HOMEMADE VEGETABLE BEEF SOUP
My mom made this soup when I was young. I have always loved her soups. When I was able to start cooking by myself I fell in love and have added and taken items away, but my fiance love my soups. And he isn't even big on soups. I hope your family enjoys the soup as much as mine does.

- Mix beef broth and beef stew meat in a large pot over medium heat. Bring broth to a simmer, reduce heat to low, and cook beef at a simmer until tender, about 45 minutes.
- Stir corn, green beans, tomato sauce, and tomato paste with the beef. Pour tomato-vegetable juice cocktail into the pot; season with garlic powder, onion powder, salt, and pepper. Bring the mixture to a boil, reduce heat to low, and cook for 5 hours.

GRANNY'S OKRA SOUP
A delicious beef and vegetable soup that is a variation on the okra and tomato-based soup my great-grandmother used to make on the farm in Alabama. It's great with fresh or canned veggies, works with just about any alterations - I use fresh, locally-grown ingredients and it's always amazing. All ingredient measurements are approximate. The important thing about Granny's okra soup is that the tomato is the main ingredient, but okra, lima beans and potatoes are important too. Adding or subtracting other vegetables to taste or based on availability is perfectly acceptable.

- Combine tomatoes, lima beans, okra, potatoes, corn, green beans, carrots, and tomato paste in a large soup pot. Pour chicken stock over mixture and bring to a boil over medium heat. Reduce heat and simmer until vegetables begin to soften, about 15 minutes.
- Season ground beef with garlic powder, celery salt, and onion powder. Set aside.
- Heat butter in a skillet over medium-high heat. Add onion and garlic when butter stops bubbling; cook and stir for 1 minute. Spread ground beef evenly in the pan. Cook until it has a nice brown sear, stirring minimally to end up with mostly medium-sized chunks, 5 to 7 minutes. Drain skillet and add beef, onions, and garlic to the soup pot.
- Bring soup mixture to a boil; reduce heat to simmer, cover, and cook until vegetables and beef have cooked down, 1 to 2 hours.

HOMEMADE VEGETABLE BEEF SOUP
Favorite to keep the 'home-fires burning" though the years! Funny thing was we always started out with a LOT of beef in the pot, but after all 6 of the kids (and Momma) made their pass by to lift the lid, stir a little, taste a little, it always was short on meat when done! Oh well...

- Cube the fresh roast into small cubes and brown in a large iron dutch skillet with cooking oil. Add the vinegar and sugar to brown the meat a deeper brown. Add the fresh vegetables and saute for about 5 minutes, mixing well.
- Add the canned ingredients to a very large crockpot, with a can of water for each can that was opened and set the unit on high. Add the browned beef mixture to the crockpot, careful to get all of the drippings out of the skillet. I usually add a little water to render the rest up from the skillet, this really add to the flavor and color of the soup.
- Cook on low for one hour to begin to tenderize the beef. At the beginning of the second hour, add the red potatoes and the carrots and cook an hour. At the beginning of the third hour, put your frozen vegetables and turnips and begin your seasonings.
- On the fourth and last hour, add your lemon juice, squashes and kale. These do not have to cook long so add them last or they will cook away to nothing! Enjoy with some hot buttered cornbread and you are good to go! =)

- Season the beef as desired.
- Heat the oil in a 4-quart saucepan over medium-high heat. Add the beef and cook until browned, stirring often.

VEGETABLE BEEF SOUP RECIPE
Feeling the cold in your bones? Then you have to try this Old Fashioned Vegetable Beef Soup to warm your heart. This is one of those clean-your-fridge recipes that is packed with all kinds of veggies and tender chunks of beef cooked in a rich broth. Ready in less than an hour and freezes perfectly.

- For the beef: Using paper towels, pat-dry the stew meat. Salt and pepper in all sides and set aside. Heat one tablespoon of olive oil in a large heavy bottom pot in medium-high heat. Once it is sizzling hot, add in half of the seasoned beef and cook for 3 minutes on each side. (The beef will not fully be cooked)Transfer to a plate. Repeat the same steps with the rest of the olive oil and meat. Transfer the second batch to the plate and cover it with aluminum foil. Do not wash the pot.
- To make the soup: Heat olive oil in the now-empty pan in medium-high heat. Add in onion, carrots, and celery. Using a wooden spoon, cook the vegetables, scraping the bits and pieces of meat at the bottom of the pan, until they are translucent, 8-10 minutes.
- Stir in the garlic and cook for 30 seconds.
- Add in the tomatoes, potatoes, thyme, and bay leaf. Give it a stir.
- Transfer the semi-cooked beef into the pot. Pour the stock and water over everything, sprinkle it with salt and pepper, and give it a stir.
- Turn down the heat to medium, put the lid on, bring it to a boil and then let it simmer for 15 minutes.
- Add in the green beans and frozen peas and cook until green beans are cooked, but still firm, for 10-15 minutes more. Fish out the bay leaf.
- When ready to serve, ladle into bowls and garnish with fresh parsley.

GRANNY'S HOMEMADE VEGETABLE BEEF SOUP WITH HOT WATER CORNBREAD

- In a 10 quart pot, pour the V-8 juice, tomato juice, tomato paste, boullion cubes, soy sauce and water. Adjust the water so the soup is not thin and watery. You may need more or you may need less. Bring to a boil and reduce heat to a simmer. Add the beef, onions and celery. Let them simmer until they are almost done about 1 hour on low heat. Stir occassionaly to be sure the liquids do not evaporate and leave a consentrated soup. Add the vegetables and potatoes at this point and continue to simmer until all are tender and done. Salt and pepper to taste, but remember the boullion cubes and soy sauce has a salt content so taste before adding additional salt. I find that some hot water cornbread goes very well with this soup. Fall and Winter can be easily tamed with this soup in your tummy. Hot Water Cornbread Mix all the dry ingredients in a large mixing bowl blending them tgether by stirring. Make a well in the center and add the eggs. mix slightly until mixter is lumpy. Add hot water a little at a time until you get a mixter the consistency of cake batter. Heat a cast iron skillet or griddle to cook the cornbread. You can spray it with a non-stick spray, but only the oil kind. NO buttery or baking powder sprays. Ladle the mixture onto the skillet or griddle about a good serving spoon size for each cake. when it starts to bubble on the top, flip it over, cook until done and place it on a serving plate. Repeat until all the batter is cooked. This should yield about 12 to 15 nice size cakes. If you want smaller cakes just ladle on a smaller amount. Serve with the soup while hot and enjoy.
