4 lbs granny smith apples, peeled, cored, and sliced
1 tablespoon fresh squeezed lemon juice
1/4 cup flour
2 teaspoons ground cinnamon
1 1/2 cups sugar
2 tablespoons unsalted butter, chilled and cut into small pieces
2 cups all-purpose flour
3 tablespoons sugar
1 tablespoon baking powder
5 tablespoons shortening
3/4 cup milk

Steps:

  • Preheat oven to 400°; butter a deep 9 x 13 inch baking dish.
  • Place the sliced apples in a large bowl and sprinkle them with lemon juice.
  • Mix the flour, cinnamon, and sugar together in a separate bowl.
  • Sprinkle the cinnamon mixture over the apples and toss gently to coat.
  • The dough: In a bowl, mix the flour, sugar, and baking powder; cut in the shortening using a pastry blender until the mixture becomes crumbly.
  • Add the milk and stir with a fork.
  • Form the dough into a ball and turn out onto a lightly floured surface.
  • Roll the dough out to a size that is 1/2 to 1 inch larger than your baking pan.
  • Pour the apple mixture into the prepared dish and dot with the pieces of butter.
  • Place the dough over the top of the apple filling and seal the edges.
  • Cut vents in the top of the crust to allow steam to escape while baking.
  • Bake for 10 minutes; decrease oven temperature to 375° and bake for another 30-40 minutes, or until the crust is lightly browned on the top and the apples are tender.

½ cup white sugar
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
1 cup brown sugar
1 cup all-purpose flour
1 cup quick-cooking oats
½ cup unsalted butter, diced
1 teaspoon ground cinnamon

Steps:

  • Preheat the oven to 300 degrees F (150 degrees C). Grease a 9x13-inch baking dish.
  • Combine apples, sugar, cinnamon, and nutmeg for filling in a bowl; transfer to the prepared baking dish.
  • Combine brown sugar, flour, oats, butter, and cinnamon for topping in a large bowl. Sprinkle on top of filling.
  • Bake in the preheated oven until golden and bubbly, about 1 hour.

This super-easy cobbler is great for unexpected company or spur-of-the-moment cravings. The juice from the fruit cooks out to produce enough moisture to make this cobbler delicious. You can also use fresh peaches instead of apples.

1 cup self-rising flour
1 cup white sugar
½ cup butter, softened
½ teaspoon ground cinnamon
4 Granny Smith apples, cored and sliced

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x9-inch baking dish.
  • Mix flour, sugar, butter, and cinnamon together in a bowl using a pastry blender or fork until crumbly; reserve 3/4 cup flour mixture to use as topping.
  • Sprinkle a light layer of flour mix into the prepared baking dish; top with a layer of apples. Continue alternating layers of flour mixture with apples and ending with apples. Sprinkle top apple layer with the reserved 3/4 cup flour mixture.
  • Bake in the preheated oven until apples are tender and topping is lightly browned, 30 to 35 minutes. Allow cobbler to cool for 10 minutes before serving.

  • Preheat the oven to 350°. In a large bowl, toss the apples with the lemon juice and granulated sugar. In a very large skillet, melt the 2 tablespoons of butter. Add the apples and cook over moderate heat, stirring occasionally, until softened but not browned, about 5 minutes. Scrape the apples into a large baking dish.
  • Wipe out the bowl. Add the flour, brown sugar, oats, cinnamon, salt, cardamom and the 1 stick of diced butter and, using your fingers, rub the butter into the dry ingredients until the mixture resembles coarse meal. Press the topping into clumps and scatter it over the apples.
  • Bake the crisp for 45 to 50 minutes, until the apples are bubbling and the topping is golden. Let cool, then serve warm with crème fraîche or ice cream.
