THIN AND CRISPY OATMEAL RAISIN COOKIES

Thin and Crispy Oatmeal Raisin Cookies image

I tried to combine recipes to come up with a cookie that tastes like Tate's Bake Shop cookies. The published Tate's recipe on YouTube does not taste like the cookies you buy in the store in the green bag. This is the closest I've come to simulating the oatmeal raisin flavor. This is not a thick cakey cookie but a thin, crisp, lighter version.

GRAN'S CRUNCHY OATMEAL COOKIES

Gran's Crunchy Oatmeal Cookies image

This is NOT my kinda cookie. I like a doughy, chewy, soft BIG cookie, BUT everyone in my family adores these little hard crunchy cookies and I have to admit, I love them too! Even when my Grandmother was older and had a hard time getting around, she'd make these from scratch and mix them together by hand (for the last part). To make life easier, she would make the dough the first day, chill it overnight and bake the next. They are ONLY great straight out of the freezer. With a cup of tea? Wonderful and just how GG (Gran) used to enjoy them. A Christmas or birthday didn't go by without receiving a bag of these straight from the freezer and I plan to continue that legacy.

Apple Crumble with a delicious buttery oatmeal cookie crumble. Tart apples in cinnamon & sugar and butter topped with an easy oatmeal cookie mix crumble topping. As it bakes it creates this buttery brown sugar syrup! Serve with vanilla ice cream for the best apple crumble dessert ever.

Provided by Jessica

Categories     Dessert

Time 1h

Number Of Ingredients 9

4 granny smith apples
⅓ cup granulated sugar
¼ cup brown sugar
1 teaspoon cinnamon
4 tablespoons salted butter (chopped small)
1 pouch (17.5 oz) oatmeal cookie mix
1/2 cup (1 stick) salted butter (melted)
½ cup chopped pecans
vanilla ice cream, caramel syrup, chopped pecans (optional for serving)

Steps:

  • Heat oven to 325°. Prepare a 9x9 baking dish by spraying with cooking spray. Set aside.
  • Peel each apple and thinly slice OR chop into small chunks. Place apples into a mixing bowl.
  • Add the brown sugar, granulated sugar, cinnamon, and chopped butter into the apples and stir until all the apples are coated in the cinnamon & sugar mixture. Dump the apples into the prepared pan and spread out evenly.
  • In the same bowl combine the oatmeal cookie mix, melted butter, and chopped pecans. Stir together until thick crumbles form. Sprinkle it over the apples in the baking dish. * DO NOT prepare the cookie mix according to package directions before adding it into the bowl. Just dump the dry contents from the pouch.
  • Bake for 40-50 minutes or until apples are at desired cook, the topping is a light golden brown, and the edges are bubbly.
  • Let the apple crumble sit and rest for 10-15 minutes before serving with vanilla ice cream, caramel syrup, and additional chopped pecans (if desired).

ICED APPLE OATMEAL COOKIES

Iced Apple Oatmeal Cookies image

A perfect fall cookie! Make on a Sunday and pack in lunches all week.

Provided by Sarah Olson

Categories     Dessert

Time 55m

Number Of Ingredients 14

1 cup all-purpose flour
1 cup old-fashioned rolled oats (not instant oats)
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon baking soda
1/2 teaspoon salt
6 tablespoons unsalted butter (softened slightly but not melted)
1/3 cup light brown sugar (lightly packed)
1/3 cup granulated sugar
1 large egg
1 teaspoon vanilla
1 cup diced Granny Smith apple (peeled, cored, and diced very small)
1 cup powdered sugar
1-2 tablespoons milk

Steps:

  • Preheat the oven to 350F. Line 2 large baking trays with parchment paper or silpat liners.
  • Add the flour, oats, cinnamon, nutmeg, baking soda, and salt to a medium bowl. Stir to combine.
  • Use a handheld electric mixer to beat together the butter, brown sugar, and granulated sugar in a large bowl. Beat in the egg and vanilla.
  • Add the dry ingredients to the butter mixture and beat to combine.
  • Stir in the diced apple.
  • Use a 1 1/2-tablespoon scoop to measure out the dough. Roll it into balls and arrange them about 2 inches apart on the prepared baking trays. Slightly flatten each cookie.
  • Bake until the cookies are golden on the bottom and set along the outside but still look a touch doughy in the center. This takes about 13 to 14 minutes if baking 2 trays at once (rotate them once halfway through), or 11 to 12 minutes if baking 1 tray at a time.
  • Let the cookies cool for 10 minutes on the trays, and then use a thin metal spatula to transfer them to a wire rack to finish cooling.
  • Once the cookies are cooled, make the icing. To do so, use a fork to stir enough milk into the powdered sugar so that it reaches a glaze-like consistency.
  • Drizzle the icing decoratively on top of the cooled cookies.
  • Let the icing set before serving the cookies.
