Yummy granola! I learned this recipe while working at a Bed and Breakfast in DC. All credit goes to "Little Miss Mary!" This recipe calls for 8 ounces of almonds but we recommend using any nuts you desire -- they are all delicious!

2 bananas, peeled and diced
1 ¼ cups dates, pitted and chopped
¼ cup packed brown sugar
¼ cup hot water
1 tablespoon vanilla extract
1 teaspoon ground cinnamon
8 cups quick cooking oats
8 ounces dried mixed fruit
8 ounces blanched slivered almonds

Steps:

  • Preheat oven to 250 degrees F (120 degrees C).
  • Puree the bananas and dates in a food processor. Add the brown sugar, hot water, vanilla and cinnamon; mix well.
  • Pour mixture into a large mixing bowl, add oatmeal and mix well.
  • Spread onto large baking sheets and bake at 250 degrees F (120 degrees C) for 1 to 1 1/2 hours stirring frequently. Cook longer for crunchier if desired. Once cooled add the dried fruits and nuts, as little or as much as you want, and mix.

1 cup brown sugar
1 cup flaked coconut
1 cup wheat germ
1 tablespoon ground cinnamon

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Mix oats, brown sugar, coconut, wheat germ, cinnamon, and nutmeg together in a large bowl. Stir water, oil, and vanilla extract into the oat mixture; spread onto a baking sheet.
  • Bake in preheated oven, stirring every 15 minutes, until golden brown and crunchy, about 1 hour; transfer to a bowl. Stir raisins and almonds through the granola.

This delicious healthy granola recipe is naturally sweetened with maple syrup (or honey). It's made with oats, coconut oil and your favorite nuts and fruit. Make it your own! Recipe yields about 8 cups granola, enough for about 16 half-cup servings.

4 cups old-fashioned rolled oats (use certified gluten-free oats for gluten-free granola)
1 1/2 cup raw nuts and/or seeds (I used 1 cup pecans and 1/2 cup pepitas)
1 teaspoon fine-grain sea salt (if you're using standard table salt, scale back to 3/4 teaspoon)
1/2 teaspoon ground cinnamon
1/2 cup melted coconut oil or olive oil
1/2 cup maple syrup or honey
1 teaspoon vanilla extract
2/3 cup dried fruit, chopped if large (I used dried cranberries)
Totally optional additional mix-ins: 1/2 cup chocolate chips or coconut flakes*

Steps:

  • Preheat oven to 350 degrees Fahrenheit and line a large, rimmed baking sheet with parchment paper.
  • In a large mixing bowl, combine the oats, nuts and/or seeds, salt and cinnamon. Stir to blend.
  • Pour in the oil, maple syrup and/or honey and vanilla. Mix well, until every oat and nut is lightly coated. Pour the granola onto your prepared pan and use a large spoon to spread it in an even layer.
  • Bake until lightly golden, about 21 to 24 minutes, stirring halfway (for extra-clumpy granola, press the stirred granola down with your spatula to create a more even layer). The granola will further crisp up as it cools.
  • Let the granola cool completely, undisturbed (at least 45 minutes). Top with the dried fruit (and optional chocolate chips, if using). Break the granola into pieces with your hands if you want to retain big chunks, or stir it around with a spoon if you don't want extra-clumpy granola.
  • Store the granola in an airtight container at room temperature for 1 to 2 weeks, or in a sealed freezer bag in the freezer for up to 3 months. The dried fruit can freeze solid, so let it warm to room temperature for 5 to 10 minutes before serving.

50 g blanched almonds
50 g pecan nuts
50 g unsalted pistachios, (shelled)
50 g dried apricots
50 g pumpkin seeds
50 g sunflower seeds
1 tablespoon sesame seeds
1 tablespoon flaxseeds
250 g porridge oats
1 teaspoon ground cinnamon
1 tablespoon desiccated coconut
50 g sultanas
50 g sour cherries
6 tablespoons maple syrup
1 orange

Steps:

  • Preheat the oven to 160ºC/325ºF/gas 3.
  • Roughly chop the nuts and apricots, then place into a large bowl. Add the remaining dry ingredients and mix together.
  • Drizzle over the maple syrup and finely grate over the orange zest, then stir well to coat everything.
  • Spread out over a large baking tray in an even layer - split it between two, if it's easier.
  • Pop into the hot oven for 20 to 25 minutes, or until turning golden, stirring every 10 minutes or so to stop it from catching. Bear in mind that the granola will harden up and go crunchy as it cools, so don't be tempted to cook it for too long.
  • Leave to cool completely, then tip into airtight storage jars and use as and when you need it - it will keep quite happily for up to 4 weeks.

1 cup shredded coconut
1 cup sliced almonds (or any other nut you prefer (pecans, walnuts, etc.))
3 tbsp honey (or real maple syrup)
1/4 cup brown sugar
1/4 cup coconut oil (or extra virgin olive oil)
1 tsp cinnamon
1 tsp salt
1 cup dried cranberries (or other dried fruit (raisins, apricots, cherries, etc.))

Steps:

  • Preheat oven to 350F.
  • Line a baking sheet with parchment paper or a silicone baking mat.
  • Combine the oats, shredded coconut, and almonds in a large bowl.
  • In a small bowl, combine the honey, brown sugar, oil, cinnamon, and salt.
  • Microwave on high heat for 30 seconds. Stir to combine.
  • Add honey mixture to the oat mixture and stir to combine. You may need to use your hands to evenly distribute.
  • Spread on prepared baking sheet and bake for 20 to 25 minutes or golden brown, stirring every 7 to 8 minutes.
  • Let the granola cool completely, stirring occasionally.
  • Stir in dried cranberries.
  • Store granola in an airtight container for up to 2 weeks

1/2 cup neutral oil or coconut oil
1/2 cup maple syrup
4 cups large flake oats
2 cups nuts and seeds
1.5 cups dried fruit
pinch salt
generous sprinkle of cinnamon

Steps:

  • Preheat oven to 325F.
  • In a small bowl, whisk together the oil and maple syrup.
  • In a large bowl, stir together the oats and nuts, salt, and cinnamon (leave the dried fruit out for now).
  • Pour the oil and maple syrup mixture over the dry ingredients and toss to thoroughly coat.
  • Spread granola onto a parchment-lined baking sheet. Spreading it thinly will result in a toastier taste, spreading it thickly will result in bigger clumps.
  • Bake at 325F for 20 mins or until nuts smell toasted.
  • Remove from oven and spread the dried fruit on top of granola and leave to cool.
  • Break into pieces.
  • Keep in an airtight container (I use a large Ziploc freezer bag).

1 cup slivered almonds
1 cup cashews
3/4 cup shredded sweet coconut
1/4 cup plus 2 tablespoons dark brown sugar

1/4 cup vegetable oil
3/4 teaspoon salt
1 cup raisins

Steps:

  • Preheat oven to 250 degrees F.
  • In a large bowl, combine the oats, nuts, coconut, and brown sugar.
  • In a separate bowl, combine maple syrup, oil, and salt. Combine both mixtures and pour onto 2 sheet pans. Cook for 1 hour and 15 minutes, stirring every 15 minutes to achieve an even color.
  • Remove from oven and transfer into a large bowl. Add raisins and mix until evenly distributed.

  • Toss the oats, coconut, and almonds together in a large bowl. Whisk together the oil and honey in a small bowl. Pour the liquids over the oat mixture and stir with a wooden spoon until all the oats and nuts are coated. Pour onto a 13 by 18 by 1-inch sheet pan. Bake, stirring occasionally with a spatula, until the mixture turns a nice, even, golden brown, about 45 minutes.
  • Remove the granola from the oven and allow to cool, stirring occasionally. Add the apricots, figs, cherries, cranberries, and cashews. Store the cooled granola in an airtight container.
