POLISH COFFEE CAKE (MY GRANDMA'S RECIPE!)



Polish Coffee Cake (my grandma's recipe!) image

A simple, yet mouthwatering yeast raised cake, with the most explosive amount of crumb topping! A recipe passed down through my family!

Time 2h10m

Yield 1 large cake

Number Of Ingredients 11

3 1/2 cups all purpose flour
3/4 cup white sugar
2 1/4 teaspoon active dry yeast
1/2 teaspoon salt
rind of 1 lemon, 2-3 TB
1 cup milk (I used 2%)
1/2 cup unsalted butter
3 eggs, beaten
1 cup white sugar
1 cup AP flour
1/2 cup cold butter

Steps:

  • In a large bowl, whisk together the flour, sugar, yeast, and salt. Grate in the lemon rind.
  • In a small saucepan on the stove, melt the butter and milk together over medium-low heat. Remove from heat, and allow to cool to about 108°, you don't want to kill your yeast because your milk is too hot. If it is really hot, to speed up the cooling process, I put it in the freezer for a few minutes.
  • Using a wooden spoon, begin to stir the milk mixture into the dry ingredients. Once halfway combined, stir in the eggs. Fold everything together until just blended.
  • Grease and flour a large baking pan. Pour in the batter, it will be thick, and spread evenly in the pan.
  • Cover and allow to rise until it doubles in size, 1-2 hours. I stick mine in the oven with the oven light on, it works pretty quick! (Just be sure not to turn your oven on while it's in there!)
  • When it's doubled in size, preheat your oven to 350°. (make sure it's not in there still!)
  • To make the crumb topping, aka the best thing ever, in a medium sized bowl, stir together the sugar and flour. Cut the butter in in chunks, and using a large fork, begin to mash the butter into the dry ingredients. After a couple minutes, I tend to just use my hand, its much more efficient, and you get a better crumb.
  • Using your hands, while simultaneously squeezing into chunks, spread the crumb topping across the risen cake.
  • Pop in the oven and bake for 25-30 minutes, until a toothpick inserted in the middle comes out clean. Allow to cool for a few minutes before devouring.

1 teaspoon baking soda

1 cup buttermilk

Steps:

  • In a small bowl, cream butter and 1 cup sugar until light and fluffy. Beat in egg. Combine the flour, baking soda, baking powder, and 1 teaspoon nutmeg; add to creamed mixture alternately with buttermilk. Pour into a greased 9-in. square baking pan (batter will be thick). , Combine the remaining sugar and nutmeg; sprinkle over batter. Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack.

1/2 cup butter, softened
1/2 cup margarine, softened
1 1/2 cups sugar
2 eggs
2 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 cup sour cream
1 teaspoon vanilla
1/2 cup chopped pecans
4 Tablespoons sugar
1 teaspoon cinnamon

Steps:

  • Beat butter, margarine and sugar (1 1/2 cups) until creamy.
  • Add the eggs, one at a time, and continue beating.
  • In a separate bowl, stir together flour, baking powder, and baking soda. Add to the creamed mixture alternately with sour cream, mixing after each addition.
  • Add vanilla, and mix until completely incorporated.
  • In a small bowl, mix chopped nuts, sugar (4 T.) and cinnamon.
  • Prepare a Bundt pan by greasing generously, and lightly dusting with flour.
  • Pour 1/3 of the batter into the bottom of the prepared Bundt pan. Smooth into a consistent layer with a knife. Sprinkle with 1/2 of the cinnamon sugar mixture.
  • Pour an additional 1/3 of the batter over the cinnamon sugar layer, smooth again with a knife. Sprinkle with the remaining 1/2 of the cinnamon sugar mixture.
  • Spread the remaining 1/3 batter on top the cinnamon sugar layer, and smooth with a knife.
  • Bake in a preheated 350 degree F oven for 1 hour.
  • Remove from the oven, and let cool for 1 hour in the pan. Take a knife gently around inner and outer edges to loosen, and invert to remove from pan.

1 (20 ounce) can crushed pineapple with juice
2 cups all-purpose flour
1 cup white sugar
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon vanilla extract
½ cup packed light brown sugar
½ cup chopped walnuts
½ cup butter
½ cup white sugar
½ cup evaporated milk
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix the eggs, undrained crushed pineapple, flour, 1 cup of the white sugar, baking soda, salt, and 1 teaspoon of the vanilla together and stir until just combined. Pour batter into one ungreased 9x13 inch baking pan.
  • Combine the light brown sugar and the chopped nuts. Sprinkle over the top of the cake batter. Bake in preheated oven for 25 to 35 minutes or until cake tests done. Remove cake from oven and pour topping over hot cake.
  • To Make Topping: In a small saucepan combine the butter or margarine, the evaporated milk, the remaining 1/2 cup of the white sugar, and 1 teaspoon of the vanilla. Cook over medium low heat, stirring occasionally until sugar is dissolved. Mixture will be thin. Pour over hot cake.

1 cup buttermilk
1 egg
1 teaspoon vanilla
2 cups flour
2 cups sugar
2 teaspoons baking soda
1/3 cup cocoa
1 teaspoon salt
1 cup boiling coffee

Steps:

  • Mix oil, buttermilk, egg and vanilla.
  • Add flour, sugar, soda, cocoa and salt.
  • Mix all together well and add coffee.
  • Pour into lightly greased and floured 8X13X2 sheet pan (I have made it in a bundt pan too).

1 teaspoon baking powder
1/4 teaspoon salt

1 cup finely chopped walnuts or pecans
2 teaspoons sugar
1 tablespoon ground cinnamon

Steps:

  • In a large mixing bowl, cream butter, sugar, and sour cream; add eggs and vanilla and beat well. Combine dry ingredients in a separate bowl then add to creamed mixture; beat well. Generously grease a 10-inch tube pan. Make topping by combining chopped nuts, sugar, and cinnamon. In bottom of the well-greased tube pan put about one-third of topping mixture; alternate layers of batter and topping, ending with batter. Bake at 350° for 45 minutes.

1/2 cup water

Steps:

  • Place raisins and hot water in a small bowl; set aside. , In a large bowl, cream shortening and sugar until light and fluffy. Beat in egg. Combine the flour, baking soda, salt and spices; add to creamed mixture alternately with applesauce and water. Drain raisins; fold into batter with the walnuts. , Transfer to a greased 13x9-in. baking pan. Bake at 300° for 40 minutes or until a toothpick inserted in the center comes out clean. Place pan on a wire rack. Dust with confectioners' sugar if desired. Serve warm or cold.

  • PREP: Position a rack in the center of the oven and preheat the oven to 350ºF. Spray a 9x13 baking dish with cooking spray, set aside for later. In a small bowl toss together the light brown sugar, ¼ cup of granulated sugar, pecans, cinnamon, salt, nutmeg, and melted butter; set aside. In a medium bowl, combine the flour, baking powder, baking soda, and salt and whisk; set aside.
  • CAKE: In a large bowl (or the bowl of your stand mixer) beat the butter and sugar together on medium speed for 2-3 minutes or until the mixture is light and fluffy. Add the eggs one at a time, waiting for one to incorporate before adding the next, then add the vanilla. Lower the speed on the mixer to medium-low, and add in one-third of the flour mixture, followed by half of the sour cream, then one-third of the flour mixture, the remaining sour cream, and finally the last third of the flour mixture. Allow each to combine before adding the next.
  • BAKE: Pour about half of the batter into the prepared baking dish. Then sprinkle half of the crumb mixture from step one, evenly over the batter. Drop the remaining cake batter in dollops over the cinnamon sugar mixture and carefully spread using an offset spatula or knife. If the batter sticks to the spatula, just spray the spatula with cooking spray. Sprinkle the remaining cinnamon sugar mixture on top of the cake batter and bake the cake for 30-36 minutes or until a toothpick comes out without any wet cake batter.
