These date bars come from my great aunt's recipe book, and will surely be your next favorite. These soft cookie bars are filled with plump, chopped Medjool dates and ground walnuts, perfect for a Christmas cookie tray or a mid-day treat!

Number Of Ingredients 10

3 cups all-purpose flour
4 teaspoons baking powder
1½ cups granulated sugar
2 tablespoons unsalted butter (melted)
4 eggs (lightly beaten)
4 tablespoons cold water
2 teaspoons vanilla extract
1 teaspoon salt
16 ounces pitted dates (finely chopped)
1 cup walnuts (ground)

Steps:

  • Preheat oven to 350 degrees F. Lightly grease a 10x15-inch jelly roll pan.
  • In a medium bowl, whisk together the flour and baking powder; set aside.
  • Using an electric mixer on medium speed, beat together the sugar and butter, until combined (it will be crumbly). Add the eggs, water, vanilla extract and salt and beat until thoroughly combined, scraping the sides of the bowl as necessary. Reduce the mixer speed to low and gradually add the flour mixture. Use a rubber spatula to fold in the chopped dates and ground walnuts.
  • Spread the batter in the prepared pan and bake for 20 to 25 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool, cut into squares and dust. They can be dusted with powdered sugar, if desired. These cookies can be stored in an airtight container or covered tightly with plastic wrap, at room temperature for up to 1 week.

This is one of my favorite recipes handed down from my grandmother; hands down it makes the best date bar that I have ever had. Enjoy!

8 ounces dates, chopped
½ cup water
1 ½ teaspoons vanilla extract
1 ½ cups all-purpose flour
1 ½ cups rolled oats
1 cup firmly packed brown sugar
½ cup chopped walnuts
¾ teaspoon salt
¾ teaspoon baking soda
¾ cup butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring dates and water to a boil in a saucepan over medium heat. Reduce heat; simmer and stir until thick, 3 to 4 minutes. Remove from heat; stir in vanilla extract.
  • Combine oats, flour, brown sugar, walnuts, salt, and baking soda in a large bowl. Add melted butter; mix until blended.
  • Pour 2/3 of the oat mixture into an 8-inch square baking dish, pressing over the bottom and sides. Spread the date mixture over the oats; crumble remaining oat mixture evenly on top. Press down lightly.
  • Bake in the preheated oven until golden, about 25 minutes.

2-1/2 cups pitted dates, cut up
1/4 cup sugar
1-1/2 cups water
1/3 cup coarsely chopped walnuts, optional
1-1/4 cups all-purpose flour
1 teaspoon salt
1/2 teaspoon baking soda
1-1/2 cups quick-cooking oats
1 cup packed brown sugar
1/2 cup butter, softened
1 tablespoon water

Steps:

  • In a saucepan, combine dates, sugar and water. Cook, stirring frequently, until very thick. Stir in walnuts, if desired; cool. , Sift the flour, salt and baking soda together in a large bowl; add oats and brown sugar. Cut in butter until mixture is crumbly. Sprinkle water over mixture; stir lightly. Pat half into a greased 13x9-in. baking pan. Spread with date mixture; cover with remaining oat mixture and pat lightly. , Bake at 350° for 35-40 minutes or until lightly browned. Cool on a wire rack. Cut into bars.

1 (8 ounce) package dates
1/2 cup water
1/2 cup sugar
1 cup chopped nuts (optional)
1 cup brown sugar
3/4 cup butter
1 1/2 cups quick oatmeal (dry)
1/2 teaspoon salt
1 1/2 cups flour
1 teaspoon baking soda

Steps:

  • Mix filling ingredients in saucepan. Cook til smooth. (Raspberry or strawberry jam may also be used as filling.)
  • Mix cookie ingredients as if for a pie crust.
  • Pat one half of the mixture on a buttered (8x8x2 inch) pan.
  • Press down firmly and spread on the filling.
  • Cover with the other half of the oatmeal mixture and press down lightly.
  • Bake at 350° for 10-15 minutes. Cut into squares.
