GRANDMA'S BANANA BREAD



Grandma's Banana Bread image

A super moist banana bread which uses six bananas!

3 cups sugar
1 cup margarine, softened
1 teaspoon vanilla extract
4 eggs
3 ½ cups all-purpose flour
2 teaspoons baking soda
¼ teaspoon salt
1 cup buttermilk
6 very ripe bananas, mashed

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Lightly grease a 9x13 inch baking pan.
  • In a large bowl, cream together the sugar and margarine until light and fluffy. Stir in the eggs one at a time, beating well with each addition, then stir in the vanilla.
  • In a large bowl, sift together flour, baking soda and salt. Blend this mixture into the egg mixture, alternately with the buttermilk; stir just to combine. Fold in the mashed bananas; mixing just enough to evenly combine. Pour batter into prepared pan.
  • Bake in preheated oven until a toothpick inserted into center of the loaf comes our clean, about 60 minutes.

Number Of Ingredients 10

1-1/2 cups boiling water
1 tablespoon butter
2 teaspoons salt
1/2 cup sugar
1 cup old-fashioned oats
2 packages (1/4 ounce each) active dry yeast
3/4 cup warm water (110° to 115°)
1/4 cup molasses
1/4 cup packed brown sugar
6 to 6-1/2 cups all-purpose flour, divided

Steps:

  • In a small bowl, combine the boiling water, butter, salt and sugar. Stir in oats; cool to lukewarm. In a large bowl, dissolve yeast in warm water. Stir in the molasses, brown sugar and 1 cup flour. Beat until smooth. Stir in oat mixture and enough remaining flour to make a stiff dough. , Turn out onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1-1/2 hours. , Punch dough down. Turn onto a lightly floured surface; divide in half. Shape each portion into a ball. Cover and let rest for 10 minutes; Shape into loaves. Place in 2 greased 9x5-in. loaf pans. Cover and let rise until nearly doubled, about 1 hour. , Bake at 375° for 30-35 minutes (cover loosely with foil if top browns too quickly). Remove from pans to wire racks to cool.

Number Of Ingredients 9

2 cups rolled oats
2 cups boiling water
1 cup scalded whole milk
1 tablespoon canola oil
⅔ cup molasses
⅓ cup white sugar
1 tablespoon active dry yeast
6 cups all-purpose flour
1 tablespoon salt

Steps:

  • In a large bowl pour the boiling water over the rolled oats. Add the scalded milk and stir. Pour in the oil and molasses. Stir well.
  • In a separate bowl mix the sugar with the yeast and 1 cup of the flour. When the oatmeal mixture has cooled to lukewarm add the yeast-flour mixture. Stir in the salt and remaining 5 cups of flour. Knead dough for 6 to 8 minutes. Place the dough in a covered greased bowl and let rise until doubled, about 1 1/2 hours.
  • Punch the dough down. Knead for 2 minutes. Divide dough into two pieces and place into greased 9x5x3 inch loaf pans. Cover pans and let rise until almost doubled in size.
  • Bake in a preheated 350 degree F (175 degrees C) oven for 1 hour, or until nicely browned. Let the loaves cool on a rack. Remove loaves from pan; wrap well and store in a cool spot.

"We converted some bread recipes from my husband's grandmother for use in the bread machine," writes Jeannie Thomas, Kokomo, Indiana. "This dark, slightly sweet bread is great toasted."

Number Of Ingredients 10

1 cup warm milk (70° to 80°)
2 tablespoons butter, softened
2 tablespoons molasses
1 egg
1-1/2 teaspoons salt
2-1/2 cups bread flour
4-1/2 teaspoons sugar
1/2 cup rye flour
1/4 cup whole wheat flour
2-1/4 teaspoons active dry yeast

Steps:

  • In bread machine pan, place all ingredients in order suggested by manufacturer. Select basic bread setting. Choose crust color and loaf size if available. Bake according to bread machine directions (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed).

2 c boiling water
1 c rolled oats (old fashioned oatmeal)
1 Tbsp shortening
1/2 c lukewarm water
2 1/4 tsp yeast
1/2 c molasses
5 c flour
1 Tbsp salt
1 Tbsp melted butter or oil

Steps:

  • 1. In large bowl, pour boiling water over oatmeal and shortening. Let stand until lukewarm.
  • 2. Dissolve yeast in lukewarm water and molasses in small bowl.
  • 3. Sift flour and salt together.
  • 4. Add dissolved yeast to rolled oats mixture, then add flour. Mix well. Knead thoroughly. Brush top with melted butter or oil (I use olive oil). Place in large greased bowl. Let rise until double in bulk, about 2 hours.
  • 5. Shape into 2 loaves. Place in buttered bread pans. Spread evenly. Let rise again until nearly doubled in bulk, about 1-1/2 hours.
  • 6. Bake in preheated 450 degree F oven for 10 minutes. Reduce heat to 325 degrees F and bake about 1 more hour.

This incredibly delicious Oatmeal Cake recipe has been in our family for generations. One bite and you'll fall in love with this soft, hearty, and oh so flavorful cake!

1 1/4 cup boiling water
1 cup quick oats
1 stick butter
1 cup sugar
1 cup brown sugar
2 eggs (slightly beaten)
1 1/2 cup flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
Icing Ingredients
2 Tbsp melted butter
1/2 cup evaporated milk
1/2 cup sugar
1/2 tsp almond extract
1/2 cup coconut (optional)

Steps:

  • Combine quick oats, boiling water, and butter in a large mixing bowl. Cover and let stand for 20 minutes.
  • While you are waiting, butter and flour two cake pans* and preheat your oven to 350 degrees Fahrenheit.
  • After 20 minutes, mix together oat mixture. Add 1 cup of granulated sugar, brown sugar, and eggs, mix until well combined.
  • In a medium bowl whisk together flour, soda, cinnamon, and salt. Add to oat and sugar mixture and mix until well combined.
  • Pour cake batter evenly into prepared cake pans. Bake for 30-35 minutes until tooth pick inserted into the middle comes out clean.
  • While cake is baking, mix icing together in a microwave safe bowl (preferably something with a spout). Combine melted butter, evaporated milk, sugar, almond extract, and coconut - stir until well combined. Microwave for 30 seconds and stir.**
  • When cakes come out of the oven, slowly and evenly pour icing over the hot cakes while still in the pan. Place cake pans back in the oven under the broiler to toast the coconut and broil the icing. Watch carefully so they don't burn.
  • When coconut is a perfect golden brown, removed cakes from oven again. Let cakes cool 5-10 minutes. Run a butter knife around the edge of the cake pans and turn cakes out onto a cooling rack. Use the cooling rack to flip cake layers onto your cake serving plate - stacked.***
