Easy Chocolate Cupcakes image

This recipe for Chocolate Cupcakes is a top secret bakery recipe - used over 100,000 times! Simple, easy, moist and delicious - the ultimate foolproof bake.

150 g Caster sugar
120 g Self raising flour
25 g Cocoa
Pinch of salt (Optional)
1 Egg (Free range, medium or large)
50 ml Oil
125 ml Milk
1 tsp Vanilla extract
300 g Icing sugar
150 g Unsalted butter
30 g Cocoa powder
Boiling water
Sprinkles

Steps:

  • Preheat the oven to 180C.
  • Mix the dry ingredients in one bowl.
  • Beat the wet ingredients in another bowl.
  • Combine, by adding about two thirds of the wet ingredients and beating until smooth. Then add the rest of the wet ingredients and beat until smooth again.
  • Scoop into muffin cases in a muffin tin and bake for between 17 and 19 minutes or until domed and springy on top.

My Gran gave me this recipe at my hen's party before I got married. I'll always keep it near, but paper get's damaged, so I'm saving it here.

Number Of Ingredients 13

250 ml sugar
250 ml self-raising flour
1 pinch salt
2 tablespoons cocoa
1 teaspoon baking powder
3 egg whites
3 egg yolks
1 teaspoon vanilla essence
125 ml oil
125 ml boiling water
1 tablespoon cocoa
250 ml icing sugar
150 ml milk

Steps:

  • Sift together sugar, flour, salt, cocoa.
  • Stir to mix.
  • Add vanilla essence to egg yolks.
  • Stir together.
  • Add baking powder to egg whites.
  • Beat well to a froth.
  • Add boiling water to oil and stir vigorously into dry ingredients.
  • Add in egg yolk mixture and stir.
  • Fold in egg white mixture.
  • Bake at 180C (350 F) for approximately 30 minutes.
  • For icing:.
  • Once cake has cooled down, mix ingredients and ice cake.

250 ml sugar
250 ml self-raising flour
1 pinch salt
2 tablespoons cocoa
1 teaspoon baking powder
3 egg whites
3 egg yolks
1 teaspoon vanilla essence
125 ml oil
125 ml boiling water
1 tablespoon cocoa
250 ml icing sugar
150 ml milk

Steps:

  • Line a 20 cm diameter cake tin with wax paper.
  • Heat oven to 180°C or 350°F while preparing mixture.
  • Sift together sugar, flour, salt, cocoa.
  • Stir to mix.
  • Add vanilla essence to egg yolks.
  • Stir together.
  • Add baking powder to egg whites.
  • Beat well to a froth.
  • Add boiling water to oil and stir vigorously into dry ingredients.
  • Add in egg yolk mixture and stir.
  • Fold in egg white mixture.
  • Bake at 180°C (350°F) for approximately 30 minutes.
  • For icing:.
  • Once cake has cooled down, mix ingredients and ice cake.
