MINI LEMON BREAD
Steps:
- Preheat oven to 350 degrees. Spray mini pans with non stick cooking spray and set aside.
- In large bowl, cream butter and sugar until light and fluffy. Stir in eggs, vanilla, lemon zest and sour cream. Scrape sides and mix again. With mixer on low speed, incorporate all dry ingredients until just combined, then stir in milk. Scrape sides and mix a few more times by hand. Spoon batter equally into prepared pans. Bake 15-20 minutes or until edges are golden brown and are baked thoroughly- use the toothpick method to see if they are done. Mine were done at 18 minutes.
- While lemon loaves are baking, mix ingredients together for glaze and microwave on high for 2 minutes, stirring every 20 seconds or so to dissolve sugar into lemon juice. The glaze is done once the sugar has dissolved.
- Once loaves come out of the oven, cool at least 15 minutes before removing from pans. Spoon glaze over loaves and continue to cool completely. Store in air tight containers until ready to serve.

GRANDMA'S PERFECT HOMEMADE BREAD
Steps:
- In a stand mixer add the warm water, sugar, salt and yeast. Let the yeast proof until it bubbles for about 5 minutes. Using the dough hook start adding the flour one cup at a time until the dough combines and forms a soft dough.
- On a floured surface knead the dough until smooth and elastic and form a ball. Add the oil to the large bowl and add the dough to the bowl and cover. Let rise until it has doubled 1- 1 1/2 hours.
- Grease and flour 2 9x5 inch pans. Punch the dough to release the air. Lay the dough onto a flat surface and cut into two loaves. Roll each loaf up and place into the loaf pans. Let rise until it doubles another 1-1 1/2 hours.
- Bake in a preheated 350 degree oven for 30-35 minutes or until golden brown on the tops. Remove from the oven and let cool for 10 minutes before slicing.

GRANDMA'S MINI LEMON BREADS
This was one of those recipe's that my grandma said no one would ever have and she refused to give it out. I feel that no recipe should be kept secret! But after she moved I found her recipe for this sitting in the pantry under our flour container. (not sure if she did it on purpose or by mistake) She used to make these as a "stocking stuffer" and passed them out to EVERYONE! This was one of the FEW things she knew how to make well. I think this would be good to cut into slices and serve with other goodies at parties for the holidays.

- Mix all ingredients together.
- Grease and flour 5 mini loaf pans (the aluminum foil kind work well for this) or 2 small loaf pans.
- Fill the loaf pan half way with batter.

- Preheat the oven to 350 degrees F (175 degrees C).
- Whip milk and egg together in a small bowl. Mix flour and lemon-pepper seasoning together in a another small bowl.
- Dip chicken in the egg mixture and then in the flour to coat completely. Place milk and butter in the bottom of a baking dish to keep the chicken nice and moist. Place coated chicken on top. Place lemon slices directly on the chicken. Cover with foil.
- Bake in the preheated oven until almost cooked through, about 30 minutes. Remove foil and continue to bake until no longer pink in the centers and juices run clear, about 15 minutes more. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

GRANDMA CARDOZA'S PORTUGUESE SWEET BREAD

- Dissolve 1 package of yeast and 2 tbsp. sugar in 1/2 cup warm water. Let stand until frothy and bubbly (about 5-15 minutes).
- In a small saucepan, combine milk and butter and bring to a simmer. Remove from heat and let cool a bit.
- Combine flour and salt. My grandma's recipe calls for sifting the flour, so I sift as grandma suggests.
- In a mixing bowl, beat eggs and sugar together until mixed well. Next add the milk and butter mixture, the lemon extract, the anise extract, and the yeast mixture to the eggs and sugar.
- Gradually add the 6 cups of flour to the mix.
- Knead the bread until very smooth, which takes about 15 to 20 minutes.
- Cover the dough, place in a warm area, and let rise until the dough doubles in size. This takes approximately 2 hours.
- Punch dough down, divide, and form into rolls, large round loaves, or braided loaves.
- Place the dough on a buttered cookie sheet (I use parchment paper) or in a pie pan, cover, and let rise again for roughly an hour.
- If you are making Folar da Pascoa, make sure the eggs are boiled and tuck them in the loaves before baking.
- Bake at 350 F for 25-30 minutes. When the bread starts to brown, I brush the top with milk, and this helps give a shiny, golden top to the bread. As soon as the bread is ready, I butter the top.
- Enjoy right from the oven, if you choose!
GRANDMA'S LEMON BARS
Grandma's Lemon Bars

- Preheat the oven to 350° F.
- In a large mixing bowl, combine 2 c. flour and 1/2 c. powdered sugar.
- Using a pastry blender, cut in the butter until it resembles coarse sand.
- Scrape out the bowl and pat the mixture evenly into a 9x13 baking pan and bake for 15-17 minutes, but not until browned.
- In the same mixing bowl, combine 1 1/2 c. granulated sugar, 1/2 c. flour and baking powder. Add the beaten eggs and blend thoroughly with a hand mixer.
- Add the lemon juice, zest, and coconut.
- Spread mixture on baked crust and bake for another 23-25 minutes, or until very lightly browned.
- Cool, dust with powdered sugar, and cut into bars.
- Store, covered, in the refrigerator.
GRANDMA'S BREAD
This bread recipe is easy and very forgiving. It can be made with any flour, and the addition of any nut or dried fruit. It makes a dense, soft and chewy bread. It has been handed down through 5 generations and originated in the 1800's.

- Place 4 cups flour in large mixer bowl with dough hook.
- In separate bowl combine water, oil, sugar, yeast, and salt. With mixer on low pour liquid into mixer. Combine well.
- Add flour 1 cup at a time, mixing well after each addition, until dough is not sticky and comes all together. Once all combined, allow mixer to knead on low 5-10 minutes.
- Oil dough and bowl, cover with a cloth and put in warm area. Allow to rise until doubled (about an hour).
- Turn out onto lightly floured surface and roll into log. Divide into 3 equal parts. Place into well greased bread pans.
- Cover and let rise until doubled. Preheat oven to 375°.
- Bake for 35 minutes.
