GRANDMA'S LIME GREEN JELLO SALAD RECIPE (WITH COTTAGE CHEESE & PINEAPPLE)
Grandma's Lime Green Jello Salad Recipe (with Cottage Cheese & Pineapple) is a retro lime jello salad that my husband's grandma made for many holiday meals. To continue with the tradition, I make this every Thanksgiving.

Steps:
- In a large multi-cup measuring cup (I use my 4 cup Pyrex), add all of the reserved pineapple juice and then add enough water to the juice to make a total of 2 cups. Pour into pot and bring just to a boil.
- Add the lime Jell-o mixes to the boiling pineapple juice/water and stir until dissolved. Remove from heat, allow to cool just slightly.
- In a mixing bowl, stir together the mayo and evaporated milk. Combine until very smooth. Slowly stir in the Jell-o mixture until all is incorporated with the mayo/milk mixture. Stir in the crushed pineapple, cottage cheese, and walnuts.
- Pour mixture into an 8×8″ glass casserole pan. Cover and refrigerate for at least 4 hours or overnight (preferred).
GRANDMA'S JELLO SALAD
When ever I serve this dish I get rave reviews. My grandma used to make this for our holiday meals; it was the only thing that NEVER had leftovers. When most people hear the ingredients. they are often skeptical until they try it. So far it has won over everyone that has tried it. It is so simple to make that you can have it any night. Prep time is time to combine items and cook time is time to chill. Servings are approx.

Steps:
- Mix jello powder and whipped cream in bowl until jello is evenly dissolved.
- Add cottage cheese, 1/2 mandarin oranges (1 can), whole can of fruit cocktail, and walnuts stir until well mixed.
- Garnish top with remaining mandarin oranges and a sprinkle of walnuts.
- Refrigerate for about 1 hour before serving.

- Drain oranges and pineapple, reserving juices. Set oranges and pineapple aside. Add water to juices to measure 2 cups. Place in a saucepan and bring to a boil; pour over gelatin in a large bowl. Stir until gelatin is dissolved. Stir in sherbet until smooth. , Chill until partially set (watch carefully). Fold in oranges, pineapple and bananas. Pour into an oiled 6-cup mold. Chill until firm.

GRANDMA'S CRANBERRY-ORANGE GELATIN SALAD
My grandmother made this salad every Thanksgiving. It is delicious even without its creamy topping. This side dish is so yummy, I sometimes make it even when it's not Thanksgiving! Depending on your salad's shape, you can spread the topping in a layer over the Jell-O; or if you use a ring mold, put the topping in the center. Alternately, you could serve the topping in a bowl on the side, so it's optional.

- Place the gelatin into a bowl, pour in the boiling water, and stir until the gelatin dissolves. Mix in the cranberry sauce, pineapple, celery, pecans, and orange zest until evenly blended. Pour the gelatin mixture into a mold or serving dish.
- Chill in the refrigerator overnight, or up to 8 hours.
- To make the topping, beat the cream cheese with half of the whipped topping. Fold in the remaining whipped topping until well blended. Unmold the gelatin, and spread with the topping mixture.

Whenever I invite my big family for dinner, my grandchildren request this favorite fruit salad. My sons have always liked it, too - maybe the taste runs in our family! This salad is also good for potluck gatherings.

- In a large bowl, combine 1 cup water and lemon gelatin. Add 1 cup ice cubes, stirring until melted. Stir in pineapple. Pour into a 13x9-in. dish coated with cooking spray; refrigerate until set but not firm., Repeat with the orange gelatin, remaining water and ice. Stir in marshmallows. Pour over lemon layer; refrigerate until firm. , Meanwhile, in a small saucepan, combine sugar and cornstarch. Stir in reserved pineapple juice until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer. GRANDMA'S JELLO SALAD (STRAWBERRY)
This dessert/salad brings back such fond feelings. This is the recipe my grandmother served the kids 2-3 times a year when we were all together. After she died no one could find her recipe for this. I guess that is what the internet is for! When I surprised the family with this recipe at Christmas dinner, both my aunt AND uncle cried. I hope your family enjoys this dessert as much as mine has.

- Dissolve Jello into boiling water.
- Add frozen strawberries and stir until they are thawed and the mixture begins to thicken. Add mashed bananas and pineapple.
- Pour half the mixture into a 9 x 13 pan. Chill in refrigerater until firm.
- Spread sour cream over the top. Add remaining Jello mixture and chill until firm.

- Mix lemon gelatin with 1 cup boiling water. Set aside. Bring one cup water to a boil, add marshmallows, cream cheese and cook until combined. Stir in lemon gelatin and pineapple.
- Remove from heat, and pour into a 9x12 inch pan. Chill until set.
- Mix raspberry gelatin as directed. When lukewarm, pour over lemon gelatin mixture. Chill mixture until set. Spread Dream Whip over chilled gelatin mixture. Serve chilled.
- Note: You can substitute lime for lemon gelatin during the Holidays to present a festive green and red salad.

- In a large mixing bowl, mix 2 cups of boiling water into lemon gelatin. Stir constantly until gelatin has completely dissolved.
- Stir in one small can of crushed pineapple (with juice), and lemon juice.I usually move everything to the bowl I plan to serve it in at this point, but you can also make the whole recipe in a large bowl and then transfer it to your chosen vessel (i.e., bowl, dish, gelatin mold, etc.). Your choice.
- Stir in grated carrots. Some people like to add a pinch of salt at this time. Sometimes I do, sometimes I don't. Some people also like hold off and stir in the carrots after the rest has had a chance to set up for about an hour. You can do this if you want, but I don't find that it changes the results.
