the pancakes over with a wide spatula and cook until the other sides are light brown.
  • Serve immediately, or keep the finished pancakes in the preheated oven while you make the rest of the batch.

2 Tbsp melted vegan butter ((we like Miyoko's brand // or sub dairy butter or coconut oil // plus more for cooking + serving))
2 Tbsp nut butter ((we like almond, peanut, cashew, and sunflower))
2 tsp vanilla extract
1 Tbsp maple syrup ((plus more to taste, or sub stevia to taste))
1/2 cup unsweetened dairy-free milk ((we prefer almond or cashew))
2 large eggs* ((preferably free-range organic, such as Vital Farms))
1 Tbsp baking powder
1 ¼ - 1 ½ cups almond flour* ((plus more as needed))
Berry compote
Nut butter
Vegan butter
Maple syrup

Steps:

  • To a mixing bowl, add melted vegan butter, nut butter, vanilla extract, and maple syrup and whisk well to combine. Add dairy-free milk and eggs and whisk once more to combine.
  • Add baking powder and whisk to combine. Then add almond flour, starting with the lesser amount and whisking to combine. You're going for a cake batter texture - not too runny, but not too gloppy or thick (see photo). Add more almond flour until the right texture is achieved. If it gets too thick, thin with more dairy-free milk.
  • Heat a skillet or pan over medium heat. Once hot, grease the surface with a little oil or your butter of choice. Wait 1 minute. Then add batter 1/4 cup at a time, giving your pancakes room to spread. They're ready to flip when they puff up slightly, the edges are dry, and the surface appears shiny - about 3 minutes.
  • Carefully flip and cook on the other side until golden brown and cooked all the way through - about 2 minutes. Continue until all batter is cooked (as recipe is written, ~10 pancakes).
  • Serve immediately with desired toppings. We enjoyed with a bit of vegan butter, berry compote, and maple syrup. These would also go well with nut butter, honey, bananas, or another fruit of choice.
  • Store leftovers covered in the refrigerator up to 3-4 days, or in the freezer up to 1 month. To freeze, lay in a single layer on a parchment-lined baking sheet and freeze until firm, then transfer to a freezer-safe container. To reheat, either microwave or heat in a toaster or 350-degree F (176 C) oven until warm.

1/3 cup multigrain hot cereal1
1 cup granola2
1 ½ cups milk3
1 large egg
1 cup all-purpose flour
1/2 cup whole wheat flour

Steps:

  • Add water and butter to a large saucepan and bring to a boil.
  • Remove from heat.
  • Stir in the multigrain cereal.
  • Let it sit for 10 minutes.
  • Stir in the granola.
  • Stir in the milk until combined.
  • Add the egg and stir to combine.
  • Stir in the flours, baking powder, and salt just until combined.
  • Heat your griddle or pan until hot.4
  • Grease the griddle or pan.
  • Drop 1/4 cup of batter onto the griddle or pan for each pancake.
  • Cook until the bubbles the form and begin to pop. The edges of the pancakes should look dry.

With all due respect to diner breakfasts and box mixes, the average pancake is about as satisfying as a bag of marshmallows. We'll take ours skillet-size, burnished from whole wheat flour and studded with cooked grains, because we want them flavorful and with a hardy texture.

3/4 cup whole wheat flour
1/2 cup all-purpose flour
2 Tbsp. sugar
1 tsp. baking powder
1 tsp. baking soda
1 tsp. kosher salt
1 large egg
1 1/2 cups buttermilk
2 cups mixed cooked whole grains (such as barley, farro, rye, spelt, kamut, and/or quinoa)
Melted unsalted butter (for pan)
Room-temperature butter, fresh blackberries, and pure maple syrup (for serving)

Steps:

  • Whisk whole wheat and all-purpose flours, sugar, baking powder, baking soda, and salt in a large bowl. Whisk egg and buttermilk in a medium bowl just to incorporate. Using a few swift strokes, whisk egg mixture into dry ingredients just to combine. Stir grains into batter (you can pulse the grains in a food processor first if you prefer them in smaller pieces).
  • Heat a large nonstick skillet over medium-high. Lightly brush with butter. Add half of batter to skillet, spreading into an even layer as wide as the skillet. Cook pancake until bubbles have formed and broken across the entire surface and underside is golden brown, about 5 minutes. Using 2 spatulas (or sliding onto a flat plate before inverting back into skillet), flip pancake. Continue to cook until lightly browned underneath, about 1 minute. Transfer pancake to a plate. Repeat with remaining batter.
  • Serve pancakes topped with butter, fruit, and syrup.
