HUNGARIAN CHICKEN
Ever since I made Hungarian Chicken for the first time (after coming across it in an old church cookbook), it's been a family and company favorite. Seconds are always requested. My husband, our three children (4, 2 and 4 months-quite an active group!) and I live in a very small town in the Texas panhandle. We enjoy working outside the yard or our small garden. But, to tell you the truth, I think I'd be content in the kitchen all day!

- Combine flour, salt and pepper in a large resealable plastic bag. Add chicken, a few pieces at a time, and shake to coat., Melt 1 tablespoon butter in a large skillet. Add onion and cook until tender. Remove from pan and set aside. In the same skillet, melt remaining butter and brown chicken on all sides., Combine tomato juice, paprika, sugar and salt; add to chicken. Add bay leaf, broth and onion. Cover and simmer 45-60 minutes or until chicken is tender., Remove chicken to a platter; keep warm. Reduce heat to low, remove bay leaf and stir in sour cream. Heat through (do not boil). Pour sauce over chicken. Serve with noodles.

This is a recipe passed down from my great-grandmother, with a few shortcuts she approved of.

Steps:
- Bring a large pot of water to a boil. Cook cabbage in boiling water until outer leaves pull away easily from the head, 3 to 5 minutes. Separate leaves and let cool. Reserve 1 1/2 cup cooking water.
- Heat oil in a large skillet. Add onion and garlic; cook and stir until translucent, about 5 minutes. Stir in wet rice; cook and stir until moisture evaporates, about 1 minute. Remove from heat and let cool, about 5 minutes.
- Mix beef, sausage, and egg together in a large bowl. Stir in cooled rice mixture.
- Place a golfball-sized amount of the beef mixture on the ribbed end of a cabbage leaf; roll up, tucking in the sides. Repeat with remaining beef mixture and cabbage leaves.
- Place rolls seam-side down in a slow cooker. Cover with tomato juice. Pour reserved cooking water on top.
- Cook on High for 30 minutes. Switch to Low and cook for 6 1/2 hours.

- Season your chicken with salt and pepper on both sides. Heat up a skillet, add cooking oil and sear the chicken in batches, until nicely brown. Do not overcrowd the chicken and use a splatter guard if the chicken is splashing around (tip: place chicken skin side down and do not disturb for 6-7 minutes, then flip and cook for 3-4 minutes on the other side; this will ensure a nice sear on the skin).
- Chop your onions and garlic. Once the chicken is seared on both sides, remove it to a plate and add onions into the same pan (if too much fat has accumulated in a skillet, remove some of it so you are left with approx 1 tablespoon of fat). Saute onions until translucent, for about 5 minutes.
- Add garlic and cook for one minute. Then add flour to the skillet and cook for 2 minutes. Then add paprika & tomato paste and mix well.
- Then add chicken broth and place chicken back into the skillet. Cover it and cook for about 20 minutes, until chicken is fully cooked through. Once the chicken is cooked, remove it from the skillet so you can finish up the sauce.

- In a large pot or dutch oven, over medium heat, heat the olive oil and sauté the onions and garlic until softened, about 2 minutes.
- Add the chicken, the tomatoes, the celery sticks to the pot and cover with the water. Cover with a lid and cook until the chicken is cooked through and the tomatoes are almost falling apart, about 20 minutes. Remove the chicken and strain the broth,discarding all the veggies but saving the tomatoes.
- Return the broth to the pot and pass the tomatoes through the strainer, combining the resulting juices to the broth.

- Heat a large Dutch oven over medium heat. Add 3 tablespoons of oil, the chicken pieces, 1 chopped onion, paprika, 1 teaspoon of salt, and 1/2 teaspoon pepper. Brown the chicken on all sides, stirring the onions as you turn it, approximately 10 minutes.

Allow the rice to sauté another 1-2 minutes, then add the chicken stock. Bring to a boil and stir. Reduce the heat to a simmer, then cover. Allow the rice to cook according to package directions, usually 20 minutes. Once it has absorbed all the stock, stir in the parsley. Remove from heat, cover, and set aside.
- Once the chicken is tender, remove it from the Dutch oven and cover it with foil to keep it warm. Dump the sour cream into a medium-sized glass bowl. Whisk ¼ cup of flour into the sour cream until well combined.
