GRANDMA'S APPLE CAKE



Grandma's Apple Cake image

This is a favorite of my late grandma's recipes. She passed away a year ago October 27 and I am just now able to look at her cookbooks and make what I call my memory food. This is a very simple cake and is delicious iced or not. Enjoy!

1/4 cup margarine or 1/4 cup butter
1 cup white sugar
1 egg
1 cup flour
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
2 cups thinly sliced apples
1/2 teaspoon cinnamon

Steps:

  • Cream together first 3 ingredients.
  • Combine next 4 ingredients and add to creamed mixture.
  • Mix until blended and add apples and cinnamon.
  • Put into greased 8" pan.
  • Bake at 350 degrees for about 40 minutes.

A classic one here. A simple, fuss free, easy apple cake. Basically you just need to stir the ingredients together and pop some apples on top. You can dust it with vanilla icing sugar when it has cooled down if you like.

Number Of Ingredients 13

200 g flour
50 g cornflour
2 eggs
the juice and the zest of one organic lemon
2 tsp of raising agent
125 g sugar
120 g butter
a pinch of salt
2 tbsp milk
1 tsp vanilla essence
3 apples
2 tbsp apricot jam
1 tbsp hot water

Steps:

  • Pre-heat the oven at 180 C.
  • In a bowl work the butter to a creamy consistency (an electric mixer would make it easier). Gradually add the sugar, eggs, vanilla essence, salt, juice and zest of the lemon. Incorporate well then add the flour, the cornflour and the raising agent. Stir well and add the milk.
  • You should get a mixture which falls heavily from the spoon, not to runny, not too thick.
  • Pour it all in a round cake tin.
  • Peel and slice the apples into quarters, scrape them with a fork and lay them on the cake.
  • Put the cake on the lower rack of the oven and cook for about 45 minutes.
  • Switch the oven off, take the cake out but leave the oven door shut.
  • Stir the jam with the hot water and when the cake is cooked spread it all over it and put it back into the hot oven for 5-10 minutes.

5 large egg yolks
2 medium tart apples, peeled, cored and halved
1 cup plus 2 tablespoons unsalted butter, softened
1-1/4 cups sugar
2 cups all-purpose flour
2 tablespoons cornstarch
2 teaspoons cream of tartar
1 teaspoon baking powder
1/2 teaspoon salt
1/4 cup 2% milk
Confectioners' sugar

Steps:

  • Preheat oven to 350°. Let egg yolks stand at room temperature for 30 minutes. Starting 1/2 in. from 1 end, cut apple halves lengthwise into 1/4-in. slices, leaving them attached at the top so they fan out slightly. Set aside., Cream butter and sugar until light and fluffy, 5-7 minutes. Add egg yolks, 1 at a time, beating well after each addition. In another bowl, sift flour, cornstarch, cream of tartar, baking powder and salt twice. Gradually beat into creamed mixture. Add milk; mix well (batter will be thick)., Spread batter into a greased 9-in. springform pan wrapped in a sheet of heavy-duty foil. Gently press apples, round side up, into batter. Bake until a toothpick inserted in the center comes out with moist crumbs, 45-55 minutes. Cool on a wire rack 10 minutes. Loosen sides from pan with a knife; remove foil. Cool 1 hour longer. Remove rim from pan. Dust with confectioners' sugar.

2 eggs
1 cup vegetable oil
2 cups white sugar
2 teaspoons ground cinnamon
½ teaspoon salt
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
4 cups apples - peeled, cored and diced

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9x13 inch cake pan.
  • In a mixing bowl; beat oil and eggs with an electric mixer until creamy. Add the sugar and vanilla and beat well.
  • Combine the flour salt, baking soda, and ground cinnamon together in a bowl. Slowly add this mixture to the egg mixture and mix until combined. The batter will be very thick. Fold in the apples by hand using a wooden spoon. Spread batter into the prepared pan.
  • Bake at 350 degrees F (175 degrees C) for 45 minutes or until cake tests done. Let cake cool on a wire rack. Once cake is cool serve with a dusting of confectioners' sugar or with a Cream Cheese Frosting.

1 teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon salt

¼ cup vegetable oil

8 oz sour cream
2 eggs separated, room temperature
1 tbsp sugar
Rind from 1/2 lemon

Steps:

  • 1. Cream Butter and Sugar in a electric mix master. Add eggs and vanilla. Sift flour and baking powder, gradually add at low speed to creamed butter mixture 2. Spread dough into a buttered springform pan and top with apples 3. Make topping. Beat egg whites until foamy then add 1 tbsp of sugar until stiff but moist. In another bowl, beat egg yolks, sour cream, lemon rind until mixed. Add egg whites and fold into egg yolk mixture. Place topping on top of apples 4. bake at 350 for approximately 1 hour or until golden on top 5. Cool for one hour , them remove sides of springform pan

This recipe is a family favorite, we even serve it for birthdays, just add a dusting of powdered sugar! My Grandmother Marguerite L.C. Seelhorst made this every time we came to visit. It is easy to make, and feeds a large gathering.

3 c chopped apples, granny smith, or your favorite baking apple.
1 c chopped nuts, either walnuts or pecans. may be omitted.
1 c vegetable shortening, or half butter and half shortening.
3 c sugar
3 eggs
DRY INGREDIENTS
2 1/2 c all purpose flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt

Steps:

  • 1. Grease and flour a 9 X 12 X 3 pan and set aside.
  • 2. Peel and chop apples. You may add 1 tsp. of lemon juice to the apples to prevent browning. Chop nuts. Set aside.
  • 3. Cream together the shortening and sugar. Add the eggs and combine.
  • 4. In a large bowl sift together the flour, baking powder, soda and salt.
  • 5. Add the dry ingredients to the creamed mixture a little at a time. Fold in the 3 cups of apples and the chopped nuts. The batter will be STIFF!
  • 6. Place in the greased and floured pan. You will need to use a spoon or your hands to push the batter evenly into the pan. Don't worry, it will come out beautifully even though it looks lumpy!
  • 7. Bake for 1 hour at 350 degrees. Cake is done when it is nicely browned and a toothpick inserted in the center of the cake comes out clean.
  • 8. Allow to cool on a rack. This cake is delicious served warm with ice cream! Let it cool a bit first though. It also travels well, allow it to cool completely.

1 cup shortening (I use plain CRISCO)
1/2 cup light brown sugar
1 cup white sugar
2 eggs
2 1/2 cups flour

1 pinch nutmeg (optional)
1 cup sour milk (I use buttermilk)
2 cups apples, peeled, cored & diced (Cortland or McIntosh)

Steps:

  • Preheat oven to 350°.
  • Lightly grease or spray a 9 X 9 cake pan.
  • In a medium bowl, cream the shortening sugars & eggs together.
  • In another bowl, sift together the dry ingredients.
  • Add to the creamed ingredients, alternately with the sour milk.
  • Beat on medium-high until smooth.
  • Fold in the diced apples.
  • Pour into greased pan.
  • TOPPING:.
  • Mix together 1 teaspoons cinnamon, ½ cup white sugar & ¼ cup light brown sugar. Spinkle evenly over top of cake.
  • Bake for 1 hour or until a toothpick, inserted in the center comes out clean.
  • ENJOY!
