1 1/2 cups sugar
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 large eggs
1 (20 ounce) can crushed pineapple, with juice
1 cup brown sugar
1 cup pecans, chopped
1 cup evaporated milk
1/2 cup sugar
1/2 cup unsalted butter
1 teaspoon vanilla

Steps:

  • Preheat oven to 350º F and lightly grease a 9x13-inch baking dish with butter or non-stick spray.
  • In a large bowl, whisk together sugar, flour, baking soda and salt, then mix in eggs and pineapple.
  • Pour batter into your pan and top with an even layer of pecans and brown sugar.
  • Place baking dish in oven and bake for 40-45 minutes, or until toothpick inserted in center comes out clean.
  • While cake cooks, combine evaporated milk, sugar and butter in a medium saucepan over medium-high heat and bring to a boil.
  • Remove from heat and stir in vanilla extract, then pour over hot cake.
  • Let cake cool so it absorbs icing, then slice, serve and enjoy.

2 eggs
1 (20 ounce) can crushed pineapple with juice
2 cups all-purpose flour
1 cup white sugar
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon vanilla extract
½ cup packed light brown sugar
½ cup chopped walnuts
½ cup butter
½ cup white sugar
½ cup evaporated milk
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix the eggs, undrained crushed pineapple, flour, 1 cup of the white sugar, baking soda, salt, and 1 teaspoon of the vanilla together and stir until just combined. Pour batter into one ungreased 9x13 inch baking pan.
  • Combine the light brown sugar and the chopped nuts. Sprinkle over the top of the cake batter. Bake in preheated oven for 25 to 35 minutes or until cake tests done. Remove cake from oven and pour topping over hot cake.
  • To Make Topping: In a small saucepan combine the butter or margarine, the evaporated milk, the remaining 1/2 cup of the white sugar, and 1 teaspoon of the vanilla. Cook over medium low heat, stirring occasionally until sugar is dissolved. Mixture will be thin. Pour over hot cake.

250g / 8 oz of self rising flour (1 3/4 to 2 cups)
4 oz butter
3 oz caster sugar
1/2 tsp nutmeg
1/2 tsp cinnamon
1 egg, beaten
3 oz currants (1/2 to 2/3 cup)
1 Tbsp milk

Steps:

  • Rub the butter into the flour until the mixture looks like breadcrumbs. Add the sugar, spices and currants and mix well. Add the beaten egg and bring all the ingredients together, starting with a spoon, and then use your hands to knead everything together to form a dough. Sprinkle some flour on your worktop. Roll the dough out to a thickness of about 5 mm. Use a biscuit cutter or cup to cut into round shapes. Keep rolling and cutting until the dough is used up. Heat up a griddle or frying pan to medium heat. Cook 1 - 2 welsh cakes first to check the temperature. Then cook the remaining cakes until they are browned - usually just a few minutes on each side. Cool on a cooling tray and sprinkle with caster sugar.

3-1/2 cups all-purpose flour
1 cup sugar
1-1/2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda
1 cup cold butter, cubed
3/4 cup 2% milk
1 large egg, beaten
1-1/4 cups dried currants or raisins

Steps:

  • In a large bowl, whisk flour, sugar, baking powder, salt and baking soda. Cut in butter until mixture resembles coarse crumbs. Add milk and egg; stir just until moistened. Fold in currants., Pat or roll dough to 1/4-in. thickness; cut with a floured 2-in. biscuit cutter. Preheat griddle over medium heat. In batches, place cakes onto griddle; cook until tops puff and bottoms are golden brown, about 1-2 minutes. Turn; cook until second side is golden brown. Cool on wire racks.

This recipe was given to my grandmother many, many years ago by an old Welsh lady. They are a family favorite in all generations. They are different from the other recipes listed here as they do NOT have milk--eggs are the only liquid.

4 cups flour
1 cup margarine or 1 cup butter
1 cup sugar
4 eggs
1 cup raisins or 1 cup currants
4 teaspoons baking powder
1 teaspoon salt
1 teaspoon vanilla

Steps:

  • Beat margarine & sugar together.
  • Add eggs & beat till smooth.
  • Add dry ingredients & stir till just nicely mixed.
  • Roll out on floured surface to 1/4 to 1/2-inch thick.
  • Cut into rounds using a small glass or round cookie cutter (we've always used a small glass).
  • Cook in frying pan till nicely browned on one side; flip & brown the other side. (approx. 3-4 minute per side).
  • Remove to baking rack to cool.
  • Store in an airtight container or ziplock bag.

1 (16 ounce) package frozen unsweetened strawberries, thawed
1 (15.25 ounce) package white cake mix
1 (6 ounce) package strawberry-flavored gelatin mix
4 large eggs
½ cup vegetable oil
¼ cup water
1 (8 ounce) package cream cheese, softened
½ cup unsalted butter, softened
1 teaspoon vanilla extract
4 ¼ cups powdered sugar

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease two 9-inch round pans.
  • Muddle thawed strawberries in a bowl. Reserve 1/4 cup for frosting.
  • Mix white cake mix and gelatin mix together in a bowl. Add strawberries, eggs, oil, and water and beat until well combined. Divide batter evenly between the prepared cake pans.
  • Bake in the preheated oven until a toothpick inserted into the center of each layer comes out clean, 20 to 25 minutes. Cool on a wire rack for 5 minutes. Run a table knife around the edges to loosen. Invert carefully onto a serving plate or cooling rack. Let cool, about 30 minutes.
  • Beat cream cheese and butter together in a bowl; mix in reserved strawberries and vanilla extract. Beat in powdered sugar until combined.
  • Sandwich cake layers with frosting; spread remaining frosting over the top and sides.
