GRANDMA'S CRANBERRY-ORANGE GELATIN SALAD

Grandma's Cranberry-Orange Gelatin Salad image

My grandmother made this salad every Thanksgiving. It is delicious even without its creamy topping. This side dish is so yummy, I sometimes make it even when it's not Thanksgiving! Depending on your salad's shape, you can spread the topping in a layer over the Jell-O; or if you use a ring mold, put the topping in the center. Alternately, you could serve the topping in a bowl on the side, so it's optional.

1 cup chopped pecans
1 teaspoon orange zest
1 (4 ounce) package cream cheese, softened

GRANDMA'S LIME GREEN JELLO SALAD RECIPE (WITH COTTAGE CHEESE & PINEAPPLE)

Grandma's Lime Green Jello Salad Recipe (with Cottage Cheese & Pineapple) image

Grandma's Lime Green Jello Salad Recipe (with Cottage Cheese & Pineapple) is a retro lime jello salad that my husband's grandma made for many holiday meals. To continue with the tradition, I make this every Thanksgiving.

Provided by Brandie Valenzuela

Categories     Salad

Number Of Ingredients 7

1 cup crushed pineapple (drained with juice reserved)
1 cup water (more or less depending on what's needed, see instructions below)
2 packages lime jello (3 oz each)
1 cup mayo
1 cup evaporated milk (canned)
1 cup small curd cottage cheese
1/2 cup walnuts (chopped)

Steps:

  • In a large multi-cup measuring cup (I use my 4 cup Pyrex), add all of the reserved pineapple juice and then add enough water to the juice to make a total of 2 cups. Pour into pot and bring just to a boil.
  • Add the lime Jell-o mixes to the boiling pineapple juice/water and stir until dissolved. Remove from heat, allow to cool just slightly.
  • In a mixing bowl, stir together the mayo and evaporated milk. Combine until very smooth. Slowly stir in the Jell-o mixture until all is incorporated with the mayo/milk mixture. Stir in the crushed pineapple, cottage cheese, and walnuts.
  • Pour mixture into an 8×8″ glass casserole pan. Cover and refrigerate for at least 4 hours or overnight (preferred).

APRICOT JELLO MOLD

Apricot Jello Mold image

This is a lovely layered salad (or dessert) to serve with a heavier type of meal or on a hot summer day! The recipe comes from "The Romney Family Table" by Anne Romney who recommends serving it with a curried chicken salad. Recipe halves nicely.

Provided by Lorraine of AZ

Categories     Dessert

Time 6h

Yield 16 serving(s)

Number Of Ingredients 4

1 (46 ounce) can apricot nectar
4 (4 1/2 ounce) packages apricot gelatin
1 (16 ounce) can apricot halves, drained
1 (16 ounce) container sour cream

Steps:

  • Pour 2 cups of the apricot nectar into a saucepan reserving the rest. Add all the jello to the 2 cups nectar and stir well. Heat the saucepan to boiling, stirring constantly, until all the jello is dissolved.
  • Pour reserved nectar into a large bowl and add the contents of the saucepan. Stir well to blend. Line a large jello mold with the apricot halves, rounded side down. Pour 2 cups of the jello-nectar mixture over the apricot and refrigerate until firm but still a little sticky, about 1 hour. In a bowl, combine the sour cream with 2 more cups of the jello-nectar mixture and beat until fluffy. Pour on top of the first layer already in mold and let chill 2 hours. Pour remaining jello-nectar mixture over the sour cream layer and chill for several hours or overnight.
  • To unmold, dip the mold into hot water for 20 second or so. Loosen around the edges with a knife. Turn out onto serving plate. You may decorate the mold by encircling with fresh fruit or more apricot halves.

  • Jellied Veal Ring. Let's start off with one that's not too bad. Ease you in gently, so to speak. Doesn't that look appetizing? Take a look at this jellied veal ring, also known as veal brawn.
  • Seafood Aspic. Aspic is a savory jelly made with meat stock, and it was basically one of the food groups for home cooks in the 50s. Between aspic and gelatin, there was no shortage of gelatinous goo available in which you could suspend your family's dinner.
  • Ham and Bananas Hollandaise. No, your eyes do not deceive you. This is bananas, covered in ham slices, drenched in hollandaise sauce. Now that you know what it is, could someone please explain to us WHY you'd ever make/eat this concoction.
  • Bananas With Herring and...? If you saw that Ham and Bananas Hollandaise recipe and thought to yourself, "What this dish is missing is some nice herring filets," then I hate to be the one to tell you that you are weird.
  • Weight Watcher's Liver Pate. Some things never change, like good old Weight Watchers here. They make sure you lose weight by offering up such delectable recipes as this one: Liver Pate.
  • Spaghetti Os and Weiners. This ridiculous blob of preservatives was apparently pretty popular among kids back in the day, and it even had another brief resurgence in 2017 when the recipe was rediscovered and went viral online.
  • Bologna Cake. Who among us hasn't looked at a cake and thought, "What this thing needs is more ranch dressing, cream cheese and Bologna?" You can make it yourself using this recipe, but no, we wouldn't care for a slice.
  • Lemon Flavored Lamb's Brawn. Speaking of stomach aches, how about a nice chunk of gelatin with lamb chunks and other stuff inside? According to the briefest of Google searches, brawn = head cheese.
  • Perfection Salad. Perfection? We don't think you understand what that word means.... Why just eat a pile of vegetables when you can put all of those vegetables into a Jell-O mold?
  • Seafood Mousse. I don't care how it tastes, I do not want to eat anything that is smiling back at me from atop a plate. Want to make it? Knock yourself out.
