HEALTHY GRANOLA

This delicious healthy granola recipe is naturally sweetened with maple syrup (or honey). It's made with oats, coconut oil and your favorite nuts and fruit. Make it your own! Recipe yields about 8 cups granola, enough for about 16 half-cup servings.

Number Of Ingredients 9

4 cups old-fashioned rolled oats (use certified gluten-free oats for gluten-free granola)
1 1/2 cup raw nuts and/or seeds (I used 1 cup pecans and 1/2 cup pepitas)
1 teaspoon fine-grain sea salt (if you're using standard table salt, scale back to 3/4 teaspoon)
1/2 teaspoon ground cinnamon
1/2 cup melted coconut oil or olive oil
1/2 cup maple syrup or honey
1 teaspoon vanilla extract
2/3 cup dried fruit, chopped if large (I used dried cranberries)
Totally optional additional mix-ins: 1/2 cup chocolate chips or coconut flakes*

Steps:

  • Preheat oven to 350 degrees Fahrenheit and line a large, rimmed baking sheet with parchment paper.
  • In a large mixing bowl, combine the oats, nuts and/or seeds, salt and cinnamon. Stir to blend.
  • Pour in the oil, maple syrup and/or honey and vanilla. Mix well, until every oat and nut is lightly coated. Pour the granola onto your prepared pan and use a large spoon to spread it in an even layer.
  • Bake until lightly golden, about 21 to 24 minutes, stirring halfway (for extra-clumpy granola, press the stirred granola down with your spatula to create a more even layer). The granola will further crisp up as it cools.
  • Let the granola cool completely, undisturbed (at least 45 minutes). Top with the dried fruit (and optional chocolate chips, if using). Break the granola into pieces with your hands if you want to retain big chunks, or stir it around with a spoon if you don't want extra-clumpy granola.
  • Store the granola in an airtight container at room temperature for 1 to 2 weeks, or in a sealed freezer bag in the freezer for up to 3 months. The dried fruit can freeze solid, so let it warm to room temperature for 5 to 10 minutes before serving.

2 tbsp vegetable oil
125ml maple syrup
2 tbsp honey
1 tsp vanilla extract
300g rolled oats
50g sunflower seed
4 tbsp sesame seeds
50g pumpkin seeds
100g flaked almond
100g dried berries (find them in the baking aisle)
50g coconut flakes or desiccated coconut

Steps:

  • Heat oven to 150C/fan 130C/gas 2. Mix the oil, maple syrup, honey and vanilla in a large bowl. Tip in all the remaining ingredients, except the dried fruit and coconut, and mix well.
  • Tip the granola onto two baking sheets and spread evenly. Bake for 15 mins, then mix in the coconut and dried fruit, and bake for 10-15 mins more. Remove and scrape onto a flat tray to cool. Serve with cold milk or yogurt. The granola can be stored in an airtight container for up to a month.

3 cups old-fashioned oats
1 cup toasted wheat germ
1/4 cup slivered almonds
1/4 cup sunflower kernels
1/4 cup wheat or oat bran
2 tablespoons sesame seeds
2 tablespoons flaxseed
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 cup honey
2 tablespoons canola oil
1-1/2 teaspoons vanilla extract

Steps:

  • In a large bowl, combine the first nine ingredients; set aside. In a small saucepan, combine the honey, oil and vanilla. Cook over low heat for 1-2 minutes or until heated through. Pour over oat mixture; toss to coat. , Spread into a 15x10x1-in. baking pan coated with cooking spray. Bake at 275° for 30-35 minutes or until lightly browned, stirring twice. Cool. Store in an airtight container.

1/2 cup neutral oil or coconut oil
1/2 cup maple syrup
4 cups large flake oats
2 cups nuts and seeds
1.5 cups dried fruit
pinch salt
generous sprinkle of cinnamon

Steps:

  • Preheat oven to 325F.
  • In a small bowl, whisk together the oil and maple syrup.
  • In a large bowl, stir together the oats and nuts, salt, and cinnamon (leave the dried fruit out for now).
  • Pour the oil and maple syrup mixture over the dry ingredients and toss to thoroughly coat.
  • Spread granola onto a parchment-lined baking sheet. Spreading it thinly will result in a toastier taste, spreading it thickly will result in bigger clumps.
  • Bake at 325F for 20 mins or until nuts smell toasted.
  • Remove from oven and spread the dried fruit on top of granola and leave to cool.
  • Break into pieces.
  • Keep in an airtight container (I use a large Ziploc freezer bag).

1 Tablespoon chia seeds

¼ cup dried fruit of choice
¼ cup pumpkin seeds

Steps:

  • Preheat oven to 325 F with the rack in the center of the oven.
  • In a large bowl, mix the coconut flakes, slivered almonds, pecans, walnuts, chia seeds, ground flaxseed, and sea salt together.
  • In a small skillet, melt the coconut oil over low heat. Add in the maple syrup and stir to combine.
  • Add the maple syrup and coconut oil mixture to the nut mixture and toss to coat evenly.
  • On a parchment paper or silicone mat lined baking sheet, spread the granola mixture out evenly. Using the back of a spatula, press the granola down firmly (this helps ensure large crunchy clusters).
  • Bake for 25 minutes and then let cool completely. Break into large clusters and stir in dried fruit and pumpkin seeds.

⅓ cup seeds (pumpkin or sunflower)
¼ cup ground flax seed (optional)
½ cup maple syrup (or honey)
½ teaspoon salt
⅓ cup vegetable oil
1 ½ teaspoons cinnamon
½ teaspoon pumpkin pie spice (or apple pie spice)
1 cup raisins (or dried cranberries or blueberries)

Steps:

  • Preheat oven to 300°F. Line a large pan with parchment paper.
  • Combine all ingredients except raisins/cranberries in a large bowl. Mix well.
  • Spread onto prepared pan and bake 30-40 minutes or until golden.
  • Remove from the oven and stir in raisins. Cool completely on the pan.

1 cup slivered almonds
1 cup cashews
3/4 cup shredded sweet coconut
1/4 cup plus 2 tablespoons dark brown sugar
1/4 cup plus 2 tablespoons maple syrup
1/4 cup vegetable oil
3/4 teaspoon salt
1 cup raisins

Steps:

  • Preheat oven to 250 degrees F.
  • In a large bowl, combine the oats, nuts, coconut, and brown sugar.
  • In a separate bowl, combine maple syrup, oil, and salt. Combine both mixtures and pour onto 2 sheet pans. Cook for 1 hour and 15 minutes, stirring every 15 minutes to achieve an even color.
  • Remove from oven and transfer into a large bowl. Add raisins and mix until evenly distributed.
