Grandma's Old World German Chicken Soup & Dumplings image

Delicios old world flavor chicken and dumpling soup. This is a simple chicken stock soup. If you like you can add vegetables of your choice.

3 lbs chicken
2 quarts water
10 hard rolls (Kaiser rolls)
1 -2 cup warm milk
1/2 cup Canadian bacon, diced (optional)
1 tablespoon butter, softened
1 small onion, diced (optional)
1 tablespoon parsley flakes
3 eggs
salt and pepper

Steps:

  • Slice hard rolls thinly and place in a large bowl; set aside to dry overnight.
  • Add the water to the chicken, season to taste and cook slowly for several hours.
  • An hour or so before serving time, make soup balls as follows:
  • Soak bread in warm milk. Bread should be moist, but not soggy.
  • If using, fry onion and bacon in butter until onion is tender (If not using skip to step 7).
  • Stir onion and bacon into moist bread.
  • Add parsley flakes, eggs, salt and pepper to bread.
  • Stir to combine all ingredients.
  • Shape into large dumplings.
  • Drop into boiling soup.
  • Simmer uncovered, for 20 minutes, or until dumplings rise to surface.

This is one of my family's favorite recipes for chicken and dumplings, handed down to me from my grandmother. And the leftovers taste great, too!

2 cups all-purpose flour
½ cup shortening
1 egg
½ cup milk
1 whole chicken
2 cubes chicken bouillon
2 cups chopped celery
2 cups chopped carrots
1 small onion, chopped
salt and ground black pepper to taste

Steps:

  • Mix flour and shortening together in a bowl until it resembles cornmeal.
  • Slightly beat egg and milk together in a separate bowl. Add to flour mixture and stir to form a ball of dough. Place onto a floured surface; knead and roll as thin as possible using a floured rolling pin. Let dough stand for 2 hours.
  • Place chicken into a large pot and add water to just cover. Bring to a boil over high heat and continue to boil until chicken is no longer pink in the center and meat falls off of the bone, about 1 hour. An instant-read thermometer inserted into the thickest part of the thigh, near the bone, should read 165 degrees F (74 degrees C).
  • Remove chicken from the pot; strain broth and return to the pot. Add 2 cups water and bouillon. Remove meat from bones and return to broth. Add celery, carrots, and onion. Bring to a boil; continue to boil for 15 minutes.
  • Meanwhile, cut dough into strips, approximately 1-inch wide. Tear strips and drop into boiling broth. Continue to boil for 10 minutes more. Season with salt and pepper and serve.

2 c cooked chicken
1 can(s) (10 3/4 oz) condensed, cream of mushroom soup, undiluted
1 can(s) (10 3/4 oz) condensed cream of chicken soup, undiluted
2 can(s) soup cans of water
4 tsp all purpose flour
2 tsp chicken bouillon granules
1/2 tsp black pepper
1 can(s) refrigerated buttermilk biscuits (8 biscuits)

Steps:

  • 1. Mix all ingredients, except biscuits, in 4 1/2-quart CROCK-POT slow cooker
  • 2. Cut biscuits into quarters and gently stir into mixture. Cover; cook on LOW 4 to 6 hours

Grandma would always make these for us when we were under the weather. She would cook a chicken in a pot with water, carrots, onions, and celery until it was done. Then she would pull all the chicken meat of the bone, and put it back into the broth (she would taste it after the meat was added and then add salt, pepper, and a little parsley). I always sat on the counter and watched her throw everything in a pan without measuring, and they were AMAZING. Finally, I asked her to write it down for me, and I'm glad I did. Posting on here so I never lose this recipe! She always rolled them out thin and used a knife to cut them into pieces. They were never the same shape, but that's how we knew when Grandma made them :) NOTE: Grandma learned how to make these from her mother, so this is the OLD school recipe for dumplings. I am writing it like she gave it to me. Scant teaspoon means a little under the measurement: not quite to the top but not 1/4 less.

2 cups flour
1 teaspoon baking powder, scant
1 tablespoon Crisco
1 teaspoon Crisco
1 pinch salt
1 pinch pepper
3/4 cup water

Steps:

  • Mix the first 6 ingredients together until combined. Slowly add the water until you form a dough. You may have to add more or less water to form the ball.
  • Roll out the dumpling dough on a floured surface thin and cut into bite size pieces.
  • Drop them one at a time into simmering chicken/broth. She would always drop a few then wait a bit, then drop a few more. She said this kept them from sticking together in the end. After they are all added, give a gentle stir (once or twice around the pot, then leave it alone).
  • Let the dumplings simmer in the chicken/broth mixture until they float to the top (about 15 minutes or so). I have let them simmer a longer, and that's fine. She would taste the broth one last time after the dumplings were done for seasoning before we got to eat them!

Wonderful old fashioned recipe that was passed down to me by my Grandmother. These dumplings were ALWAYS a treat at holiday time or for a wonderful Sunday dinner after church.

5 cups all-purpose flour
2 eggs (well beaten)
1 teaspoon salt
1/2 cup oil
4 chicken bouillon cubes
4 (16 ounce) cans chicken broth, plus broth from boiled chicken
1 whole chicken (or preferred chicken parts)

Steps:

  • Boil chicken in enough water to cover adding the bouillon cubes when water begins boiling until chicken is fully cooked.
  • After chicken is done remove it from the broth and let cool.
  • Strain chicken broth, add canned broth and bring back to a boil.
  • Mix oil, flour and salt until crumbly, then add eggs and enough water until the dough is stiff enough to roll out.
  • Roll out thin, cut into strips, (I use a pizza cutter for this) and drop into BOILING broth immediately.
  • While dumplings are cooking, debone the chicken and add to dumplings just before dumplings are finished cooking.
  • Add salt and pepper to taste.

Warning - this is a real comfort food! My Grandma told me that her German Mother used to make these and not for comfort - it was making a meal out of things they had on hand. If they didn't have any eggs, they used more water. No bacon? They made it without! When I was younger, my family would get together and make up a huge batch of these and we always had soup as well as fried dumplings. I just loved watching my Mom, Aunts and Grandma chop everything and fry up the bacon and onions. They would get kitchen shears and cut the dumplings right into the splashing boiling water and it never seemed to bother them! I am not as tough as they are so I have made this recipe into my own and I don't get burned! :) I make this for my kids now and they love them! If you like things made from dough, you should love these! It's not that hard to make, it's about multitasking. I'm not sure where the name originally came from, but they have always been German bullets! Enjoy!

4 cups flour
4 eggs
1 cup water
1/2 teaspoon salt
1 lb bacon, sliced
1 large onion, chopped
1 large potato, cut into 1-inch cubes
2 cups milk
2 eggs, beaten
salt and pepper

Steps:

  • In a large bowl, mix the flour, eggs and water with your hands. Knead the dough in the bowl until it is one large ball of dough. It shouldn't be too dry and just a tiny bit sticky. If you find it's too dry or too wet, add a very small amount of water or flour until you get the right consistency. Set bowl aside.
  • Add bacon and onion to large frying pan. Stir frequently over medium heat until bacon is cooked and onion is slightly browned. When done, place bacon and onions on paper towls on a plate. Do NOT wipe out the pan - you need the fat for frying. Return half the bacon mixture to the pan.
  • With kitchen shears, cut dough into 4 or 5 large pieces. Between your palms, flatten dough into a large flat circle, about 1 inch thick. Cut pieces of dough into similar, bite sized pieces onto a tea towel. It's OK if they dry for a few minutes.
  • Meanwhile, bring salted water to a boil in a large pot over high heat. Add potatoes, cook for 10 minutes, until just tender. Remove potatoes and set aside.
  • Add dumplings to boiling water. You can do this by dropping them in a few at a time or fill up a spatula with dumplings and add to water. Make sure to stir them up in case some are sticking together. When they float, they are done, only a few minutes. Strain some of the dumplings into a colander, keeping half of them in the pot. *** Make sure you keep enough cooking water in the pot to cover about 3/4 of the soup dumplings.
  • Ensure that half of the dumplings are in the soup and half in the pan with the bacon and onions. Add the potatoes to the soup and the bacon and onion mixture that you set aside. Add milk and bring to a boil. When it reaches a boil, you can turn it down to low. Salt and pepper to taste.
  • While waiting for the soup to boil, fry the dumplings in the pan with the bacon and onion. Add eggs and stir to coat the dumplings. Let egg cook through. Salt and pepper to taste.
  • Your 2 versions of dumplings are now ready! I usually have the soup first and then the fried ones second, in the same bowl. Some people like to get the soup and put the fried ones on top. Any way you like it - there are no rules!
  • It is a good idea to leave out salt and pepper so everyone can add it to their taste.
