GRAPEFRUIT-SOY MARINATED CHICKEN WINGS



Grapefruit-Soy Marinated Chicken Wings image

1 cup grapefruit juice
1/4 cup lemon juice
1 tablespoon sugar
1 tablespoon Italian seasoning
1/4 cup soy sauce
3 cloves garlic, minced
1/4 cup onion, minced
1 teaspoon black pepper
24 chicken wings

Steps:

  • In a nonreactive bowl mix all ingredients, turning the chicken wings to coat thoroughly. Marinate at least 3 hours, preferably overnight (up to 2 days!). Turn the wings occasionally while marinating. Preheat the broiler or grill. Broil or grill the wings using medium to low heat, turning once, for approximately 12-15 minutes. Be careful not to burn skin. Serve the wings hot or at room temperature. Serving Suggestion: Serve the wings with steamed rice. Boil the remaining marinade and pan juices until reduced and pour over the rice. Hint: If wings cook too quickly on the outside, but the meat is still pink at the bone, turn off the broiler and leave the wings to sit in the hot oven for 5-8 minutes. The wings will cook through without additional browning. Or, microwave the wings on high for a minute or so. Notes: For better cooking and a prettier presentation, fold the tip in back of the drummette so the wing forms a triangle.

Here's a light tasty recipe for chicken wings. I love ruby red grapefruits and I hope you do too. These wings are more delicate in flavor but a great compliment to heartier side dishes.

3 -4 lbs chicken wings, jointed (save the tips for stock if you want)
3 tablespoons olive oil
2 -3 tablespoons oregano (fresh or dried)
1 ruby red grapefruit, juice of

Steps:

  • Mix all the ingredients in a plastic bag and allow to marinate for at least 2 hours.
  • To bake: preheat oven to 375, spread wings out on foil lined cookie sheet and bake for 1 hour or until done.
  • To grill: grill on medium high heat for approx 30 minutes or until done.

A ridiculously easy dish! If you want to complicate things a bit more you can brine the bird afore hand.

Number Of Ingredients 6

1 roasting hen (about 4lbs.)
1 grapefruit
1 onion, thickly sliced (about 5 slices)
olive oil
salt (preferably kosher)
pepper (preferably fresh cracked)

Steps:

  • Preheat oven to 350*.
  • Remove neck and the rest of the organ"prize package" from the inside of the bird.
  • Discard or save for a later use (like stock).
  • Rinse bird.
  • Pat dry.
  • Rub olive oil all over bird.
  • Salt and pepper to taste.
  • Place onion slices in a roasting pan and place bird on slices.
  • Cut grapefruit in half.
  • Squeeze one half over bird.
  • Place used half of grapefruit in the cavity of the bird and tie legs together.
  • You can also fold the bird's wings back at this point if you want to.
  • Cook bird for about an hour and 15 minutes to an hour and a half or until leg joint is loose and juices run clear.
  • While bird is cooking use the other half of the grapefruit to"baste" the chicken.
  • If the chicken begins to get too dark (this can happen because of all the natural sugar in the grapefruit) cover loosely with foil.
  • When finished cooking.
  • Let it sit and rest for five minutes.
  • Then carve away!
