GRANDMA'S RICE PUDDING
My sisters and I always loved the recipe for rice pudding our grandma made. After she passed away, I took it upon myself to try and find the secret to her rice pudding. It took quite a bit of experimentation, but I finally got it right! And I'm glad to share this easy recipe here. -Margaret DeChant, Newberry, Michigan

- Place rice and raisins in a greased 1-qt. casserole. In a small bowl, whisk the eggs, milk, sugar and nutmeg; pour over rice. , Bake, uncovered, at 375° for 45-50 minutes or until a knife inserted in the center comes out clean. Cool. Pour milk over each serving if desired. Refrigerate leftovers.

My grandma used to make this for my mom, and she made it for me. It's just like hot rice pudding and so yummy served with cinnamon!

- Bring water and rice to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender and water has been absorbed, about 20. Add 2% milk, evaporated milk, sugar, and butter; stir well and cook until creamy, about 20 minutes longer. Serve sprinkled with cinnamon.

GRANDMA'S BAKED RICE PUDDING WITH MERINGUE
This is a delicious rice pudding recipe passed down from my husband's grandmother. My husband cannot get enough of it!

Steps:
- Place the water and rice into a saucepan, and bring to a boil over medium-high heat. Stir, and reduce heat to low. Cover pan, and simmer until all water is absorbed, about 20 minutes.
- Preheat oven to 350 degrees F (175 degrees C).
- Beat the egg yolks together with 1/2 cup sugar in a mixing bowl. Add the cornstarch and salt. Continue beating, and gradually pour in the milk. Stir in the cooked rice, lemon juice, and raisins. Pour the rice mixture into a baking dish, and place inside a larger baking pan. Fill the larger pan with water to 1 inch up the sides of the dish containing the rice mixture.
- Bake in preheated oven until the pudding is creamy and most of the liquid is absorbed, stirring occasionally. If necessary, add more water to maintain the water level.
- Meanwhile, place the egg whites in a mixing bowl and beat until soft peaks form. Continue beating, and gradually add 1/4 cup sugar. Beat until stiff peaks form. Remove the pudding from the oven, leaving it in the larger baking dish. Top pudding with the meringue, swirling with a spoon to create soft peaks.
- Preheat oven to 400 degrees F (200 degrees C).
- Bake in preheated oven until the meringue is golden, 8 to 10 minutes. Serve warm.

Grandma's Old-Fashioned Rice Pudding

- Make grandma proud with this classic recipe for rice pudding. Creamy, satisfying and not too sweet, it has all the qualities you'd expect from a traditional rice pudding. Step 1
- Prepare rice according to package directions. Step 2
- Combine rice, 1 cup of evaporated milk, sugar and salt in a medium saucepan over medium-low heat. Cook, stirring frequently, until thick and creamy, about 20 minutes. Step 3
- Meanwhile, place raisins in a small bowl. Add enough boiling water to cover raisins. Let stand for 15 minutes. Beat egg with remaining milk in a separate bowl. Step 4
- Gradually pour egg mixture into hot rice mixture, stirring constantly. Remove from heat. Stir in vanilla. Drain raisins and fold into pudding. Step 5
- Serve pudding warm or chilled, sprinkled with cinnamon, if using.
GRANDMA LIL'S RICE PUDDING
This was my Grandma Lil's recipe from Sweden, it is more custard the the normal rice pudding recipes and not as much rice. My dad is 92 and I still make this at least once a month for him.

- 1. Butter a 2 quart oven proof bowl.
- 2. Pour milk, uncooked rice and salt in the top of a double boiler. Cover and cook for 1 hour, stir once to break up rice.
- 3. Beat eggs, sugar, vanilla, cinnamon and nutmeg until blended and pour into butter bowl.
- 4. Mix small amount of hot milk mixture into the egg mixture to temper. Then add all of the hot mixture to the egg mixture. Place bowl in a pan of hot water on the middle rack of your oven and bake for 1 hour at 350 degrees.
GREAT GRANDMA'S RICE PUDDING
This was my great Grandmother's pudding recipe and it has been one of my family's favorites for years.

- scald milk (not boiled)
- remove from heat and add the butter and sugar.
- cool. Slowly stir into the beaten eggs and add remaining ingredients.
- pour into a buttered casserole dish; set in pan of hot water

GRANDMA'S RICE PUDDING
This was my dad's favorite. It's not the thick dry kind served in restraunts. This is creamy with a nice Meringue topping! It's wonderful served warm...but just as tasty served cold!

- Cook rice in 3 cups water until tender...about 20 minutes. Drain and rinse under cold water. Set aside.
- In a 3 quart pot, add 3 1/2 cups milk. Dissolve the cornstarch in remaining 1/2 cup milk and add to pot. Add sugar and salt. Cook over medium heat stirring constantly until thickened. Add rice. Whisk 4 egg yolks and temper with some of the cooked milk mixture. Add eggs to pot and cook for about 2 minutes more. Add vanilla. Pour into 2 quart casserole dish.
- Beat 4 egg whites until stiff. Beat in remaining 1/2 cup sugar. Spread over top of hot pudding, sealing the edges. Bake in a preheated 350 degree oven for about 5-10 minutes until egg whites are nicely browned.

This is an old family favorite. It is perfect when you have leftover rice from a stirfry or another recipe. I have made it often lately for dinner guests with rave reviews. Such a comfort food. Wonderful warm from the oven and delightful cold as well!

- Arrange rice in 9x9 cake pan.
- Mix together eggs, milk, sugar, salt, and vanilla.
- Pour over rice.
- Sprinkle raisins in if desired (i love it with raisins!!).
- Sprinkle top with nutmeg.
- Place on cookie sheet in oven, pour water on cookie sheet to prevent scorching.
- Bake 425 for 25-30 minutes.
- Test with knife, done when it comes out clean.

- In heavy saucepan cook milk and salt over medium heat until warm. Stir in rice and continue cooking over medium heat until mixture comes to a boil. Reduce heat and simmer gently for 20 minutes, stirring occasionally. Add 1/4 cup evaporated milk and simmer 2 minutes, stirring frequently.
- Combine eggs, sugar, vanilla, and remaining 3/4 cup evaporated milk in bowl. Stir about 1/2 cup of the hot rice mixture into the egg mixture. Then, stir the egg mixture into the rice mixture in the saucepan and cook over low heat until mixture thickens slightly, stirring frequently. The mixture should come just to a boil. Remove from heat immediately. Do not continue to boil or the mixture will curdle.
- Pour into bowl and stir occasionally until cool. Cover and refrigerate until ready to serve. Sprinkle with cinnamon before serving.
