GRANDMA'S MARSHMALLOW CAKE

This is a very old recipe that belonged to my grandmother. I hope that you like it.

Number Of Ingredients 9

½ cup shortening
1 ½ cups white sugar
½ cup milk
2 cups all-purpose flour
3 teaspoons baking powder
4 egg whites
¼ teaspoon cream of tartar
⅛ teaspoon salt
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease two 9 inch layer cake pans.
  • Cream the shortening, add the sugar gradually.
  • Sift the flour, baking powder, cream of tartar, and salt. Add the flour mixture alternately with the milk to the creamed mixture.
  • Beat the egg whites until stiff peaks are formed. Fold the beaten egg whites and the vanilla into the cake batter. Pour batter into the prepared pans.
  • Bake at 350 degrees F (175 degrees C) for 30 minutes.

Grandma's Lime Green Jello Salad Recipe (with Cottage Cheese & Pineapple) image

Grandma's Lime Green Jello Salad Recipe (with Cottage Cheese & Pineapple) is a retro lime jello salad that my husband's grandma made for many holiday meals. To continue with the tradition, I make this every Thanksgiving.

Number Of Ingredients 7

1 cup crushed pineapple (drained with juice reserved)
1 cup water (more or less depending on what's needed, see instructions below)
2 packages lime jello (3 oz each)
1 cup mayo
1 cup evaporated milk (canned)
1 cup small curd cottage cheese
1/2 cup walnuts (chopped)

Steps:

  • In a large multi-cup measuring cup (I use my 4 cup Pyrex), add all of the reserved pineapple juice and then add enough water to the juice to make a total of 2 cups. Pour into pot and bring just to a boil.
  • Add the lime Jell-o mixes to the boiling pineapple juice/water and stir until dissolved. Remove from heat, allow to cool just slightly.
  • In a mixing bowl, stir together the mayo and evaporated milk. Combine until very smooth. Slowly stir in the Jell-o mixture until all is incorporated with the mayo/milk mixture. Stir in the crushed pineapple, cottage cheese, and walnuts.
  • Pour mixture into an 8×8″ glass casserole pan. Cover and refrigerate for at least 4 hours or overnight (preferred).

1 (8 ounce) can crushed pineapple, drained
2 cups miniature marshmallows
1 cup flaked coconut
6 ounces sour cream

Steps:

  • Combine the oranges, pineapple, marshmallows, coconut, and sour cream. Stir till mixed well. Refrigerate till cold. Serve.

1 (11 ounce) can mandarin oranges (drain well)
1 (8 ounce) can crushed pineapple (drain well)
2 cups miniature marshmallows
1 cup sweetened flaked coconut
1 cup sour cream

Steps:

  • In a large bowl, combine the oranges, pineapple, marshmallows, coconut, and sour cream.
  • Stir until completely mixed together.
  • You can eat it immediately after mixing, but we recommend that you refrigerate for at least 2-3 hours before serving so that the sour cream can be sweetened by the fruit.
  • Try these other variations: add in chopped walnuts or pecans for an added crunch; to make it sweeter, stir in a little powdered sugar - it will also offset the tartness from the sour cream; add in a small jar of maraschino cherries; add in a can of drained fruit cocktail; add in dried cranberries and a dash of cinnamon; stir in 2 Tablespoons of instant lemon pudding powder for a lemon-taste; use pina colada flavored yogurt in place of the sour cream; top with corn flakes for an added crunch; add diced apples (if you don't like coconut, apples are a great alternative because of the crunch); add grapes (red or green) that have been halved; add diced bananas; add some marshmallow creme in with the sour cream to sweeten it up.

10 1/2 oz mini marshmallows
2 small cartons heavy cream, whipped
1 medium container sour cream
12 Tbsp lemon juice, fresh
4 Tbsp real mayonaise (not miraclewhip!)
1 1/2 c walnuts, chopped
20 oz pineapple, chunks (drained)

  • 1. Combine all ingredients in large mixing bowl - IN ORDER LISTED!!! Mixing after each addition.
  • 2. Refridgerate 24 hours. Stir and serve cold.

  • In a medium-sized bowl, whisk together eggs, sugar, and salt until smooth. In a separate bowl, stir together cornstarch and 1 Tablespoon reserved pineapple juice until dissolved then add to the egg and sugar mixture and whisk to combine.
  • Pour the mixture into a small saucepan then turn heat to medium and whisk constantly and quickly until the custard is just about to bubble. If the eggs begin to scramble, remove pan from the heat then whisk quickly to smooth back out.
  • Turn heat to low then switch to a spatula and continue stirring constantly until the custard feels like it won't thicken any more, 5 minutes. Pour onto a plate with a rim to cool. Can be done up to several days ahead of time - cool completely then refrigerate with a piece of saran wrap placed directly on top of the custard to prevent a skin from forming.
  • Add the cooled custard to a large bowl with the drained pineapple and whipped topping then stir to combine. Fold in grapes and marshmallows then refrigerate for 2 hours or up to overnight. Fold in bananas just before serving.
