GRANDMA'S OATMEAL BREAD



Grandma's Oatmeal Bread image

My grandmother made this bread for special occasions, and it's remained a family favorite. The aroma of it always brings hungry appetites to the table. -Marcia Hostetter, Canton, New York

Yield 2 loaves (8 slices each).

Number Of Ingredients 10

1-1/2 cups boiling water
1 tablespoon butter
2 teaspoons salt
1/2 cup sugar
1 cup old-fashioned oats
2 packages (1/4 ounce each) active dry yeast
3/4 cup warm water (110° to 115°)
1/4 cup molasses
1/4 cup packed brown sugar
6 to 6-1/2 cups all-purpose flour, divided

Steps:

  • In a small bowl, combine the boiling water, butter, salt and sugar. Stir in oats; cool to lukewarm. In a large bowl, dissolve yeast in warm water. Stir in the molasses, brown sugar and 1 cup flour. Beat until smooth. Stir in oat mixture and enough remaining flour to make a stiff dough. , Turn out onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1-1/2 hours. , Punch dough down. Turn onto a lightly floured surface; divide in half. Shape each portion into a ball. Cover and let rest for 10 minutes; Shape into loaves. Place in 2 greased 9x5-in. loaf pans. Cover and let rise until nearly doubled, about 1 hour. , Bake at 375° for 30-35 minutes (cover loosely with foil if top browns too quickly). Remove from pans to wire racks to cool.

"We converted some bread recipes from my husband's grandmother for use in the bread machine," writes Jeannie Thomas, Kokomo, Indiana. "This dark, slightly sweet bread is great toasted."

Yield 1 loaf (about 1-1/2 pounds).

Number Of Ingredients 10

1 cup warm milk (70° to 80°)
2 tablespoons butter, softened
2 tablespoons molasses
1 egg
1-1/2 teaspoons salt
2-1/2 cups bread flour
4-1/2 teaspoons sugar
1/2 cup rye flour
1/4 cup whole wheat flour
2-1/4 teaspoons active dry yeast

Steps:

  • In bread machine pan, place all ingredients in order suggested by manufacturer. Select basic bread setting. Choose crust color and loaf size if available. Bake according to bread machine directions (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed).

A very old-fashioned basic quick bread using graham (or whole wheat) flour. My Grandma made it at all holidays... hence the name. She was born in the mid 1880's and probably learned the recipe from her own mother. I had to write it down by standing at her elbow as she made it! Since there is no shortening in this recipe... I recommend whole milk... but skim also works. Make sure to use baking soda... NOT baking powder. Bread is moist, dense, and flavorful.

2 cups graham flour (whole wheat flour)
1 cup white flour
1 teaspoon baking soda (NOT baking powder)
1 cup molasses (dark is excellent..light OK too)
1 cup milk
1 cup chopped walnuts (optional)

Steps:

  • Preheat oven to 300 degrees F.
  • Grease medium sized loaf pan.
  • Mix dry ingredients together.
  • Add wet ingredients to dry.
  • Fold in nuts if desired.
  • Batter will be thick.
  • Bake in very slow 300 degree oven for about 55-60 minutes. Test near center with wooden skewer.
  • Serve warm or room temperature with butter or your favorite spread. Or alone with a cuppa tea!

This is a very good bread to have with baked beans, or just on it's own. This recipe can also be used to make rolls.

2 cups boiling water
1 cup rolled oats
2 tablespoons shortening
3 tablespoons brown sugar
4 teaspoons salt
1 cup molasses
½ cup warm water (110 degrees F/45 degrees C)
1 teaspoon white sugar
2 tablespoons active dry yeast
3 cups warm water (110 degrees F/45 degrees C)
12 cups bread flour
1 ½ cups raisins
1 ½ teaspoons ground cinnamon

Steps:

  • Combine boiling water, oats, shortening, brown sugar, salt, and molasses. Allow to cool.
  • Stir 1/2 cup warm water and 1 teaspoon white sugar until sugar is dissolved. Sprinkle yeast over this mixture, and proof while oats are cooling.
  • Add 3 cups of warm water to the cooled oat mixture. Stir in yeast. Begin stirring in flour 1 cup at a time until it begins to get hard to stir. Dredge raisins in flour, and mix with cinnamon; mix into the dough. Turn onto a lightly floured surface, and knead in enough flour to make a soft but not sticky dough. Cover. Let rise for 1 to 2 hours in a warm place, or until dough doubles in size.
  • Divide dough into 5 parts. Shape loaves, and place into greased 9 x 5 inch loaf pans.
  • Bake in a preheated 375 degree F (190 degree C) oven for 20 minutes. Reduce heat to 350 degrees F (175 degrees C), and bake an additional 20 minutes. Cool on wire racks.

  • Add the flour and yeast. Select dough setting and press start. Approximately half way through the kneading cycle, add the raisins. Check the dough (don't be afraid to open the lid). It should form a nice elastic ball. If you think the dough is too moist, add additional flour (a tablespoon at a time). The same is true if the dough is looking dry and gnarly. Add warm water (a tablespoon at a time).
  • When dough cycle has finished, remove dough from pan and turn out onto a lightly oiled surface. Form dough into an oval, cover with plastic wrap and let rest for 10 minutes.
