EASY OLD FASHIONED HERMIT COOKIES
Truly the best and most soft Hermit cookies recipe. These were Grandma's most favourite cookies - a New England classic with warm spices, nuts and dried fruit. A true old fashioned classic.

Steps:
- Preheat oven to 350 F.
- In a standing mixer on medium speed, cream together butter and brown sugar. Add eggs and beat until mixture is pale and thick - about 2 minutes. Beat in vanilla.
- Reduce mixer speed to low and beat in flour, baking soda, salt, cinnamon, allspice and nutmeg. Incorporate raisins, dates and nuts (depending on your mixer, you may have to do this part by hand with a wooden spoon).
- Drop cookies by tablespoonfuls onto a well-greased or parchment-lined baking sheet, about 2 inches apart (you will have to do batches). Bake 10-12 minutes, until edges are set but centres still appear moist. Cool on baking sheet 2 minutes, then transfer to wire racks to cool completely.

- In a small bowl, combine flour, baking soda, baking powder, cinnamon, nutmeg, and cloves.
- In a large bowl, cream butter and shortening with brown sugar.
- Add eggs; mix well.
- Add dry ingredients alternating with buttermilk; mix well.
- Stir in raisins and nuts.
- Drop by teaspoonfuls onto baking sheet.
- Sprinkle with granulated sugar.
- Bake for 15 minutes or until golden in color.
- Cool on wire rack.

Steps:
- Sift together flour,baking powder,salt and cinnamon.
- Cream shortening,add sugar gradually,cream until fluffy.
- Add egg to creamed mixture with chocolate,blend well.
- Add vanilla and milk.
- Stir in dry ingredients,rasins and nuts.
- Mix well.
- Chill 30 minutes.
- Drop by teaspoonfuls about 2 inches apart onto greased baking sheet.
- Bake at 350 degrees for 15 minutes.
- Remove cookies and cool on wire rack.

HERMITS
Steps:
- In medium bowl, whisk together flour, baking soda, spices and salt. Set aside.
- Cream butter and brown sugar together with hand mixer until light and fluffy, app. 3-4 minutes.
- Add molasses and egg, and beat together to combine well with butter-sugar mixture.
- Add flour and spices just until combined.
- Add raisins and stir in just until evenly distributed.
- Chill dough for 30 minutes.
- Shape dough into ball and cut in half. Shape each half into a log about 12 inches long, and press down lightly, forming the ends into a square shape, onto a baking sheet covered with parchment paper. Be sure there is about 3 inches between each log -- the dough will spread in the oven and you want the logs to remain distinct and separate.
- Bake approximately 15 minutes, until done all the way through and edges are slightly crisp.
- Remove from oven and COOL COMPLETELY before icing step.
- Combine confectioner's sugar and milk until icing is smooth and slightly runny. Drizzle across tops of logs. Let icing set before cutting the logs into individual hermits.

This was my mother-in-law's recipe and my husband's favorite. Shorten or lengthen the cooking time for a softer or crisper cookie.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl, cream together the margarine and 1 cup white sugar until smooth. Beat in the egg and molasses until well blended. Combine the flour, ginger, cinnamon, baking soda and salt; stir into the molasses mixture to form a dough. Roll dough into 1 inch balls and roll the balls in the remaining sugar. Place cookies 2 inches apart onto ungreased cookie sheets.
- Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

- In a medium sized bowl, combine the flour, baking soda, cinnamon, and allspice. In a large bowl, with an electric mixer on medium, cream the sugar and butter until light yellow and fluffy. Add the molasses, egg whites, and egg; beat well.
- Using a wooden spoon, stir in flour mixture until flour disappears. Fold in raisins and nuts.
- Drop by tablespoons, 2 inches apart, onto lightly greased cookie sheets. Bake 8-9 minutes. Lightly sift confectioners' sugar over if you like.
