HEALTHY GRANOLA



Healthy Granola image

This delicious healthy granola recipe is naturally sweetened with maple syrup (or honey). It's made with oats, coconut oil and your favorite nuts and fruit. Make it your own! Recipe yields about 8 cups granola, enough for about 16 half-cup servings.

4 cups old-fashioned rolled oats (use certified gluten-free oats for gluten-free granola)
1 1/2 cup raw nuts and/or seeds (I used 1 cup pecans and 1/2 cup pepitas)
1 teaspoon fine-grain sea salt (if you're using standard table salt, scale back to 3/4 teaspoon)
1/2 teaspoon ground cinnamon
1/2 cup melted coconut oil or olive oil
1/2 cup maple syrup or honey
1 teaspoon vanilla extract
2/3 cup dried fruit, chopped if large (I used dried cranberries)
Totally optional additional mix-ins: 1/2 cup chocolate chips or coconut flakes*

Steps:

  • Preheat oven to 350 degrees Fahrenheit and line a large, rimmed baking sheet with parchment paper.
  • In a large mixing bowl, combine the oats, nuts and/or seeds, salt and cinnamon. Stir to blend.
  • Pour in the oil, maple syrup and/or honey and vanilla. Mix well, until every oat and nut is lightly coated. Pour the granola onto your prepared pan and use a large spoon to spread it in an even layer.
  • Bake until lightly golden, about 21 to 24 minutes, stirring halfway (for extra-clumpy granola, press the stirred granola down with your spatula to create a more even layer). The granola will further crisp up as it cools.
  • Let the granola cool completely, undisturbed (at least 45 minutes). Top with the dried fruit (and optional chocolate chips, if using). Break the granola into pieces with your hands if you want to retain big chunks, or stir it around with a spoon if you don't want extra-clumpy granola.
  • Store the granola in an airtight container at room temperature for 1 to 2 weeks, or in a sealed freezer bag in the freezer for up to 3 months. The dried fruit can freeze solid, so let it warm to room temperature for 5 to 10 minutes before serving.

This is a great recipe to make in a big batch. We don't really eat bowlfuls of it, but instead use it to sprinkle on top of yoghurt or porridge to give it a bit of sweetness and crunch, so it's always handy to have some in an airtight container, ready and waiting

Yield 750g (serve in 50g portions with yoghurt for a complete breakfast)

50 g blanched almonds
50 g pecan nuts
50 g unsalted pistachios, (shelled)
50 g dried apricots
50 g pumpkin seeds
50 g sunflower seeds
1 tablespoon sesame seeds
1 tablespoon flaxseeds
250 g porridge oats
1 teaspoon ground cinnamon
1 tablespoon desiccated coconut
50 g sultanas
50 g sour cherries
6 tablespoons maple syrup
1 orange

Steps:

  • Preheat the oven to 160ºC/325ºF/gas 3.
  • Roughly chop the nuts and apricots, then place into a large bowl. Add the remaining dry ingredients and mix together.
  • Drizzle over the maple syrup and finely grate over the orange zest, then stir well to coat everything.
  • Spread out over a large baking tray in an even layer - split it between two, if it's easier.
  • Pop into the hot oven for 20 to 25 minutes, or until turning golden, stirring every 10 minutes or so to stop it from catching. Bear in mind that the granola will harden up and go crunchy as it cools, so don't be tempted to cook it for too long.
  • Leave to cool completely, then tip into airtight storage jars and use as and when you need it - it will keep quite happily for up to 4 weeks.

I adapted this easy-to-make granola from the first Harrowsmith cookbook (I made a big reduction in butter and it still works). Because we have a houseful of people, I usually double the amounts shown here. If you feed a crowd, too, make sure you have a large enough pan. My ceramic roasting pan-which is 11" x 14"-holds a double recipe comfortably. UPDATE: At an exchange student's request, we are now adding cinnamon. Good addition. The recipe has been revised accordingly.

4 cups rolled oats
1 cup wheat germ
1 cup finely shredded coconut
1/4 cup sesame seeds
1/2 cup sunflower seeds
1/2 teaspoon cinnamon (optional)
1/2 cup raisins (currants and diced apricots are also good) or 1/2 cup other dried fruit (currants and diced apricots are also good)
1/2 cup butter
1/4-1/2 cup honey (depending on your sweet tooth)
1/2 tablespoon milk
1/2 teaspoon salt

Steps:

  • Preheat oven to 350 degrees.
  • Combine all the dry ingredients in the baking pan (first six items). Add raisins (or other dried fruits) after cooking.
  • Heat the butter, honey, milk and salt in a small saucepan until all the butter melts.
  • Dribble honey-butter mixture over dry ingredients, and mix well to moisten all the dry ingredients.
  • Bake for 20-30 minutes (depending on how hot your oven runs), stirring frequently.
  • This can easily over-brown (burn), so keep an eye on it.
  • Remove from oven and stir in the raisins or other dried fruit.
  • When cool, store in an airtight container. It keeps very well.

Another from Nigella Lawson's Feast cookbook. You can use granola or muesli interchangeably here. There was more batter than I usually get for a 12 muffin recipe so I kept filling up the cups more and filled them nearly to the top with some batter still left over but not much. The muffins did not rise much so I guess this was the right thing to do. These are tasty little treats that are also good for you. Enjoy!

1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1 cup buttermilk
1 egg
3/4 cup light brown sugar
1/3 cup vegetable oil
2 cups granola cereal or 2 cups muesli

Steps:

  • Preheat the oven to 400 degrees. Line a 12 muffin tins with paper linings.
  • Combine the flour, baking soda, and salt in a large bowl.
  • In another bowl whisk together the buttermilk, egg, sugar and oil. Pour this into the dry ingredients and mix lightly to combine.
  • Fold in granola and then divide among the 12 paper lined tins.
  • Bake for 25 minutes or until golden brown. Let cool a bit on a wire rack before serving.

  • All you need to do is mix the almond, apricots, and all of the remaining elements in a large bowl. Then move the mixture to a large, airtight container for storage.
  • You can toast some or all of the elements within the blend. I prefer to only toast the nuts, seeds, and grains though. To do this, spread them in a single layer over a large baking tray and toast in the oven for 10-15 minutes at 325ºF/160ºC, until lightly golden and aromatic.Nuts can take less time - 7-8 minutes, though I just chuck everything in together to save time and it always works well.   • Homemade muesli cereal should be stored in an airtight container at room temperature, for between 1-2 months. There’s no need to refrigerate the mixture unless you plan to blend/chop the nuts and seeds (this may also reduce the shelf life).If you decide to make a meal-prep batch of overnight oats style muesli, then these will last in the fridge for 5-6 days.

  • Add two and a half cups of whole nuts (reserve the rest as whole nuts) and the dried fruit to a food processor. Process the mixture into medium size crumbs, some of it will turn into finer flour/meal like consistency but that’s what we want – a variety of shapes and sizes. Transfer to a large bowl.
