Maple Grandfathers (Grands-Peres a L'erable) image

This is a traditional desserts in Quebec made with maple syrup. It's sinful :P From Coup de Pouce.

1/2 cup sugar
2 tablespoons baking powder
1/2 teaspoon salt
1 1/2 cups flour
1/4 cup shortening
1 cup milk
1 1/2 cups maple syrup
1 cup water

Steps:

  • Preparation of the grandfathers : Mix sugar, baking powder, salt and flour. Incorporate shortening. Add milk and mix until the dough is homogeneous.
  • Syrup preparation : In a big casserole, bring to boil the maple syrup and water. With an ice cream spoon, do balls with the dough and put in the casserole. Cover and let simmer for 15 minutes but don't remove the cover during the cooking time.

1 3/4 cups maple syrup (do not use imitation syrup)
1 1/4 cups water
1 1/2 cups flour
4 1/2 teaspoons baking powder
1/2 teaspoon kosher salt
4 tablespoons unsalted butter, frozen
3/4 cup milk

Steps:

  • Bring syrup and water to a boil in a 6 qt Dutch oven over medium-high heat.
  • While the syrup/water is rising to a boil, whisk flour, baking powder, and salt in a bowl. Set aside.
  • Grate butter on large holes of a box grater into flour and toss to coat. Add milk and stir with a fork until dough forms.
  • When syrup mixture reaches a boil, use a spoon to drop large clumps of dough into syrup.
  • Cover pot and simmer until dumplings are cooked through (10-15 minutes). Spoon dumplings and sauce into 6 bowls and serve.

A popular quebecois dessert which is basically dough balls in warm maple mixture (will add photo soon). Heavenly when enjoyed with vanilla ice cream. We do not put any sugar in the dough, unlike other similar recipes, since the maple syrup already makes it sweet enough.

1 1/2 cups flour
3 1/2 teaspoons baking powder
1 pinch salt
2 tablespoons soft butter
1 cup milk
2 cups maple syrup
1 cup water

Steps:

  • Mix all dry ingredients in a bowl. Slowly add milk into the mixture.
  • Boil maple syrup and water in a pot.
  • Put the dough into the boiling syrup, one tablespoon at a time (give the dough balls/"grands-peres" time to coagulate before adding more dough into the syrup).
  • Cover and let it cook at reduced heat for 10-15 minutes.
  • Serve on a plate with ice cream, if desired.

DOUGH
2 cup(s) unbleached all-purpose flour
2 tablespoon(s) granulated sugar
4 teaspoon(s) baking powder
1/2 teaspoon(s) kosher salt
3 tablespoon(s) unsalted butter
1 cup(s) milk
1/2 teaspoon(s) pure vanilla extract
MAPLE SYRUP
1/2 cup(s) (1 stick) butter
2 1/2 cup(s) water
2 cup(s) brown sugar
1/2 cup(s) good quality maple syrup
1/2 teaspoon(s) pure vanilla extract

Steps:

  • DOUGH: In a large bowl, combine flour, sugar, baking powder and salt.
  • Add butter to dry ingredients and work until the mixture resembles coarse sand using fingers, pastry cutter or a couple of knives.
  • Add milk a little at a time until the dough comes together. Add vanilla extract, stir and set aside.
  • MAPLE SAUCE: In a Dutch oven over medium-high heat, add butter, water, brown sugar, maple syrup and vanilla extract. Bring the sauce to a simmer.
  • By the tablespoon, drop the dough balls one by one into the simmering sauce. Cover, reduce heat to medium and cook for 14 minutes. Halfway, spoon the sauce over the dumplings.
  • Scoop up a hot dumpling into a serving bowl, spoon sauce over and serve with a scoop of vanilla ice cream.

2 cups cake flour
1 tablespoon baking powder
1/2 teaspoon salt
3 tablespoons butter
3/4 cup milk
2 cups maple syrup
2 cups water

Steps:

  • Sift together flour, baking powder and salt.
  • Cut in butter with pastry blender. Add milk and mix well.
  • Combine maple syrup with water in a saucepan and bring to a boil.
  • Drop the dough in the hot maple syrup by the tablespoonful. Cover and cook 25 minutes.
  • Serve very hot, pouring over them the syrup in which they were cooked.

2 cups packed brown sugar
2 cups water
1 tablespoon butter
½ teaspoon vanilla extract
2 cups all-purpose flour
1 cup white sugar
1 tablespoon baking powder
1 pinch salt
⅓ cup cold butter
¾ cup milk
1 teaspoon vanilla extract

Steps:

  • In a large saucepan, mix together the brown sugar and water, and bring to a boil. Reduce heat to low, and stir in 1 tablespoon of butter and 1/2 teaspoon of vanilla. Cover while preparing the batter.
  • In a medium bowl, stir together the flour, white sugar, baking powder and salt. Cut in 1/3 cup of butter by pinching between your fingers, or using a fork until the mixture has lumps no larger than crumbs. Make a well in the center, and pour in the milk and 1 teaspoon of vanilla all at once. Stir just until all of the dry mixture is absorbed.
  • Return the sugar mixture to a full boil, and drop large spoonfuls of the batter into the syrup. Cover and simmer over medium heat, without removing the lid, for 15 minutes, or until a toothpick inserted into the largest dumpling comes out clean.
