BE MY VALENTINE SPARKLING RASPBERRY GRAPEFRUIT MOCKTAIL
This Valentine's Day appropriate cocktail has all the flavor but none of the alcohol - full of deep raspberry flavors, a hint of grapefruit and topped of with pink pepper tonic to give it a grown-up taste and a bit of sparkle. So good you won't even miss the alcohol!

Steps:
- Add the frozen raspberries, lemon juice, mint leaves and water to a blender and blend until smooth.
- In each glass, add 4 Tbsp of the raspberry mixture and 4 Tbsp of grapefruit tonic. Mix together carefully with a spoon.
- Fill up the glasses with Schweppes Pink Pepper Tonic and decorate with raspberries and mint leaves on swizzle sticks. Serve immediately!

- For each drink, stir 3 ounces grapefruit juice, 2 ounces each cranberry juice and gin, and a splash each of Campari and lime juice in a shaker with ice. Strain into an ice-filled glass rimmed with salt. Top with seltzer; garnish with lime.

- In a small saucepan, combine 1 cup water with the sugar and star anise; bring to a boil, stirring occasionally, until sugar has dissolved. Remove pan from heat; let cool completely.
- Pour mixture through a fine sieve into a measuring cup (to yield 1 cup); discard star anise. Cover syrup with plastic wrap, and chill.
- In a large pitcher, combine grapefruit juice, Campari, and chilled syrup. Divide among eight glasses; top with Champagne. Serve immediately.

Steps:
- Combine the grapefruit juice, elderflower liqueur, Campari, and simple syrup to taste in a pitcher.
- Fill 4 wine glasses with ice cubes, add some of the grapefruit mixture, and top off each glass with sparkling wine. Serve immediately.
