GRANDMA'S CAKE DOUGHNUTS
Best cake doughnuts! Easy to make. Just mix and drop in hot grease!

Steps:
- Heat about 1 quart oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
- Mix sugar, eggs, and 2 tablespoons oil together in a mixing bowl.
- Pour milk, vinegar, and baking soda into a liquid measuring cup; milk will become foamy. Add to sugar mixture; mix well. Mix in flour, baking powder, salt, and nutmeg.
- Drop batter by teaspoonfuls into the hot oil until golden, about 1 minute per side, working in batches. Drain doughnuts on paper towels.

This is a recipe handed down from my Grandma Thayer. My family tradition is to make these old-fashioned cake donuts Christmas morning. Enjoy! Roll warm donuts in sugar and cinnamon, if desired.

- Beat eggs in the bowl of a stand mixer until whipped to a creamy color. Mix in sugar gradually until well blended. Mix in buttermilk and vanilla extract. Mix in butter.
- Sift flour, baking soda, baking powder, nutmeg, and salt together in a separate bowl. Beat 1/2 of the mixture into the sugar mixture until well blended; beat in remaining 1/2. Let batter rest for 20 minutes.
- Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
- Turn dough out onto a floured surface and knead as little as possible until it comes together. Roll dough out using a rolling pin until it is 3/8-inch thick; cut into donut shapes.
- Lower donuts carefully into the hot oil and cook until light brown, 2 to 3 minutes, turning once. Remove from oil and let cool on a wire rack.

- Mix in melted butter-stir until dough is crumbly. Stir in milk and beaten egg. Turn out dough (it is sticky) onto a lightly floured work surface. Flour your hands and knead dough lightly, (adding a sprinkle or two of flour if dough remains sticky) until it comes together in a ball.
- Pat the dough out until it is 1/4 inch thick. Dip a doughnut cutter or a biscuit cutter into flour, then cut out doughnuts (dipping cutter into flour before cutting each one). Cut out center of the doughnuts if using biscuit cutter. Gather scraps of leftover dough, and cut additional doughnuts.
- Heat oil to 375 degrees (make sure oil is at correct temperature before adding dough). I used an electric skillet with temperature gauge, but a meat or candy thermometer would work! Carefully add doughnuts, 3-4 at a time to hot oil. Cook for 3 minutes, turning them over at mid-point in the cooking time. I use two chopsticks (one in center of doughnut, one on outside) to carefully flip the doughnuts over. Doughnuts should be golden brown on both sides. Place cooked doughnuts onto several layers of paper towels to drain. Bring oil back to temperature and continue cooking doughnuts and doughnut holes until all have been prepared.

- LIne a cookie sheet with parchment paper for placing the uncooked doughnuts. Place a wire rack over another cookie sheet for the cooked doughnuts, If you have paper towels or napkins available, you can line the wire rack with these to absorb grease from the doughnuts.
- In large mixing bowl stir together flour, sugar, nutmeg, baking powder, baking soda and salt. Add buttermilk mixture and stir until no streaks of flour remain. (If the dough is very soft, sprinkle rolling surface with an additional 1/2 cup / 125 ml flour and knead gently into dough. Use additional flour as needed for rolling. )
- Roll or pat dough into 1/2-inch / 2.5 cm thickness and cut out with doughnut cutter. If you do not have a doughnut cutter, you can use two different sized cutters. Use the larger cutter first, then cut out the center with the smaller cutter. You can re-roll the centers, or fry them.
