GRANDMA'S TUNA CASSEROLE WITH POTATO CHIPS AND NO NOODLES

Grandma's Tuna Casserole with Potato Chips and No Noodles image

This is my grandma's recipe. My dad calls it "Toucan Tuna Casserole" because it uses two cans of everything. It is uncommon among tuna casserole recipes because it uses potato chips instead of noodles. Serve with Worcestershire sauce.

GRANDMA'S TUNA CASSEROLE

Grandma's Tuna Casserole image

I know it sounds crazy, but trust me, this tuna casserole is one of the yummiest things ever. Comfort food madness! Before this, Grandma had never written out this recipe. She doesn't measure anything when cooking this, but it must be tasted throughout.

Time 45m

Yield 8

Number Of Ingredients 12

12 ounces egg noodles
1 (5 ounce) can tuna, drained and flaked, or more to taste
½ cup sour cream
½ cup milk, divided
1 (1 ounce) package dry onion soup mix (such as Lipton®)
1 teaspoon Worcestershire sauce
¼ teaspoon garlic powder, or to taste
⅛ teaspoon seasoned salt (such as LAWRY'S®), or more to taste
salt and ground black pepper to taste
2 tablespoons butter, cut into small pieces, divided
8 ounces ridged potato chips (such as Ruffles®)
2 cups shredded mozzarella cheese

Steps:

  • Fill a large pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, 7 to 9 minutes. Drain.
  • Mix cooked noodles with tuna, sour cream, 1/4 cup milk, onion soup mix, Worcestershire sauce, garlic powder, seasoned salt, salt, and pepper. Taste and adjust seasonings as desired.
  • Lay 1/2 of the butter across the bottom of a 2-quart, microwave-safe casserole dish. Crush potato chips, then sprinkle 1/4 of the crushed chips over the bottom and press to flatten.
  • Spread the tuna-noodle mixture in a single layer over the crushed chips. Layer with 1/2 of the mozzarella, 2/3 of the remaining chips, followed by the remaining butter, chips, milk, and mozzarella.
  • Microwave on high until casserole is hot and cheese is melted, about 10 minutes.

GRANDMA'S TUNA DIP

Grandma's Tuna Dip image

Every year my grandma makes this for Thanksgiving and Christmas dinner. It's always the first thing on the table to hold the family over until dinner is served. Unfortunately, to my disappointment, grandma isn't able to do the cooking she used to and this tasty dip was left out this Thanksgiving, so I asked her for her recipe. Great for the Holidays, or parties! Served best with Ritz or Town House Crackers. I really don't know how many people this serves. I'm guessing with the quantity it makes, it could probably serve 15, but it's so good 5 people can probably devour this dip in no time!

Time 15m

Yield 15 serving(s)

Number Of Ingredients 7

4 (6 ounce) cans tuna in water
2 cups mayonnaise
1/2 cup of chopped olive
2 tablespoons chopped onions
2 hard-boiled eggs
1/4 cup boiled water
1 (1 ounce) packet knox unflavored gelatin

Steps:

  • Drain all 4 cans of tuna and put in large mixing bowl.
  • Hard boil 2 eggs.
  • Fine chop onions and olives and hard boiled eggs and put in mixing bowl with tuna.
  • Add 2 cups of mayonnaise and mix well.
  • Bring about 1 cup of water to a boil. Measure out 1/4 cup with measuring cup. Mix with 1 packet Knox Gelatin in separate mixing bowl until gelatin is dissolve. Add to bowl with other ingredients and mix threw and threw for 1 minute.
  • Chill in refrigerator in a mold or any storage container.
  • Unmold and serve with crackers.
  • ***Grandma suggests chilling overnight. I have tried the dip right away after preparing, still good but Grandma's suggestion is really what works best. I also had suggestions to leave a little olive out and add a little relish or even some minced garlic. There are many ways you could alter this recipe to fit your liking. You could add a little spices to this if you prefer a spicy dip also. If you do try to alter in anyway and find it pleasant please let me know, I would love to try! ENJOY!
