I won grand champion honors in a potato festival baking contest with this moist chocolate cake. The icing recipe can be doubled for real sweet tooths. A great-grandma, I've spent over 85 years on the farm.

1 cup butter, softened
2 cups sugar
2 large eggs, room temperature
1 cup cold mashed potatoes (without added milk and butter)
1 teaspoon vanilla extract
2 cups all-purpose flour
1/2 cup baking cocoa
1 teaspoon baking soda
1 cup whole milk
1 cup chopped walnuts or pecans
CARAMEL ICING:
1/2 cup butter, cubed
1 cup packed brown sugar
1/4 cup evaporated milk
2 cups confectioners' sugar
1/2 teaspoon vanilla extract

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Add 1 egg at a time, beating well after each addition. Add potatoes and vanilla. Combine the flour, cocoa and baking soda; gradually add to creamed mixture alternately with milk, beating well after each addition. Stir in nuts. , Pour into 2 greased and floured 9-in. round baking pans. Bake at 350° until a toothpick inserted in the center comes out clean, 25-30 minutes. Cool for 10 minutes before removing from pans to wire racks to cool completely., For icing, in a saucepan over low heat, cook butter and brown sugar until butter is melted and mixture is smooth. Stir in evaporated milk; bring to a boil, stirring constantly. Remove from the heat; cool to room temperature. Stir in confectioners' sugar and vanilla until smooth. Spread between layers and over top of cake.

Number Of Ingredients 16

Cold potato puree - 1/2 cup [see preparation in steps]
Whole wheat flour 1 1/2 cups
Baking powder 1 1/2 tsps
Baking Soda - 1/2 tsp
Cocoa powder - 3 tbsp
Custard powder - 1 tsp
Milk (Divided) - 1 cup and 1 tbsp
Honey - 1 tbsp
Powdered sugar (Divided) - 1/2 cup and 2 tbsp
Cooking oil - 1/3 cup
Vanilla essence - 1 tsp
Substitute for 1 egg : [to be mixed just before adding]*
1 1/2 tsp cornflour
A pinch of baking soda
A pinch of baking powder
2 tbsp water

Steps:

  • Potato puree preparation - Pressure cook 1 large potato upto 4-5 whistles. Allow to cool completely. Peel and mash it roughly. Pulse it in an electric mixer to get rid of any lumps. Refrigerate the sticky potato puree. Use 1/2 cup of this.
  • Preheat oven at 180 degrees centigrade for 10 minutes.
  • Sieve the flour, baking powder, baking soda, cocoa powder and custard powder together 5-6 times. This helps to aerate the mixture and combine the ingredients uniformly.
  • In a large bowl beat the oil and sugar together.
  • Add the honey, egg substitute and vanilla essence. Mix well.
  • Stir in the potato puree. Add the milk and beat/whisk well for 5 minutes.
  • Fold in the sifted flour until no lumps remain. Spoon the batter into a greased and lined baking dish. [8 inch round tin]
  • Smoothen the top with a spatula.
  • Bake in the pre heated oven at 180 degrees for 30-35 minutes or until skewer inserted comes out clean.
  • Invert over a wire rack after 10 minutes.
  • Allow to cool completely before slicing.

3/4 cup self-rising flour
1/2 teaspoon salt
2 ounces dark chocolate
4 ounces butter
3/4 cup fine sugar
3 ounces cooked mashed potatoes (Yes, really. Trust me.)
2 eggs, beaten
4 tablespoons milk
4 ounces dark chocolate
4 fluid ounces heavy cream
1/4 cup powdered sugar (or a little more)
3 tablespoons irish cream

Steps:

  • Preheat oven to 375°F
  • Grease and line 8-inch cake tins.
  • Sift flour and salt into a mixing bowl. Melt chocolate in a bowl placed over a saucepan of hot water.
  • In a separate bowl, cream butter and sugar together until fluffy, then beat in the chocolate and mashed potato.
  • Gradually beat in the egg, adding a little flour with each addition.
  • Fold in the rest of the flour and stir in the milk.
  • Divide mixture between cake tins and bake for 25 to 30 minutes or until top is firm but springy to the touch.
  • Remove from oven and after a few minutes, turn out on a cooling rack.
  • While the cake is cooling, make the icing. Melt the chocolate as before, stir in the other ingredients and mix well.
  • Use the icing to sandwich the cake layers together and coat the top and sides of the cake.
  • HINT: What makes this rich chocolate cake "Irish" is not only to the creamy liqueur used in the filling, but also a particularly "Irish" ingredient in the cake mixture itself, which makes it extremely moist. 3/4 cup butter, softened
1-1/2 cups sugar, divided
4 large eggs, room temperature, separated
1 cup hot mashed potatoes (without milk or butter)
1-1/2 cups all-purpose flour
1/2 cup baking cocoa
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1 cup milk
1 teaspoon vanilla extract
1 cup chopped nuts
FLUFFY WHITE FROSTING:
1-1/2 cups sugar
2 large egg whites
1/3 cup water
2 teaspoons light corn syrup
1/8 teaspoon salt
1 teaspoon vanilla extract

Steps:

  • In a large bowl, cream butter and 1 cup sugar. Add egg yolks; beat well. Add potatoes and mix thoroughly. Combine the flour, cocoa, baking powder, cinnamon, salt, nutmeg and cloves; add to creamed mixture alternately with milk, beating just until combined. Stir in vanilla and nuts., In a small bowl, beat egg whites until foamy. Gradually add remaining sugar; beat until stiff peaks form. Fold into batter. Pour into a greased and floured 13-in. x 9-in. baking pan. Bake at 350° for 40-45 minutes or until a toothpick comes out clean. Cool on a wire rack., In a small heavy saucepan, combine the sugar, egg whites, water, corn syrup and salt. Beat on low speed for 1 minute. Place pan over low heat; continue beating on low until a thermometer reads 160°., Transfer to a bowl. Add vanilla; beat on high until stiff glossy peaks form, about 7 minutes. Frost cake.

1 c butter
2 c sugar
3 c flour
1/2 c milk
4 Tbsp cocoa powder
1 tsp cinnamon
1 tsp clove, ground
1/4 tsp nutmeg
1 c plain cooked mashed potatos
1 c pecan chopped
4 eggs

Steps:

  • 1. Boil your potatos and mash. Sift all of the dry ingredients. Melt butter. Now mix all ingredients together mixing with a wooden spoon. I lightly beat the eggs before adding. Also make sure their are no big lumps in the potatoes. Mix very well. Pour batter into a greased & floured bundt pan.
  • 2. Bake in a pre-heated oven at 350 for 1 hour. Checking to see if inserted toothpick comes out clean. DO NOT OVER COOK.
  • 3. This recipe does not call for and icing, however if you like you can add one. We have always eaten without one. I hope you will enjoy this cake.

6 ounces self-raising flour
1/2 teaspoon salt
2 ounces dark chocolate
4 ounces butter
6 ounces powdered sugar
3 ounces cooked mashed potatoes
2 eggs, beaten
4 tablespoons milk
4 ounces dark chocolate
4 fluid ounces double cream
2 ounces icing sugar
3 tablespoons irish cream

Steps:

  • Preheat oven to 375°F (gas mark 5), and grease and line two 8" cake pans.
  • Sift flour and salt into a mixing bowl.
  • Melt chocolate in a bowl placed over a saucepan of hot water.
  • In a separate bowl, cream butter and sugar together until fluffy, then beat in the chocolate and mashed potato.
  • Gradually beat in the eggs, adding a little flour with each addition.
  • Fold in the rest of the flour and stir in the milk.
  • Divide mixture evenly between the cake pans and bake for 25-30 minutes or until top is firm but springy to the touch.
  • Remove from oven and after a few minutes, turn out on a cooling rack.
  • While the cake is cooling, melt the chocolate for the filling as before.
  • Stir in the other ingredients and mix well.
  • Use the filling to sandwich the sponge layers together and coat the top and sides of the cake.
