GRANDMA'S HAM CASSEROLE
A simple, yet elegant casserole that's ideal for getting rid of that leftover ham. Carrots, potatoes and mushrooms are used to help complement this dish. Great when served with salad and biscuits.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- In a 9x13 inch baking dish, combine the ham, potatoes, carrots and mushrooms.
- In a medium bowl, combine the soup with the water. Mix well and pour over the mixture in the baking dish, stirring to coat.
- Bake at 350 degrees F (175 degrees C) for 1 to 1 1/2 hours, or until carrots are tender.

One of my kid's favorite casseroles. Best recipe the day after a big ham supper!

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally, until cooked through but firm to the bite, about 5 minutes. Drain.
- Mix egg noodles, ham, evaporated milk, cream of chicken soup, onion, and processed cheese food in a 9x13-inch baking dish until evenly distributed.
- Bake in preheated oven until bubbly and cheese food is melted, about 1 hour. About 5 minutes before end of baking, sprinkle chips atop casserole and return to oven; bake for 5 minutes more.

Steps:
- Preheat oven to 350 degrees F. Spray a large baking pan with no stick cooking spray. ( I use the disposable aluminum pans if transporting to an event).
- Cut potatoes into thin slices; set aside in cold water.
- In a large dutch oven or saucepan, melt the butter. Whisk in the flour until smooth. Slowly,add the half-and-half then milk, whisking constantly until well combined. Add the Velveeta. Allow to cook over low heat until mixture is thickened and cheese is melted, stirring constantly. Remove from the heat.
- Drain water from potatoes. Arrange half of the potatoes in the pan. Season with salt and pepper. (Add any optional ingredients like garlic, bacon or ham). Add half of the onion slices and 3/4 cup shredded cheddar cheese. Pour about half of the milk/cheese sauce over the potatoes.
- Repeat with remaining potatoes, onions, salt & pepper, 3/4 cup shredded cheddar cheese. Top with remaining milk/cheese sauce.
- Cover with aluminum foil (sprayed with no stick spray). Bake about 1 to 1 1/2 hours until potatoes are tender. Remove from oven. Remove foil, sprinkle the remaining cheddar cheese and the parmesan cheese over the top. Bake about 15-20 minutes until cheeses are melted.
- ***if cheese sauce seems too thick, add additional milk to thin** I start with 2 cups of the milk and increase amount after that.
GRANDMA'S KITCHEN HEARTY POTATO SOUP
Grandma's secret: To make this a filling meal, Grandma usually served this soup with fresh bread. For a slightly different twist, serve it in individual bread bowls. I'm thinkin' this could easily be done in the crock pot.

- Peel potatoes and cut into 1-inch cubes.
- Bring water to a boil in large saucepan. Add potatoes and cook until tender.
- Drain, reserving liquid. Set aside potatoes.
- Measure 1 cup cooking liquid, adding water, if necessary; set aside.
- Peel and finely chop onion. Melt butter in saucepan over medium heat.
- Add onion to saucepan; cook, stirring frequently, until onion is translucent and tender, but not brown.
- Add flour to saucepan; season with pepper flakes and black pepper to taste. Cook 3 to 4 minutes.
- Gradually add potatoes, reserved 1 cup cooking liquid, milk and sugar to onion mixture in saucepan; stir well. Add cheese and ham.
- Simmer over low heat 30 minutes, stirring frequently.
- Store leftovers, covered in refrigerator.
GRANDMA'S HAM, POTATO & CORN CHOWDER
Another 1 of my grandma's recipes she relied on in tough economic times since most people had these ingredients on hand. The ham was from Christmas that I chopped and put in a zippered plastic bag in the freezer.

Steps:
- 1. Wash potatoes and cut into small cubes. Place in a medium pot w/ water to cover. Bring to a boil. Boil only until just starting to get tender. Drain and set aside.
- 2. In large pot over med-high heat, add butter. When melted, add onions. Stir and cook for 4 mins. Add ham, cook and stir another 4 mins. add the can of milk, the 1/3 cup of milk, cream of mushroom soup & potatoes.
- 3. Add frozen corn, stir, cover and cook over low heat about 15 mins, stirring often. Add cream style corn, salt and pepper. Bring to a boil & then reduce heat to simmer. Cook another 15 mins. Add cream, cook 5 more mins. Ladle into bowls and sprinkle with paprika.
