CREAMY PASTA SALAD



Creamy Pasta Salad image

This creamy pasta salad is loaded with fresh flavors from herbs, fennel, capers and more. It's the perfect side dish for picnics and cookouts!

1/2 cup mayonnaise
1/2 cup low fat Greek yogurt
2 tablespoons apple cider vinegar
1 tablespoon honey
1/2 cup drained cornichons (chopped)
1 small fennel (chopped fine)
1/2 cup mixed chopped herbs such as tarragon (basil and dill, roughly chopped)
4 small inner stalks celery and the leaves (chopped fine)
1/4 cup drained capers (chopped)
1 pound short pasta such as strozzapreti (fusilli or elbow, cooked and cooled)
1/2 teaspoon kosher salt

Steps:

  • In a large bowl, whisk together the mayonnaise, yogurt, vinegar and honey. Stir in the cornichons, fennel, herbs, celery and capers until combined. Add the cooked and cooled pasta and salt and toss until well coated.

Grandpa's Pasta Salad image

My grandfather created this recipe for my family on thanksgiving. When I tried it I had to make all the time.I'ts great!

1 lb small no yolk noodles
1 peeled and diced cucumber
2 roma tomatoes, diced
1/2 cup finely diced onion
1/4 cup chopped black olives
1 cup fat-free mayonnaise or 1 cup regular mayonnaise
2 tablespoons extra virgin olive oil
2 tablespoons balsamic vinegar
1/2 teaspoon salt, to taste
1/2 teaspoon pepper, to taste
1 teaspoon sugar

Steps:

  • Cook pasta according to package directions.
  • In a large mixing bowl, combine pasta, cucumber, tomatoes, onion, and olives.
  • In a small bowl combine mayonnaise, olive oil, vinegar, salt and pepper,and sugar stir till not lumpy; add to mixture and stir.
  • Chill and serve.

1 package (16 ounces) spiral pasta
1-1/2 cups seedless red grapes, halved
1-1/2 cups fresh broccoli florets
1-1/3 cups diced fully cooked ham (1/2 pound)
1 can (8 ounces) sliced ripe olives, drained
1 medium red onion, diced
1 jar (16 ounces) coleslaw dressing

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large bowl, combine the grapes, broccoli, ham, olives and onion. , Drain pasta and rinse in cold water; stir into grape mixture. Add dressing and toss to coat. Cover and refrigerate for at least 2 hours before serving.

  • Preheat oven to 400 °. Nip off a slice off the top of the bulb of garlic to reveal most of the garlic cloves. Place on square of foil on baking sheet and drizzle the olive oil over the tops of the garlic cloves. Sprinkle with a little kosher salt.
  • Roast for 20-25 minutes until golden and soft. Allow to cool for about 10 minutes, then using a paper towel, hold the garlic bulb upside down over the foil and squeeze the bulb from the bottom up, pushing the garlic cloves out. Most will pop out, some might need to be encouraged or pulled out. Remove any of the papery garlic skin and set aside.
  • Drizzle oil into large, heavy bottomed pot and heat over medium heat. If not using roasted garlic, toss in minced garlic and stir until golden, careful not to burn. Scoop the tomato paste into the hot oil (garlic) and stir around until you see the color darken slightly, don't allow to burn.
  • Pour in the pureed and crushed tomatoes, next, pour one or two whole tomatoes at a time in your hand, squeezing and crushing them into the sauce. Pick one of the empty 28 oz cans and fill ½ way with water, swirling around to remove leftover tomato juice, then pour into the next can and the next until you've cleaned out all of the cans. Don't throw out. Pour tomato "water" with collected juices into the sauce, stir to combine.
