PERSIMMON BARS
Persimmon bars as done by my husband's grandmother for years. A family holiday favorite. Sweet frosting tops these delicious cakes.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 10x15 inch jelly roll pan.
- In a small bowl, stir together persimmon pulp and baking soda; set aside. In a separate bowl, mix together egg, white sugar, vegetable oil and raisins.
- In a large bowl, stir together flour cinnamon, nutmeg, salt and cloves. Stir persimmon mixture and egg mixture into the dry ingredients. Fold in walnuts. Spread batter into prepared pan.
- Bake in preheated oven for 20 minutes. Meanwhile, combine confectioners' sugar and lemon juice. Stir until sugar is dissolved. Remove bars from oven and spread with glaze.

GRANDMA'S PERSIMMON COOKIES
This is another family recipe handed down through the generations. This recipe calls for dates instead of raisins which is nice for those who don't care for raisins. This is a nice spice cookie perfect for fall baking.

Steps:
- Preheat oven to 350°F.
- Cream together the sugar and Crisco.
- Add egg, vanilla and persimmon pulp until well blended.
- Sift dry ingredients together and add slowly to the wet ingredients just until mixed well.
- Fold in the dates and nuts.
- Spoon out on greased cookie sheets and bake for 12 to 15 minutes.

My grandmother use to make these when i was a kid then my mom took over the making of them now i make them too!If you love spice cookies or oatmeal rasin you will love these!

Steps:
- 1. Add 1 teaspoon baking soda to the persimmon pulp and set aside.
- 2. In a bowl cream sugar's and butter together add Vanillia nuts,raisins and flour beaten egg and the pulp mixture. Mix lightly
- 3. Then add salt cinnamon cloves and nutmeg and mix together with the other ingredients well.
- 4. drop cookies by tablesspoons on a greased baking sheet bake at 350 degrees for about 12 mins .Do not over cook you want cookies to be chewy not hard.
- 5. You will need to get the large persimmons Hachiya Persimmon they produce alot of pulp and have a good taste the small persimmons will not have enough pulp and will be bitter.I get my persimmons when in season at a Organic market or a Farmers market.

- Cream butter and sugar together until light and fluffy. Add egg, and then add persimmon pulp and baking soda. Mix well (the mixture will still be a bit clumpy).
- In another bowl combine flour, salt, cinnamon, nutmeg, and cloves and whisk together by hand until well combined, about 30 seconds. Stir the dry mixture into the wet ingredients until just combined. Stir in the nuts and raisins. (Chilling the cookie dough at this point will help give fluffier cookies.)
- Drop spoonfuls of the dough onto the prepared sheet pan. Keep cookies small and far apart as they spread out.Bake for 15-18 minutes or until set and light golden around the edges. Allow to cool and serve.
