GRANDAD'S PANCAKES
This secret family pancake recipe was passed down from my grandfather. He fed a family of 7 (including 4 growing boys!) on these pancakes, and refused to give anyone the recipe until he finally relinquished it to my mother (his daughter-in-law) before he passed away. It is a long-standing family favorite!

Steps:
- Combine flour, sugar, baking powder, and salt in a bowl; make a 'well' in the center of the flour mixture. Pour milk, eggs, and 1 tablespoon oil into the well. Mix until well moistened.
- Place a griddle over medium-high heat; sprinkle a few drops of water onto the griddle. If the droplets bounce, the griddle is ready; add 2 teaspoons oil.
- Spoon batter onto the griddle; cook until bubbles form and the edges are dry, 3 to 5 minutes. Flip and cook until browned on the other side, 3 to 5 more minutes. Repeat with remaining batter.

Steps:
- (Note: It's best to use room temperature eggs and milk, so feel free to let them sit out on the counter awhile before you begin the recipe.)
- 1 - In a large bowl, whisk together the flour, baking powder, salt and sugar.
- 2 - In a small bowl, whisk together the eggs, melted butter, and milk just till they are fully blended and slightly bubbly. Don't over-whisk because that toughens up the eggs.
- 3 - Pour the liquid mixture into the flour mixture. Whisk briefly, just until dry ingredients are absorbed, but with batter remaining a little lumpy. Do not over-mix!!!
- 4 - Let sit for 5-15 min so nice air bubbles can develop. Do not re-stir!!! Treat the batter with as little extra movement as possible. Meanwhile, pre-heat griddle to 350.
- 5 - Spray griddle with cooking spray. Pour batter onto griddle using a 1/4 cup measuring cup or small ladle. Brown on both sides.
- (Freeze extras.)
- Makes 12 large pancakes (6 servings of two each).

- Grate the potatoes, the carrot and the onion. They need to be grated, as finely as possible, not shredded. This is what give Polish potato pancakes their peculiar texture that is quite different than when shredded potatoes are used.Using a carrot is optional but highly recommended for better color. Potato pancakes made with a carrot will retain beautiful color for a very long time and will not turn grey and unappealing when potatoes oxidize.
- Place grated vegetables in a fine-mesh colander and let drain for 10 minutes. I get about 2 cup of liquid released during this time. Discard the liquid.
- Heat 2 tablespoons of oil in a large non-stick frying pan over medium-high heat. Fry the potato pancakes in batches of 4, adding more oil as needed, until deep golden brown on each side.
