GRANDAD'S PANCAKES



Grandad's Pancakes image

This secret family pancake recipe was passed down from my grandfather. He fed a family of 7 (including 4 growing boys!) on these pancakes, and refused to give anyone the recipe until he finally relinquished it to my mother (his daughter-in-law) before he passed away. It is a long-standing family favorite!

1 cup all-purpose flour
¼ cup white sugar
1 tablespoon baking powder
¼ teaspoon salt
1 cup milk, at room temperature
1 egg, at room temperature
1 tablespoon oil
2 teaspoons oil, or as needed

Steps:

  • Combine flour, sugar, baking powder, and salt in a bowl; make a 'well' in the center of the flour mixture. Pour milk, eggs, and 1 tablespoon oil into the well. Mix until well moistened.
  • Place a griddle over medium-high heat; sprinkle a few drops of water onto the griddle. If the droplets bounce, the griddle is ready; add 2 teaspoons oil.
  • Spoon batter onto the griddle; cook until bubbles form and the edges are dry, 3 to 5 minutes. Flip and cook until browned on the other side, 3 to 5 more minutes. Repeat with remaining batter.

This is a great recipe that I found in my Grandma's recipe book. Judging from the weathered look of this recipe card, this was a family favorite.

1 ½ cups all-purpose flour
3 ½ teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 ¼ cups milk
1 egg
3 tablespoons butter, melted

Steps:

  • In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
  • Heat a lightly oiled griddle or frying pan over medium-high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

This dessert recipe was very popular in Quebec during the Depression and remains a favorite in many French Canadian homes to this day.

2 cups packed brown sugar
2 cups water
1 tablespoon butter
½ teaspoon vanilla extract
2 cups all-purpose flour
1 cup white sugar
1 tablespoon baking powder
1 pinch salt
⅓ cup cold butter
¾ cup milk
1 teaspoon vanilla extract

Steps:

  • In a large saucepan, mix together the brown sugar and water, and bring to a boil. Reduce heat to low, and stir in 1 tablespoon of butter and 1/2 teaspoon of vanilla. Cover while preparing the batter.
  • In a medium bowl, stir together the flour, white sugar, baking powder and salt. Cut in 1/3 cup of butter by pinching between your fingers, or using a fork until the mixture has lumps no larger than crumbs. Make a well in the center, and pour in the milk and 1 teaspoon of vanilla all at once. Stir just until all of the dry mixture is absorbed.
  • Return the sugar mixture to a full boil, and drop large spoonfuls of the batter into the syrup. Cover and simmer over medium heat, without removing the lid, for 15 minutes, or until a toothpick inserted into the largest dumpling comes out clean.

Number Of Ingredients 11

1 3/4 cups all-purpose flour
1 3/4 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon freshly grated nutmeg
2 tablespoons cold unsalted butter, cut into bits
1 cup well-shaken buttermilk
2 cups pure maple syrup (preferably Grade B or dark amber)
2 cups water
Garnish: freshly grated nutmeg
Accompaniment: plain whole-milk yogurt or sour cream

Steps:

  • Sift together flour, baking powder and soda, salt, and nutmeg into a bowl. Blend in butter with a pastry blender or your fingertips until mixture resembles coarse meal. Add buttermilk and stir with a fork just until dough is evenly moistened (do not overmix).
  • Bring syrup and water to a boil in a 4-quart pot at least 10 inches wide. Drop 8 1/2-cup measures of dough into syrup, leaving spaces to allow dumplings to expand. Gently simmer over moderately low heat, covered, until tops of dumplings are dry to the touch, 15 to 20 minutes. Serve warm.

  • Stir dry ingredients together, create well in middle. Add milk and mix until only small lumps remain. Pour onto lightly greased/buttered griddle pan or cast iron skillet. Top with real maple syrup and mixed berry compote.

This has been in the family for a while, don't know were it came from, was just passed around and around for 50yrs or more..lol.. i have tried a lot of other recipes but this one is still the best . you get thick cake pancakes and they rise very well we measured once and they were up to 3/4 in thick. This is a very plain recipe sometime i omit the vanilla and/or add fruit and or nuts.. If the batter is a little thicker than you like it , just add more milk, just be careful not to add to much ad they will not rise as much and be more like a flapjack(thin and chewy).

  • BEFORE pouring the batter.
  • 6. Ladle out the batter to the pan, depending on the size of cakes you
  • want to use a 1/4- 1/2c for each pancake.
  • 7. top with your favorite topping and serve immediately.

1 3/4 cups maple syrup (do not use imitation syrup)
1 1/4 cups water
1 1/2 cups flour
4 1/2 teaspoons baking powder
1/2 teaspoon kosher salt
4 tablespoons unsalted butter, frozen
3/4 cup milk

Steps:

  • Bring syrup and water to a boil in a 6 qt Dutch oven over medium-high heat.
  • While the syrup/water is rising to a boil, whisk flour, baking powder, and salt in a bowl. Set aside.
  • Grate butter on large holes of a box grater into flour and toss to coat. Add milk and stir with a fork until dough forms.
  • When syrup mixture reaches a boil, use a spoon to drop large clumps of dough into syrup.
  • Cover pot and simmer until dumplings are cooked through (10-15 minutes). Spoon dumplings and sauce into 6 bowls and serve.
