This family favorite makes a wonderful brunch dish served with muffins and fresh fruit. It's also a great way to use up extra taco meat. Adjust the heat by choosing a hotter or milder salsa. -Michelle Jibben, Springfield, Minnesota

1 tube (8 ounces) refrigerated crescent rolls
10 large eggs
1/3 cup water
3 tablespoons butter
1-1/2 cups prepared taco meat
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1 cup salsa

Steps:

  • Unroll crescent roll dough into a greased 13x9-in. baking dish. Seal seams and perforations; set aside., In a small bowl, whisk eggs and water. In a large skillet, heat butter until hot. Add egg mixture; cook and stir over medium heat until eggs are almost set. Remove from the heat., Sprinkle taco meat over dough. Layer with eggs, cheeses and salsa. Bake, uncovered, at 375° until bubbly and cheese is melted, 14-16 minutes.

4 ounces green chilies (chopped)
8 ounces monterey jack cheese (low fat)
24 ounces low fat cottage cheese
1/2 cup flour

Steps:

  • Beat all ingredients together.
  • Pour into 9x13 dish.
  • Bake at 375 degrees for 15 minutes, then 325 degrees for 40-45 minutes.
  • Serve with salsa.

1/2 teaspoon salt (optional)
1 lb monterey jack cheese, grated
3 cups small curd cottage cheese
1/2 cup butter, softened
4 ounces jalapenos, seeded and chopped
1 (4 ounce) can chilies, drained and chopped
1 (2 ounce) jar pimientos, drained and chopped
1 (7 ounce) can whole kernel corn, drained

Steps:

  • Preheat oven to 350F and butter a 13 x 9" baking pan.

8 ounces cream cheese, softened
1 1/2 cups sugar
4 eggs
1 1/2 teaspoons vanilla extract
3 cups all-purpose flour
1 1/2 teaspoons baking powder

Steps:

  • Preheat oven to 350F and butter/flour a 12-cup Bundt pan.
  • Combine butter and cream cheese in a large bowl; beat until fluffy.
  • Add sugar; beat five minutes.
  • Add eggs, one at a time, beating well after each addition.
  • Stir in vanilla.
  • Sift dry ingredients together; add to batter and mix well.
  • Pour into prepared pan and bake for 50 to 60 minutes or until cake tests done.

l skinless, boneless chicken breast half
2 tbsp green onion, minced
2 tbsp red bell pepper, minced
1/3 cup corn
1/4 cup block beans, rinsed ond drained
1/2 tsp ground cumin
1/2 tsp chili powder
l/3 tsp soil
1 pinch Cayenne pepper
3/4 cup shredded Monterey Jack cheese
Non-stick cooking sproy if baking
Olive oil as needed if baking, optiona

  • Rub 1 tbsp oil over chicken. In a medium saucepan over medium he!it, cook chicken 5 minutes per side, until meat is no nger pink. Remove hom hem ond set aside.
