HEALTHY GRANOLA
This delicious healthy granola recipe is naturally sweetened with maple syrup (or honey). It's made with oats, coconut oil and your favorite nuts and fruit. Make it your own! Recipe yields about 8 cups granola, enough for about 16 half-cup servings.

- Preheat oven to 350 degrees Fahrenheit and line a large, rimmed baking sheet with parchment paper.
- In a large mixing bowl, combine the oats, nuts and/or seeds, salt and cinnamon. Stir to blend.
- Pour in the oil, maple syrup and/or honey and vanilla. Mix well, until every oat and nut is lightly coated. Pour the granola onto your prepared pan and use a large spoon to spread it in an even layer.
- Bake until lightly golden, about 21 to 24 minutes, stirring halfway (for extra-clumpy granola, press the stirred granola down with your spatula to create a more even layer). The granola will further crisp up as it cools.
- Let the granola cool completely, undisturbed (at least 45 minutes). Top with the dried fruit (and optional chocolate chips, if using). Break the granola into pieces with your hands if you want to retain big chunks, or stir it around with a spoon if you don't want extra-clumpy granola.
- Store the granola in an airtight container at room temperature for 1 to 2 weeks, or in a sealed freezer bag in the freezer for up to 3 months. The dried fruit can freeze solid, so let it warm to room temperature for 5 to 10 minutes before serving.

JOOLS' GORGEOUS GRANOLA
This is a great recipe to make in a big batch. We don't really eat bowlfuls of it, but instead use it to sprinkle on top of yoghurt or porridge to give it a bit of sweetness and crunch, so it's always handy to have some in an airtight container, ready and waiting

- Preheat the oven to 160ºC/325ºF/gas 3.
- Roughly chop the nuts and apricots, then place into a large bowl. Add the remaining dry ingredients and mix together.
- Drizzle over the maple syrup and finely grate over the orange zest, then stir well to coat everything.
- Spread out over a large baking tray in an even layer - split it between two, if it's easier.
- Pop into the hot oven for 20 to 25 minutes, or until turning golden, stirring every 10 minutes or so to stop it from catching. Bear in mind that the granola will harden up and go crunchy as it cools, so don't be tempted to cook it for too long.
- Leave to cool completely, then tip into airtight storage jars and use as and when you need it - it will keep quite happily for up to 4 weeks.

CRUNCHY GRANOLA (MUESLI)
I adapted this easy-to-make granola from the first Harrowsmith cookbook (I made a big reduction in butter and it still works). Because we have a houseful of people, I usually double the amounts shown here. If you feed a crowd, too, make sure you have a large enough pan. My ceramic roasting pan-which is 11" x 14"-holds a double recipe comfortably. UPDATE: At an exchange student's request, we are now adding cinnamon. Good addition. The recipe has been revised accordingly.

Steps:
- Preheat oven to 350 degrees.
- Combine all the dry ingredients in the baking pan (first six items). Add raisins (or other dried fruits) after cooking.
- Heat the butter, honey, milk and salt in a small saucepan until all the butter melts.
- Dribble honey-butter mixture over dry ingredients, and mix well to moisten all the dry ingredients.
- Bake for 20-30 minutes (depending on how hot your oven runs), stirring frequently.
- This can easily over-brown (burn), so keep an eye on it.
- Remove from oven and stir in the raisins or other dried fruit.
- When cool, store in an airtight container. It keeps very well.

GRANOLA OR MUESLI MUFFINS
Another from Nigella Lawson's Feast cookbook. You can use granola or muesli interchangeably here. There was more batter than I usually get for a 12 muffin recipe so I kept filling up the cups more and filled them nearly to the top with some batter still left over but not much. The muffins did not rise much so I guess this was the right thing to do. These are tasty little treats that are also good for you. Enjoy!

- Preheat the oven to 400 degrees. Line a 12 muffin tins with paper linings.
- Combine the flour, baking soda, and salt in a large bowl.
- In another bowl whisk together the buttermilk, egg, sugar and oil. Pour this into the dry ingredients and mix lightly to combine.
- Fold in granola and then divide among the 12 paper lined tins.
- Bake for 25 minutes or until golden brown. Let cool a bit on a wire rack before serving.
