Steps:
- Browned ground beef. Drain, add chili seasoning and Rot-Tel diced tomatoes and chilies, and tomato sauce (I use with roasted garlic) mix well. In slow cooker add red beans, kidney beans, chili beans, ground beef mixture. Slow cook 1 hour

GRANDPA JOHNSON'S (WARD) CHILI CON CARNE
My Dad loves to experiment in the kitchen. He learned to cook by spending hours in his mom's kitchen (Grandma Johnson) watching her. Dad is a believer that beans DO NOT belong in chili. This recipe is his own concoction.

- 1. Brown meat in Dutch oven over medium high heat. Drain and put meat back into pot. Add remaining ingredients.
- 2. Bring to a boil and reduce to a simmer, uncovered, until the sauce is as thick as desired, or about 3 hours. Add water as needed or desired.
- 3. Add a few shakes of Tabasco sauce to taste, if any (be careful!).
- 4. Serve with crackers, shredded cheese, chopped onions, etc. (whatever suits your fancy).
GRANDMA'S CHILI
This is my grandma's chili recipe. It's not hot, but very tasty. I've even served it to people who said they didn't like chili, but they all liked this dish.

- Season the beef with salt and pepper, and brown over medium-high heat in a 5 to 6 quart dutch oven or stew pot. Add the onion and green pepper, and cook for another 5 minutes, or until the vegetables are slightly softened. Add the remaining ingredients and bring to a boil. Reduce heat to low and simmer for 45 to 60 minutes, stirring about every 15 minutes. Serve immediately or refrigerate for 24 hours for a more complex flavor. Top with shredded cheddar, crackers, or your favorite chili topping.

- Place ground meats in a large dutch oven. Add enough water to just cover the meat. Bring to a boil, uncovered. Stir frequently to break meat into small pieces. Reduce heat to a simmer.
- In a small bowl, combine the chili powder, paprika, cumin, salt, black pepper, onion powder, garlic flakes, onion flakes, red pepper (START with lesser amount), and garlic salt. Stir into the meat after it comes to a boil.
- Cook meat for 1 1/2 hours on a low simmer, uncovered, stirring frequently.
- Remove from the heat. Remove grease with a large spoon. Leave some on to maintain consistency. More will cook off when it is warmed up. We leave about 1/4 cup.
- In a medium size bowl, combine the ketchup, Worcestershire sauce, and brown sugar. Stir into the meat, and continue to simmer over a low heat for 30 minutes, stirring frequently. Taste to see if any spices need adjusted, such as adding more salt and the rest of the red pepper. Allow these to simmer the last few minutes.
- Stir well prior to serving. Makes enough for 24 regular size hot dogs.
- Freezes well
- ***Best if made a few hours or a day prior to serving to allow flavors to blend well.
GRANDMA'S CHILI
This is a hand-me-down from my Grandma. I like it because it doesn't have kidney beans and it has a bit of a sweet taste. It's a brown chili not a red one - no tomatoes.

- In a large saucepan over medium high heat, saute the ground beef for 5 minutes, or until browned. Stir in the onion and green bell pepper and saute for 5 more minutes. Season with salt and pepper to taste.
- Next, add the beans, mushrooms, brown sugar and chili powder to taste. Mix together well, reduce heat to low and let simmer for 20 minutes to 1 hour or more, depending on how much time you have and how thick you like your chili.

- Cook and stir ground beef, chopped onion, and garlic in a skillet over medium heat until crumbly and browned, 5 to 10 minutes. Drain.

A soupy version of a green chile. From Great American Brand Name Recipes Cookbook, 1989 version. I'm writing it as posted, but I did not add the pinto beans, and I used cut up pork chops. I also did not use as much meat as recipe calls for. The recipe also reads that "This chili is equally delicious made with beef."

- In large heavy saucepot or Dutch oven heat oil. Add pork; cook over medium high heat until browned. Add onion, green pepper, garlic, chili powder, paprika, celery seed and salt. - In a skillet over medium heat, cook the bacon until crisp. Remove to a paper towel-lined plate and dab off the excess grease. Set aside.
- Reserve the bacon grease in the skillet. Remove the stem and seeds from the peppers. Finely chop.
- Finely chop the celery. Remove the peel of the onion and finely chop. Chop the jalapeño pepper and remove the seeds if desired -- leave them in for extra heat.*
- Add the peppers, celery, onion, and jalapeño pepper to the skillet with the reserved bacon grease. Saute the veggies over medium heat until tender. Transfer to the slow cooker.
- Add in the three cans of chili beans (undrained and do not rinse), petite diced tomatoes, and tomato paste.
- In the same skillet used to cook the bacon and veggies, cook the ground chuck and Italian sausage over medium-high heat until no longer pink. Drain off all the fat and add to the slow cooker.
- Add all the seasonings to the crockpot. Crumble the bacon (or chop) into very small pieces and stir that in the crockpot. Or reserve the bacon in the fridge and add at the end. Stir everything together.
- Cover and cook on low for 6-8 hours. Taste and adjust seasonings (salt, pepper, chili powder, etc.) Enjoy with fresh cilantro, sour cream and Cheddar cheese.
