EASY OLD FASHIONED HERMIT COOKIES



Easy Old Fashioned Hermit Cookies image

Truly the best and most soft Hermit cookies recipe. These were Grandma's most favourite cookies - a New England classic with warm spices, nuts and dried fruit. A true old fashioned classic.

1/2 cup butter (room temperature)
1 cup brown sugar (packed)
2 large eggs
1/2 tsp vanilla extract
1 3/4 cups all purpose flour
1 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1/8 tsp allspice
1/8 tsp nutmeg
1 cup raisins
1 cup chopped dates
1 cup coarsely chopped walnuts or pecans

Steps:

  • Preheat oven to 350 F.
  • In a standing mixer on medium speed, cream together butter and brown sugar. Add eggs and beat until mixture is pale and thick - about 2 minutes. Beat in vanilla.
  • Reduce mixer speed to low and beat in flour, baking soda, salt, cinnamon, allspice and nutmeg. Incorporate raisins, dates and nuts (depending on your mixer, you may have to do this part by hand with a wooden spoon).
  • Drop cookies by tablespoonfuls onto a well-greased or parchment-lined baking sheet, about 2 inches apart (you will have to do batches). Bake 10-12 minutes, until edges are set but centres still appear moist. Cool on baking sheet 2 minutes, then transfer to wire racks to cool completely.

1/2 cup butter, softened
1/2 cup shortening
2 eggs
1 cup buttermilk
2 1/2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon clove
1 cup raisins
1 cup nuts, chopped
granulated sugar

Steps:

  • Preheat oven to 375 degrees F.
  • In a small bowl, combine flour, baking soda, baking powder, cinnamon, nutmeg, and cloves.
  • In a large bowl, cream butter and shortening with brown sugar.
  • Add eggs; mix well.
  • Add dry ingredients alternating with buttermilk; mix well.
  • Stir in raisins and nuts.
  • Drop by teaspoonfuls onto baking sheet.
  • Sprinkle with granulated sugar.
  • Bake for 15 minutes or until golden in color.
  • Cool on wire rack.

1 1/3 cups sifted flour
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 cup shortening
1 cup sugar
1 egg, well beaten
3 ounces unsweetened chocolate, melted
1 teaspoon vanilla
1/3 cup milk
1 cup chopped raisins
1 cup chopped nuts

Steps:

  • Sift together flour,baking powder,salt and cinnamon.
  • Cream shortening,add sugar gradually,cream until fluffy.
  • Add egg to creamed mixture with chocolate,blend well.
  • Add vanilla and milk.
  • Stir in dry ingredients,rasins and nuts.
  • Mix well.
  • Chill 30 minutes.
  • Drop by teaspoonfuls about 2 inches apart onto greased baking sheet.
  • Bake at 350 degrees for 15 minutes.
  • Remove cookies and cool on wire rack.

2 cups flour
2 teaspoons baking soda
1-1/2 teaspoons cinnamon
1-1/2 teaspoons ground ginger
1/2 teaspoon nutmeg
1/2 teaspoon cloves
1/2 teaspoon kosher salt
1/2 cup butter
1/2 cup brown sugar
1/4 cup molasses
1 large egg
2/3 cup raisins
1 cup confectioner's sugar
6 teaspoons milk

Steps:

  • In medium bowl, whisk together flour, baking soda, spices and salt. Set aside.
  • Cream butter and brown sugar together with hand mixer until light and fluffy, app. 3-4 minutes.
  • Add molasses and egg, and beat together to combine well with butter-sugar mixture.
  • Add flour and spices just until combined.
  • Add raisins and stir in just until evenly distributed.
  • Chill dough for 30 minutes.
  • Shape dough into ball and cut in half. Shape each half into a log about 12 inches long, and press down lightly, forming the ends into a square shape, onto a baking sheet covered with parchment paper. Be sure there is about 3 inches between each log -- the dough will spread in the oven and you want the logs to remain distinct and separate.
  • Bake approximately 15 minutes, until done all the way through and edges are slightly crisp.
  • Remove from oven and COOL COMPLETELY before icing step.
  • Combine confectioner's sugar and milk until icing is smooth and slightly runny. Drizzle across tops of logs. Let icing set before cutting the logs into individual hermits.

1/2 cup cold coffee
2 eggs
3 1/2 cups Gold Medal™ all-purpose flour
1 teaspoon baking soda
1 teaspoon ground nutmeg
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 1/2 cups raisins
1 cup chopped nuts

Steps:

  • Heat oven to 375°F.
  • Mix brown sugar, shortening, butter, coffee and eggs in large bowl. Stir in flour, baking soda, nutmeg, cinnamon and salt. Stir in raisins and nuts.
  • Drop dough by rounded teaspoonfuls about 2 inches apart onto ungreased cookie sheet.
  • Bake 8 to 10 minutes or until almost no indentation remains when touched in center. Cool slightly; remove from cookie sheet. Cool on wire rack.

Number Of Ingredients 10

¾ cup margarine
1 cup white sugar
1 egg
¼ cup molasses
2 cups all-purpose flour
1 tablespoon ground ginger
1 teaspoon ground cinnamon
2 teaspoons baking soda
½ teaspoon salt
½ cup white sugar for decoration

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, cream together the margarine and 1 cup white sugar until smooth. Beat in the egg and molasses until well blended. Combine the flour, ginger, cinnamon, baking soda and salt; stir into the molasses mixture to form a dough. Roll dough into 1 inch balls and roll the balls in the remaining sugar. Place cookies 2 inches apart onto ungreased cookie sheets.
  • Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

3 eggs, well beaten
3 tablespoons hot water
3 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon nutmeg
1/4 teaspoon ground cloves
3/4 cup nuts
1 cup raisins

Steps:

  • Cream butter and sugars, add molasses then hot water. Sift together flour, soda, cinnamon, nutmeg, and cloves. Add flour mixture and beaten eggs, then add vanilla. Beat well and add floured nuts and raisins Drop from teaspoon onto greased pan and bake at 350 degrees until light brown.

  • In a medium sized bowl, combine the flour, baking soda, cinnamon, and allspice. In a large bowl, with an electric mixer on medium, cream the sugar and butter until light yellow and fluffy. Add the molasses, egg whites, and egg; beat well.
  • Using a wooden spoon, stir in flour mixture until flour disappears. Fold in raisins and nuts.
  • Drop by tablespoons, 2 inches apart, onto lightly greased cookie sheets. Bake 8-9 minutes. Lightly sift confectioners' sugar over if you like.
