¼ cup vegetable oil
4 (4 ounce) cube steaks
½ teaspoon salt, or to taste
¼ teaspoon ground black pepper, or to taste
½ cup all-purpose flour
1 green bell pepper, seeded and chopped
1 medium onion, chopped
1 stalk celery, chopped
1 (6 ounce) can mushroom stems and pieces, undrained
1 (1 ounce) envelope dry onion soup mix
½ teaspoon dried oregano
salt and pepper to taste
1 ½ cups tomato juice
1 cup ketchup

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Heat oil in a large skillet over medium-high heat. Dredge the cube steaks in a mixture of flour, salt and pepper, and brown them in the hot oil.
  • Arrange steaks in a 9x13 inch baking dish. Sprinkle the green pepper, onion, celery, mushrooms, oregano, and onion soup mix over the steaks. Stir together the tomato juice and ketchup; pour over everything in the dish.
  • Bake for about 1 hour in the preheated oven, or until the meat is cooked through, and the sauce is thickened.

2 pounds beef bottom round, trimmed of excess fat
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3/4 cup all-purpose flour
1/4 cup vegetable oil or bacon drippings
1 large onion, thinly sliced
2 cloves garlic, minced
2 stalks celery, chopped
1 tablespoon tomato paste
1 (14.5-ounce) can diced tomatoes
1 teaspoon smoked paprika
1 teaspoon dried oregano
1 tablespoon Worcestershire sauce
1 1/2 cups beef broth

Steps:

  • Preheat the oven to 325 degrees F.
  • Cut the meat with the grain into 1/2-inch thick slices and season on both sides with the salt and pepper. Place the flour into a pie pan. Dredge the pieces of meat on both sides in the flour mixture. Tenderize the meat using a needling device, until each slice is 1/4-inch thick. Dredge the slices on both sides once more and set aside.
  • Add enough of the bacon drippings or vegetable oil to just cover the bottom of a 4 to 5-quart Dutch oven set over medium-high heat. Once the oil begins to shimmer, add the steaks to the pan, being careful not to overcrowd. Cook until golden brown on both sides, approximately 2 minutes per side. Remove the steaks to a plate and repeat until all of the steaks have been browned.
  • Remove the last steaks from the pot and add the onions, garlic, and celery. Saute for 1 to 2 minutes. Add the tomato paste and stir to combine. Next add the tomatoes, paprika, oregano, Worcestershire sauce and beef broth and stir to combine. Return the meat to the pot, submerging it in the liquid. Cover the pot and place it in the oven on the middle rack. Cook for 1 1/2 to 2 hours or until the meat is tender and falling apart.

¼ cup all-purpose flour
½ teaspoon salt
¼ teaspoon ground black pepper
2 pounds beef round steak, cut 1-inch thick
2 tablespoons vegetable oil
¼ cup water, or as needed
1 (14.5 ounce) can diced tomatoes
½ cup minced green bell pepper
1 teaspoon onion powder
½ teaspoon salt
⅛ teaspoon ground black pepper

Steps:

  • Stir flour, 1/2 teaspoon salt, and 1/4 teaspoon black pepper together in a bowl. Sprinkle pieces of steak with flour mixture and pound the flour mixture into the meat with a meat mallet or the edge of a sturdy plate.
  • Heat vegetable oil in a large skillet over medium heat; cook the floured beef in the hot oil until browned on both sides, about 15 minutes. Reduce heat to low, pour in water, cover skillet, and simmer beef until tender, about 1 hour. Add more water to the skillet if needed to prevent burning.
  • Mix diced tomatoes, green bell pepper, onion powder, 1/2 teaspoon salt, and 1/8 teaspoon black pepper in a bowl. Pour tomato mixture over beef, bring to a simmer, and cook until sauce has thickened, about 30 more minutes.

Steps:

  • In a large plastic bag, combine 1/2 cup flour, 1 teaspoon salt, 1/2 teaspoon pepper and garlic salt. Add beef, a few pieces at a time, and shake to coat. Remove meat from bag and pound with a mallet to tenderize. , In a Dutch oven, brown meat in oil until no longer pink. Add the green pepper, celery and onions; cook and stir for 10 minutes. Add garlic; cook 1 minute longer. Stir in the tomatoes, broth, soy sauce and remaining salt and pepper. Cover and bake at 325° for 2 hours. , Remove from the oven and return to stovetop. I found this recipe online years ago and it was an instant hit with my family. It is especially comforting on a cold winter day.

2 lbs cube steaks
salt and pepper, to taste
1 cup all-purpose flour
1/2 cup vegetable oil
1 cup diced onion
3 cups beef stock or 3 cups bouillon
1 tablespoon Worcestershire sauce

Steps:

  • Cut each steak into the desired serving size, if necessary. Salt and pepper each steak lightly and dredge in flour. Shake off excess. Set aside.
  • If you don't have a skillet with ovenproof handles, you can use a Pyrex dish or an earthenware pan with a cover for the oven. Heat a heavy 12-inch skillet (cast iron, if you have one) with a tight-fitting lid over medium heat. Add the vegetable oil. Brown the cube steaks on both sides and set aside.
  • Pour off all of the oil except 1/3 cup. Add 1/3 cup of flour to the oil and stir. Allow the mixture ot brown over medium-low heat and stir frequently to prevent it from burning. When the mixture is about the color of peanut butter, add the onion. Stir and allow the onion to cook for about 1 minute.
  • Slowly add the beef stock, stirring constantly. Add the Wercestershire sauce and simmer for 5-10 minutes.
  • Return the cube steaks to the pan, cover, and bake in a 275 degree oven for one hour.
  • Serve with mashed potatoes and your favorite vegetable.

There are a lot of swiss steak recipes here, but all of them have a lot of "stuff" in it. My grandfather was a very picky eater, and this is the way my grandmother made swiss steak. Granddaddy loved it, and we all did, too. In fact, my sister always wanted Swiss Steak for her birthday dinner. The gravy is best on mashed potatoes, but it's not too shabby over rice, either. This is not fancy, but it sure is good! My grandmother used her home-canned tomatoes in this, but it's almost as good with store-bought.

1 (14 1/2 ounce) can diced tomatoes
1 -2 onion, chopped (to taste)
flour (for dredging)

Steps:

  • Note: I usually use one very large onion. If your onions are small, use two.
  • Heat oil in cast iron skillet over medium high heat. Sprinkle steaks with salt and pepper and dredge in flour.
  • Brown steaks on both sides in hot oil. Remove from skillet and place in oven-safe dish. (I use a 9 x 13 pyrex dish.).
  • Add onions to skillet and saute until they start to brown around the edges. Pour in tomatoes and stir to loosen browned bits on bottom of skillet.

1 teaspoon dry mustard
1/2 teaspoon salt (I leave this out)
1 1/2 lbs beef boneless round steak, tip (I always use round) or 1 1/2 lbs chuck steaks, about 3/4 in thick. (I always use round)
2 tablespoons vegetable oil
1 (16 ounce) can whole tomatoes, undrained
2 teaspoons minced garlic
1 cup water
1 large onion, sliced
1 large green bell pepper, sliced
1/2 teaspoon Worcestershire sauce

Steps:

  • Mix flour, mustard and salt (if using). Sprinkle one side of beef steak with half of the flour mixture; pound inches Turn beef and pound in remaining flour mixture.
  • Cut beef into 6 serving pieces. Heat oil in skillet until hot. Cook beef over medium heat about 15 minutes, turning once, until brown.
  • Add tomatoes, garlic and worcestershire sauce; break up tomatoes. Heat to boiling; reduce heat.
  • Cover and simmer 1 1/4 hours or until beef is tender.
  • Add water, onion and bell pepper. Heat to boiling; reduce heat.
  • Cover and simmer 5 to 8 minutes or until vegetables are tender.
