- Combine first 5 ingredients in large bowl.
- Whisk all remaining ingredients except apples in medium bowl until blended. Add to dry ingredients; stir just until moistened. Stir in apples.

- Bake 15 to 20 min. or until toothpick inserted in centers comes out clean.

- Preheat oven to 375 degrees F (190 degrees C). Grease one 12-cup muffin tin.
- In a large bowl, beat the applesauce, oil egg, sugar and water together for 2 minutes at medium speed.
- In a medium bowl, combine the flour, cinnamon, salt, baking soda, allspice and muesli together. Add the dry ingredients to the applesauce mixture. Beat on low speed until combined.
- Spoon batter into the prepared muffin tin filling each cup 3/4 full. Bake in the preheated oven for 20 to 25 minutes or until the tops are golden brown an spring back lightly when touched. Remove from pans immediately to cool.

GRANOLA MUFFINS
These muffins are ludicrously easy to make. It's just a matter of mixing flour, baking soda and a pinch of salt in one bowl; stirring together buttermilk, an egg, vegetable oil and sugar in another; then combining the two. At the end, fold in some granola, though if you wanted to cut out one step, you could add the granola along with the flour in the bowl of dry ingredients. Bake and eat 20 minutes or so after you've taken them out of the oven. You can even measure out all the ingredients the night before, so all you need to do upon waking is stumble into the kitchen, switch on the oven and stir everything together.

- Heat oven to 350°F. Spray 18 regular-size muffin cups with cooking spray.
- In large bowl, mix 1 1/2 cups of the granola, the flour, baking powder, baking soda and salt. In medium bowl, beat eggs, brown sugar, buttermilk, oil and vanilla with whisk until combined. Add egg mixture to dry ingredients; stir just until combined.
- Divide batter evenly among muffin cups, filling about two-thirds full. Sprinkle evenly with remaining 1/2 cup granola.

- Preheat oven to 400 degrees F. Prepare muffin tins with paper muffin cups (makes about 18 muffins)
- Pour granola into a large mixing bowl. Break up any large pieces of granola-- I like to firmly pat on the granola with the bottom of a metal measuring cup. Add the all purpose flour, whole wheat flour, flax seed, baking powder and baking soda.
- In a separate smaller bowl mix the applesauce, milk, sugar, and eggs (please note original Whole Foods recipe calls for oil but it is omitted in this recipe)
- Add the wet ingredients to the dry and stir until just combined. Fill muffin tins 2/3 full. I use a 1/4 cup measuring cup to fill each muffin cup evenly. Sprinkle oats on top.
- Bake for 20 -22 minutes.
- Cool on a wire rack before serving.
