GRANDMA NOON'S SCOTTISH SCONES

Grandma Noon's Scottish Scones image

This traditional recipe was brought to North America by my Great Grandmother Noon. We love it; it's rich and crumbly, the perfect accompaniment for afternoon tea. It's a real Scottish type of scone-- it's a bit sweet and dense. I suppose you could add raisins to it-- but Grandma Noon might come back and haunt you...

GRANNY LEA'S GRIDDLE SCONES

Granny Lea's Griddle Scones image

My husband's Scottish grandmother - Granny Lea - was renowned for her scones. I followed her one day as she made the scones and wrote down the ingredients as best I could. (Sugar for the recipe was 2 handfuls and baking powder are heaping teaspoons.) Granny has been gone for many years, but the scones live on. Hope you will try them.

GRANDMA'S SCOTTISH SCONES

Grandma's Scottish Scones image

I asked my grandma what made these scones so Scottish, she laughed and said, "that's what my mother called them." I have no clue how Scottish these scones are but they are delicious. In my house, I have to make a double batch, they go so fast.

Categories     Biscuits

Time 35m

Number Of Ingredients 10

2 c all purpose flour
1/2 c sugar
1 tsp baking powder
1/4 tsp cream of tarter
1/2 tsp baking soda
1/2 tsp salt
1/2 c butter, cold
1/2 c sour cream
1 small egg
1/2 c dried fruit if you wish

Steps:

  • 1. Pre-heat oven to 350 degrees
  • 2. Stir dry ingredients with a whisk, blend well.
  • 3. Cut in butter until mixture resembles cornmeal.
  • 4. Add whichever dried fruit you prefer. I have used blueberries, cranberries, cherries, raisins. When using dried cherries add 1/2 teaspoon almond extract with the wet ingredients.
  • 5. Add sour cream and egg to flour mixture, stir until just moistened. (don't over work the dough or the scones will turn into hockey pucks)
  • 6. Turn dough onto a floured surface, knead 6-8 times. (once again, don't over work the dough)
  • 7. Gently pat the dough into a round about 1 inch thick.
  • 8. Cut into 8 wedges.
  • 9. Place 2 inches apart on a lightly greased baking sheet.
  • 10. Bake 12-15 minutes or until golden brown

GRANDMA'S BUTTERMILK SCONES

Grandma's Buttermilk Scones image

My grandmother will be 96 this year, she was born in Banffshire, Scotland in 1915. She lived on her own, in her house until she was 92 and it was only because of her failing eyesight that she had to move into a senior's lodge. Her health is amazing but unable to keep her mind active like she used to, she is struggling with memory issues. She is my hero. In honour of her and to preserve the few recipes I have from her, I've decided to share them here. Prep & cooking times are approx as it's been awhile since I've made these. These scones are so yummy, best served warm and with real butter, maybe some marmalade, a slice of sharp cheddar or whatever your pleasure. From when I was a wee lassie until she moved she always had a batch ready when I visited. Please use real, fresh buttermilk for this recipe, substitutions will not do it justice :). Enjoy!! NB:I'm planning to try whole wheat, I'll post my results then :) If you beat me to it I'd love to hear the results.

Time 30m

Yield 12 Scones, 12 serving(s)

Number Of Ingredients 7

4 cups flour (for white flour I prefer unbleached all-purpose)
2 tablespoons sugar
1/2 teaspoon salt
1 1/2 teaspoons cream of tartar
2 tablespoons butter, just melted
2 cups buttermilk
1/2 teaspoon baking soda

Steps:

  • Sift together first 4 ingredients in a large bowl.
  • Mix melted butter and enough buttermilk in a measuring cup to make 2 cups of liquid, dissolve baking soda in the liquid.
  • Slowly work the liquid into the dry ingredients until a nice dough forms (you may not need all the milk so do this in stages). The dough should be easily handled and not sticky.
  • Divide dough in half and shape into a round ball.
  • On a lightly floured surface, roll out to 1/2" thick round and cut into pie shaped wedges (a pizza cutter works good for this).
  • Fry in a dry electric pan at 350°F (no butter/pam/oil please) until a nice golden brown.
  • Flip and brown other side.
  • Serve warm. (Can be reheated in a toaster).
  • Alternatively, you can roll the doll out and use a glass to cut rounds. Grandma did that sometimes too (while I snuck behind and stole the scraps before she could roll them out again lol).
