GRANNY'S STRAWBERRY PRESERVES-FILLED COOKIES
Lightly spiced, soft cookies with a strawberry jam filling. Mmmmm! These are my favorite of the cookies mom makes every Christmas.

Steps:
- Beat shortening, white sugar, and brown sugar in a bowl using an electric mixer until creamy and smooth.
- Mix milk and vinegar together and let stand 5 minutes to make 'sour milk'. Stir sour milk, eggs, and vanilla extract into shortening mixture.
- Sift flour, baking powder, baking soda, salt, and nutmeg together in a large bowl. Mix flour mixture into shortening mixture until incorporated. Refrigerate until fully chilled, 2 hours to overnight.
- Preheat oven to 350 degrees F (175 degrees C).
- Roll dough to a 1/8-inch thickness on a floured surface; cut into 2-inch rounds using a cookie cutter. Spoon 1 teaspoon preserves into the center of half the cookies; cover with remaining cookies. Lightly press edges of cookies together using a fork. Cut criss-cross slits into the top of each cookie using a knife. Arrange cookies on an ungreased baking sheet.
- Bake in the preheated oven until cookies are golden, 13 to 15 minutes.

GRANNY'S DATE-FILLED DROPPED COOKIES

Steps:
- 1. Bring dates, water, and sugar to a boil. Reduce heat to low and simmer, stirring frequently, until dates are thickened, about 5 to 7 minutes. Set aside to cool (can be prepared the day before, if needed).
- 2. Cream butter and sugar with your mixer. Add in the egg, water and vanilla.
- 3. Stir together the flour, baking soda and salt. Gently blend the dry ingredients to the butter mixture.
- 4. Preheat oven to 350°F. Lightly grease your cookie sheet or use a silicone baking mat.
- 5. Drop cookie dough by teaspoonfuls onto a lightly greased cookie sheet or use a silicon mat. Place about 1/2 teaspoon of date mixture on the top of each cookie, then a small dab of cookie dough on top of the date mixture.
- 6. Bake at 350° for 10 to 12 minutes. Cool 5 minutes on cookie sheet before moving to a cooling rack.
GRANDMA'S RAISIN FILLED COOKIES
My Grandmother always had these on hand whenever we would come to visit. We always gobbled them up. I never truly appreciated them tho, until I finally was given the recipe and realized the TIME that went into them. I recommend making the filling one day and the cookies the next.. just saves you that much time. I also like to just underbake a hair... I'll probably be strung and hung for sharing her recipe..:)

Steps:
- Raisin Mixture: Soak raisins in hot water.
- When plumb and soft, drain water and grind.
- Put in saucepan and add sugar, salt, and water.
- Mix the flour with just enough water to make smooth paste, then add to raisin mixture.
- Let come to boil, then set off to cool.
- Cookie: In large mixing bowl, cream together butter& sugar.
- Beat in eggs.
- Add milk and vanilla.
- Mix until well blended.
- Combine dry ingredients together and add to butter mixture.
- Roll out onto flour surface to about 1/4 inch thickness.
- Cut with round cutter.
- Lay on cookie sheet, and add 1 Tablespoon (about) ground raisin mixture to each cookie.
- Top with another round cookie, pinch sides together.
- Bake@ 350 8-10 minutes or until just starting to brown.
GRANNY'S FILLED COOKIES
My granny always made these around Christmas. They are the easiest, best tasting cookies around. Be warned, they are addictive.

Steps:
- Mix cream cheese and butter well in large bowl until well blended and creamy.
- Add in flour slowly, beating well after each addition. Roll dough into 1-inch balls and wrap well in cellophane. Store in fridge overnight.
- Preheat oven to 350 degrees F (180 degrees C).
- Roll out dough balls flat and place a 1/2 teaspoon full of the jam in the center. Fold sides over and place on ungreased cookie sheet.
- Bake for 13-15 minutes until brown and the jam starts to bubble hard. Cool for 3 minutes and place on cooling rack. Sprinkle with powdered sugar if desired.
