GRANDMA'S PUMPKIN OATMEAL COOKIES

This is a recipe I adapted from my grandmother. It is my favorite pumpkin cookie recipe. Plus it makes enough for a crowd!

3 cups white sugar
2 sticks unsalted butter, at room temperature
2 cups pumpkin puree
2 eggs
2 teaspoons vanilla extract
4 cups all-purpose flour
2 cups quick-cooking oats
2 teaspoons baking powder
2 teaspoons baking soda
2 teaspoons ground cinnamon
1 teaspoon salt
2 cups semisweet chocolate chips

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line baking sheets with parchment paper.
  • Combine sugar and butter in a large mixing bowl. Beat with an electric mixer until creamy. Add pumpkin, eggs, and vanilla extract.
  • Mix flour, oats, baking powder, baking soda, cinnamon, and salt in a separate bowl.
  • Add dry ingredients to the pumpkin mixture; mix until evenly incorporated. Fold in chocolate chips. Drop scoopfuls of cookie dough onto the prepared baking sheets.
  • Bake in the preheated oven until edges are firm and bottoms are golden brown, about 12 minutes. Repeat with remaining cooking dough.

Enjoy these cookies on a cool Fall night, while sipping hot tea by the fireplace. Or, if you're like me, you can eat these cookies while dying of heat stroke in the dead of 'winter' in Florida !

Number Of Ingredients 14

2 1/2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 cup butter
1 1/2 cups sugar
1 cup solid pack pumpkin
1 large egg
1 teaspoon vanilla extract
2 cups powdered sugar
3 tablespoons milk
1 tablespoon melted butter
1 teaspoon vanilla

Steps:

  • Combine flour, baking soda, baking powder, salt and cinnamon in a medium bowl.
  • In a large bowl, cream butter and sugar.
  • Add pumpkin, egg, and vanilla; beat until light and creamy.
  • Mix in dry ingredients until well blended.
  • Drop rounded spoonfuls of dough onto greased cookie sheet.
  • Smooth tops of cookies.
  • Bake in preheated 350°F degree oven for 15-20 minutes.
  • Meanwhile, combine glaze ingredients, stirring until smooth and set aside.
  • Cool baked cookies on wire rack.
  • Drizzle glaze over top.
  • For variations, stir any one of the following ingredients into batter: 1 cup raisins, chopped nuts, or rolled oats and/or 1/2 cup crushed pineapple, drained.

Grandpa always had these cookies in a refrigerator tin at Holiday Time These were my all time favorites growing up. Too good not to share. They also do well at high altitude, no adjustments needed. I live at 9500 feet. These are a soft cookie and may be refridgerated, if they last that long.

Number Of Ingredients 15

1 cup butter
1 1/2 cups sugar
2 eggs
1 cup pumpkin
1 teaspoon vanilla
2 1/2 cups flour
1/2 cup old fashioned oats
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon nutmeg
1 teaspoon cinnamon
1 cup raisins (golden)
1 cup pecans (pieces)
1/2 cup chocolate chips
1/2 cup butterscotch chips

Steps:

  • With mixer, cream butter and sugar together.
  • Add eggs, pumpkin and vanilla and mix well.
  • In separate bowl, combine the dry ingredients, flour, baking powder, nutmeg, cinnamon and oats.
  • With mixer, add dry mixture with moist mixture, mix until fully incorporated.
  • Fold in raisins, pecans and chips.
  • Drop T spoon size onto ungreased cookie sheet and bake for 15 minute @ 350 degrees in preheated oven or until light brown.
