GRANDMA'S CRANBERRY-ORANGE GELATIN SALAD
My grandmother made this salad every Thanksgiving. It is delicious even without its creamy topping. This side dish is so yummy, I sometimes make it even when it's not Thanksgiving! Depending on your salad's shape, you can spread the topping in a layer over the Jell-O; or if you use a ring mold, put the topping in the center. Alternately, you could serve the topping in a bowl on the side, so it's optional.

Steps:
- Place the gelatin into a bowl, pour in the boiling water, and stir until the gelatin dissolves. Mix in the cranberry sauce, pineapple, celery, pecans, and orange zest until evenly blended. Pour the gelatin mixture into a mold or serving dish.
- Chill in the refrigerator overnight, or up to 8 hours.
- To make the topping, beat the cream cheese with half of the whipped topping. Fold in the remaining whipped topping until well blended. Unmold the gelatin, and spread with the topping mixture.

GRANDMA'S LIME GREEN JELLO SALAD RECIPE (WITH COTTAGE CHEESE & PINEAPPLE)
Grandma's Lime Green Jello Salad Recipe (with Cottage Cheese & Pineapple) is a retro lime jello salad that my husband's grandma made for many holiday meals. To continue with the tradition, I make this every Thanksgiving.

Steps:
- In a large multi-cup measuring cup (I use my 4 cup Pyrex), add all of the reserved pineapple juice and then add enough water to the juice to make a total of 2 cups. Pour into pot and bring just to a boil.
- Add the lime Jell-o mixes to the boiling pineapple juice/water and stir until dissolved. Remove from heat, allow to cool just slightly.
- In a mixing bowl, stir together the mayo and evaporated milk. Combine until very smooth. Slowly stir in the Jell-o mixture until all is incorporated with the mayo/milk mixture. Stir in the crushed pineapple, cottage cheese, and walnuts.
- Pour mixture into an 8×8″ glass casserole pan. Cover and refrigerate for at least 4 hours or overnight (preferred).
GRANDMA BEBE'S JELLO MOLD
Has been made in my family for years, originally by my mother, Grandma Bebe. Grandma Bebe has passed away, but this jello mold lives on in my family forever. I make it whenever I can, and everyone really enjoys it.

Steps:
- 1. Make the jello bringing 2 cups of water to a boil, and adding the jello powder. Remove from heat and Stir until dissolved
- 2. One by one, open the cans and add the fruit with the juice or syrup. Stir well and break up the cranberry clumps. Pour into a jello mold (bundt shape is preferred) Sprinkle the walnut on top.
- 3. Cover and refrigerate overnight. Nice dessert with cool whip, or alone!
APRICOT JELLO MOLD
This is a lovely layered salad (or dessert) to serve with a heavier type of meal or on a hot summer day! The recipe comes from "The Romney Family Table" by Anne Romney who recommends serving it with a curried chicken salad. Recipe halves nicely.

- Pour 2 cups of the apricot nectar into a saucepan reserving the rest. Add all the jello to the 2 cups nectar and stir well. Heat the saucepan to boiling, stirring constantly, until all the jello is dissolved.
- Pour reserved nectar into a large bowl and add the contents of the saucepan. Stir well to blend. Line a large jello mold with the apricot halves, rounded side down. Pour 2 cups of the jello-nectar mixture over the apricot and refrigerate until firm but still a little sticky, about 1 hour. In a bowl, combine the sour cream with 2 more cups of the jello-nectar mixture and beat until fluffy. Pour on top of the first layer already in mold and let chill 2 hours. Pour remaining jello-nectar mixture over the sour cream layer and chill for several hours or overnight.
- To unmold, dip the mold into hot water for 20 second or so. Loosen around the edges with a knife. Turn out onto serving plate. You may decorate the mold by encircling with fresh fruit or more apricot halves.
LEMON CLOUD JELLO MOLD
Tart, sweet, very refreshing for the coming warm weather and simple as can be. And it can be made with other jello flavors and juice flavors; very versatile.

- Dissolve Knox gelatin in 1 c. pineapple juice. Dissolve Jell-O and sugar in 1 c. hot water. Grind cranberry and seeded orange with peel together in food. Grease the mold with vegetable oil or Pam. Use waxed paper to wipe it out. Mix ingredients together and pour into 12 c. jello mold. Refrigerate overnight.
