I love the flavors of a grasshopper drink, and they really shine in this pie. I have never owned a cheesecake pan. All my experience with cheesecakes comes from making pies like this one Besides, pies are such a good size for small families. Chilllilng is not included in the time to make.

Number Of Ingredients 8

1 (9 inch) chocolate crumb crusts
4 (3 ounce) packages cream cheese, softened (12 ounces altogether)
2/3 cup sugar
2 eggs
1/4 cup green creme de menthe
2 tablespoons dark Creme de Cacao
4 (1 ounce) semi-sweet chocolate baking squares (4 ounces altogether)
1/2 cup sour cream, at room temperature

Steps:

  • Have the chocolate crumb crust ready. You may buy this item or make your own.
  • Preheat oven to 300 degrees.
  • With an electric mixer, beat the cream cheese until smooth.
  • Blend in the sugar, eggs, and liqueurs.
  • Pour into crust and bake for 40 minutes. Cool.
  • While pie is cooling, make the topping. Melt the chocolate in top of a double boiler over low heat or in the microwave according to manufacturer's direction. Blend in the sour cream. Spread over the cooled pie.
  • Refrigerate the pie at least 5 hours before serving.

6 ounces cream cheese, softened
1 can (14 ounces) sweetened condensed milk
15 drops green food coloring
24 chocolate-covered mint cookies, divided
2 cups whipped topping
1 chocolate crumb crust (9 inches)

Steps:

  • In a large bowl, beat the cream cheese until fluffy. Gradually beat in milk until smooth. Beat in the food coloring. Coarsely crush 16 cookies; stir into the cream cheese mixture. Fold in whipped topping. Spoon into the crust. Cover and freeze overnight. Remove from the freezer 15 minutes before serving. Garnish with remaining cookies.

12 ounces cream cheese, softened
⅔ cup white sugar
2 eggs
¼ cup creme de menthe liqueur
2 teaspoons white creme de cacao
1 (9 inch) prepared chocolate cookie crumb crust
4 ounces semisweet chocolate chips
½ cup sour cream, room temperature

Steps:

  • Preheat oven to 300 degrees F (150 degrees C.)
  • In a large bowl, beat cream cheese until smooth. Blend in sugar, eggs, creme de menthe, and white creme de cacao. Pour into crust.
  • Bake in the preheated oven for 40 minutes. Cool completely.
  • In a microwave-safe bowl, microwave chocolate until melted. Stir occasionally until chocolate is smooth. Blend in sour cream. Spread over surface of cooled cheese cake. Refrigerate 5 hours, or until firm before serving.
