GRANDMA'S STRAWBERRY CREAM CHEESE PIE
Wonderful memories come with this recipe from when my brother and I were little saplings. Some of our favorite stories of Gramma are when she would make this pie. Every time I take a bite, I can't help but smile, and every time my brother comes for a visit from wherever he is stationed by the Air Force, we HAVE to make this pie!...

Steps:
- 1. Prepare gelatin according to package directions. DO NOT put in fridge to cool. Stir mixture until properly diluted.
- 2. Add strawberries to blender. Cover blender and start at a lower setting (so as not to spill). Then add cream cheese packages and increase blender setting to mix strawberries and cream cheese well.
- 3. Once the strawberries and cream cheese packages are blended well, slowly add gelatin solution. Adjust blender settings appropriately so as not to spill over pie filling.
- 4. Just like gelatin, slowly add condensed milk to blender. Once container is empty, allow mixture to blend for approximately 30 more seconds. Mixture will be thick Turn Blender off.
- 5. Pour contents evenly over 4 9-inch pie crusts. Cover filled pies with clear plastic cover and let sit in refrigerator for approximately 30-45 minutes. Pie filling will look slightly glossy when first poured in.
- 6. Eat and enjoy!
GRANDMA'S BLUEBERRY CREAM PIE
My grandmother used to work in a popular pie diner in the 60s and her blueberry cream pie was famous. Cherry topping goes well with this cream pie as well, but the blueberry topping really makes it shine, and always has people coming back for more.

- Mix cream cheese, powdered sugar, and 1/2 teaspoon vanilla extract until well blended.
- Mix dry whipped topping mix with cold milk and remaining vanilla extract in a separate bowl, per the instructions on the envelope. Blend in cream cheese mixture.
- Transfer filling into the pie crust and freeze until set, about 2 hours.
- Thaw for 1 1/2 hours before topping with blueberry filling and serving.

- Beat cream cheese with an electric mixer until creamy. Add a little powdered sugar at a time, and beat slowly until incorporated. Mix in vanilla.
- Spread cream cheese mixture into the pie crust. Refrigerate until firm, 15 to 30 minutes.
- Meanwhile, combine 3/4 cup of the strawberries, sugar, water, and cornstarch in a blender. Blend lightly. Reserve remaining strawberries.
- Pour blended strawberry mixture into a saucepan over medium heat; stir constantly until boiling. Stir for an additional 2 minutes once it boils; it should thicken very quickly. Remove from the heat and stir a few times while cooling, about 3 minutes.
- Remove chilled pie from the refrigerator and arrange reserved strawberries on top of the cream cheese layer. Pour thickened sauce over top. Return to the refrigerator for at least 2 hours before serving.

This recipe is one of my Grandma's. I found this in the Shoe box my Mom keeps all of her treasured recipes in. Grandma made this several times when we would come for a visit. Plan ahead, this pie needs about 4 hours to set up.

- Preheat the oven to 350 degrees F (175 degrees C). Grease two 9-inch round pans.
- Muddle thawed strawberries in a bowl. Reserve 1/4 cup for frosting.
- Mix white cake mix and gelatin mix together in a bowl. Add strawberries, eggs, oil, and water and beat until well combined. Divide batter evenly between the prepared cake pans.

- In a large mixing bowl, sift the flour and salt together. Then using a pastry blender, mix the Crisco together with the flour mixture until it becomes a little crumbly.
- In a separate bowl, mix the water, vinegar, and egg together. Slowly add liquid ingredients into the flour mixture using your pastry blender. Once incorporated well, use your hands to mix together and form 2 equal sized balls out of the dough for each of the pie crusts.
- Sprinkle a little flour onto a clean, dry surface and gently roll out the pie dough a little less than ¼ of an inch.
- Roll the dough back up on the rolling pin. Lay it on the edge of your pie dish and unroll it right on top. Gently push the pie dough into the pan and then trim the edges about 1 inch below the edge and then fold under and pinch together with your fingers to form a nice edge.
