FRIED BANNOCK

3 cups sifted flour
1 teaspoon salt
2 tablespoons baking powder
water
vegetable oil or lard

Steps:

  • Mix half the flour with the remaining dry ingredients.
  • Add water until the mixture becomes thick, "like a paper mache paste".
  • Add more flour until the dough feels like a soft earlobe.
  • Heat the oil or lard over a medium-high heat until very hot, but not smoking.
  • Break off small pieces of the dough and flatten each to the size of your palm, about 1/2-inch thick.
  • Place the pieces in the hot oil, turn after about 3 minutes, or when golden brown.
  • Place the bannock on a paper towel to soak up the excess grease.
  • Serve plain or with jam.

3 cups all-purpose flour
1 teaspoon salt
2 tablespoons baking powder
¼ cup butter, melted
1 ½ cups water

Steps:

  • Measure flour, salt, and baking powder into a large bowl. Stir to mix. Pour melted butter and water over flour mixture. Stir with fork to make a ball.
  • Turn dough out on a lightly floured surface, and knead gently about 10 times. Pat into a flat circle 3/4 to 1 inch thick.
  • Cook in a greased frying pan over medium heat, allowing about 15 minutes for each side. Use two lifters for easy turning. May also be baked on a greased baking sheet at 350 degrees F (175 degrees C) for 25 to 30 minutes.

3 cups all-purpose flour
2 tablespoons baking powder
¼ cup vegetable oil
1 ½ cups water
1 pinch salt

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • In a large bowl, mix together the flour, baking powder, salt, water and oil. Knead on a lightly floured surface for about 10 minutes. Let it rest for a minute, then spread out onto a cookie sheet to 1 inch thickness. Poke holes in the dough using a fork.
  • Bake for 15 to 20 minutes in the preheated oven, until the bottom is golden when you lift up the bread to take a peek.

Bannock is a yeast free bread that can either be fried or baked. It is used by many indigenous groups in North America and it's delicious.

3 cups flour ( or half and half whole wheat and white flour)
1 teaspoon salt
1 tablespoon baking powder
1/2 cup oil (or olive oil)
1 cup water ( or milk)

Steps:

  • Preheat oven to 375ºF.
  • Mix all dry ingredients into a big bowl. Add water or milk and add the oil of your choice. Mix all ingredients together until the batter becomes like bread dough, not sticky.
  • Put flour onto table surface then roll the dough with your fists for about 2 minutes, like making a bread dough. Pound the dough into a round ball then slowly expand the dough by making it nice and round about half inch thick and should be round like a pie plate. Make holes with a fork by poking it all around the dough from top to bottom.
  • Then with your cookie sheet ready put the bannock onto cookie sheet and bake it at 375ºF until it becomes golden brown. Spread lard on the bannock when it comes out of the oven to keep it moist and delicious.

SCOTTISH BANNOCKS RECIPE

This is a traditional Scottish Bannocks Recipe, or Scottish Skillet Bread. These were traditionally made with barley or oatmeal, so we have used oatmeal in this recipe. You can change it up with added ingredients like bacon bits, chilli, herbs, or cheese if you wish!

330g Oatmeal (2 5/8 Cups) - We mean ground oats
265g Plain flour (2 1/8 Cups)
2 tsp Baking soda
1.5 tsp Salt
1.5 Cups Buttermilk (375ml)

Steps:

  • If you're making your own buttermilk do that first (see notes).
  • Mix your oatmeal, salt and flour together in your bowl.
  • Measure our your buttermilk, if you've made extra, and add the baking soda.
  • Add your buttermilk mixture slowly to the oatmeal and flour mix, you may not need it all so add around a cup then use a spoon to bring it together before continuing with the rest if necessary.
  • Turn the dough out onto a floured surface and split into two.
  • Manipulate the dough into a flat circles the right size to suit your griddle, skillet or frying pan. Be careful not to handle the mixture too much at this stage to avoid taking any air the baking soda has added from it.
  • Heat your griddle/skillet with a little oil.
  • Indent your dough slightly to provide 4 sections, like you would a pizza.
  • Once it's hot add the dough to your griddle/skillet.
  • You should only have to turn your bannock once, leave it to brown on the underside but don't be afraid to give it a shuggle to make sure it's not stuck to the surface of the pan.
  • Once you're sure it's cooked turn the bannock over to lightly brown the other side. You should be able to tap it and hear a hollow sound.
  • If your bannock is too thick you may need to cook for longer on the second side but this will depend on your griddle/skillet size.

4 cups flour
1 package active dry yeast
1/4 cup sugar
1/4 cup vegetable oil
1/2 teaspoon salt
2 cups water
4 cups cooking oil, to fry in a deep frier works great aswell.

Steps:

  • Mix flour, yeast, sugar and salt together in a bowl.
  • Make a hollow cone shape in the middle of the dry ingedients and slowly mix in oil and warm water.
  • Starting from the center and working outwards in a circle motion, more and more flour will slowly work its way to form a dough.
  • Start to knead the dough until all the flour is worked in.
  • Pour enough oil to cover the out side of the dough in the bowl.
  • Let sit until doubled in size. "I like to heat the oven for 10 minutes on 250C degrees, then place dough in there":p.
  • After it doubles in size, put the 4 cups of grease in a large pot and heat on high for 15 minutes.
  • Turn lower like a few millitmeters.
  • Then roll dough out to a 1/2 centimeter thickness on a well greased surface. Cut in to favorable size.
  • Place carefully into a pot and brown on each side.Next, place to cool.
  • After, this delicious bread can be fozen or topped with an endless choice of toppings.
