My sister Corri should open a diner. She is an amazing cook and we love to sit and talk recipes. When she comes we look forward to some really good food. She made this pound cake and it was so good. She sliced it, buttered it and browned it in a skillet. She topped it with strawberries and cool whip. OMG...it was amazing!!

2 c sugar
2 c flour
1/2 c milk
2 sticks butter
2 tsp baking powder
1 tsp vanilla extract
1/2 tsp lemon extract
5 large eggs

Steps:

  • 1. Put all above ingredients in a large bowl. Beat 10 minutes. Pour into a greased 12 cup bundt pan. Bake in a preheated 325F oven for 50-60 minutes or until toothpick comes out clean.

1 cup butter (softened)
1½ cups white granulated sugar
3 eggs
2 cups all purpose flour
¾ cup milk
2 teaspoons vanilla extract

Steps:

  • Grease 1 pound bread pan and preheat oven to 300°F.
  • In a mixing bowl, beat butter until light in color (about 3 minutes). Gradually incorporate sugar and beat until fluffy.
  • Add eggs one at a time. Blend in on low.
  • Alternate adding flour and milk, add vanilla until smooth.
  • Pour into bread pan and bake for 1 hour 20 minutes. Insert a toothpick into the center of the cake. When the toothpick comes out clean, it is done.
  • Allow to cool and top with glaze if desired.

This recipe is over 100 years old and is the original kind of pound cake: it contains 1 pound each of butter, sugar, eggs and flour and contains no salt, baking powder or flavoring (but flavoring such as vanilla extract or almond extract can be added if desired!)

4 cups all-purpose flour
⅔ cup milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease 3 - 8x4 inch loaf pans, then line with parchment paper.
  • In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time. Beat in the flour alternately with the milk, mixing just until incorporated.
  • Pour batter evenly into prepared loaf pans. Bake in the preheated oven for 70 minutes, or until a toothpick inserted into the center of the cakes comes out clean. After removing them from the oven, immediately loosen cake edges with a knife. Allow to cool in pans for 10 minutes, then remove from the pans. Strip off the parchment paper and cool completely on wire racks.

This is a rather easy pound cake to make. I got the recipe from my mother but I added my own changes. She got it from her mother and made changes as well.

2 stick unsalted butter
2 c sugar
4 eggs
1 1/4 c all purpose flour
1 1/4 c self rising flour
1 Tbsp vanilla extract
1 c milk

Steps:

  • 1. Preheat oven to 325 degrees. Grease and flour a tube pan. Allow butter and eggs to reach room temperature.
  • 2. Using a mixer cream butter and sugar together. Add eggs one at a time, mixing well. Add vanilla extract.
  • 3. Sift the two flours together. Alternate adding the flour mixture and milk to the batter. Start with the flour mixture and end with the flour mixture.
  • 4. Pour batter into prepared pan. Bake for about 1 hour, depending on your oven.
  • 5. Sometimes I will add a bag of chocolate chips or peanut butter chips to the batter before I pour it into the pan. I've also served it with strawberries and whipped cream. How you serve it is limited only by your imagination!

1 Tbsp. baking powder
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1 cup butter, softened
2 cups sugar
1 tsp. vanilla
6 eggs

Steps:

  • Heat oven to 350ºF.
  • Mix flour and baking powder; set aside. Beat cream cheese, butter, sugar and vanilla in large bowl with mixer until blended. Add eggs, 1 at a time, beating after each until blended. Gradually beat in flour mixture on low speed until blended.
  • Pour into 12-cup fluted tube or 10-inch tube pan sprayed with cooking spray.
  • Bake 1 hour or until toothpick inserted near center comes out clean. Cool in pan 10 min. Loosen cake from sides of pan with knife. Invert cake onto wire rack; gently remove pan. Cool cake completely.

  • Preheat oven to 350°F. Coat a 10- cup bundt pan liberally with nonstick spray and set aside.
  • In the bowl of your stand mixer fitted with the paddle attachment mix the butter and sugar together for 2 minutes until light and fluffy.
  • Add the eggs, one at a time, mixing until combined, scraping the sides as needed.
  • Turn the mixer to low and add in the flour slowly until combined, again scraping the sides to ensure everything is combined evenly.

¾ pound unsalted butter, at room temperature
6 extra large eggs, at room temperature
2 teaspoons pure vanilla extract
3 cups all-purpose flour
½ teaspoon baking powder
½ teaspoon salt
¼ teaspoon ground nutmeg
1 cup 1% milk

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Grease and flour a 12-cup fluted tube pan (such as Bundt®).
  • Place sugar and butter in a large mixing bowl. Cream together using an electric mixer fitted with a paddle attachment, or a hand mixer, on medium speed, until light and fluffy, about 5 minutes. Add eggs one at a time, beating for 45 seconds after each addition. Add vanilla extract and beat for 30 seconds.
  • Combine flour, baking powder, salt, and nutmeg in a medium bowl. Add 1/2 of the dry ingredients to the butter and egg mixture, mixing on low speed, until just blended.
