UNBELIEVABLE FISH BATTER
In the early 1950's, I received this recipe on an open-line, talk-radio show. It makes the lightest, crispiest batter imaginable. This makes enough to coat approximately 2 pounds of fish.

BATTER-FRIED FISH
Whether I'm fixing cod fillets or my husband's catch of the day, this fish fry batter makes the fish golden and crispy. Club soda gives it a different twist, and the sweet and zippy sauce complements the fish nicely. -Nancy Johnson, Connersville, Indiana

- Rinse fillets in cold water; pat dry. In a large shallow dish toss flour and fish, 1 piece at a time. Combine next 9 ingredients. , In a cast-iron or other heavy skillet, heat 1 in. of oil. Dip floured fillets in cornstarch batter; fry over medium heat until fish just begins to flake easily with a fork, 2-3 minutes on each side. Combine marmalade and horseradish; serve with fish.

A family favorite my Aunt Sarah found in a 1985 Southern Living magazine. A great recipe starting out with frozen fish for that Saturday deep fry.

- Combine cornmeal, salt and pepper. Dredge fillets in cornmeal mixture. (Do not pat fish dry before dredging.).
- Fry fillets in deep hot oil (375 degrees) for 4 to 5 minute or till golden brown; drain on paper towels.

GRANDPA CORNISH'S DEEP FRIED FISH
My grandpa Cornish makes fried catfish with this recipe. I tried it with baby squid, YUMMMMM! I am not sure about the quantities, just use what looks right.

Steps:
- Mix beer and egg.
- "Soak"fish (or whatever) in beer-egg mixture.
- Grandpa varies the soaking time, I wouldn't go less than 10 minutes.
- Heat oil in pan or deep fryer.
- Season pancake mix to taste with favorite spice mix.
- Take fish out of beer-egg mixture and dredge in pancake mix.
- Fry as normal.
- Salt and pepper to taste.
- I like to drizzle lemon or lime juice (or even vinegar) over before eating.
